INGREDIENTS
1/2 cup firmly packed brown sugar, divided
2 tablespoons orange juice
2 teaspoons McCormick® Pure Vanilla Extract
1 1/2 teaspoons McCormick® Pumpkin Pie Spice, divided
3 pounds sweet potatoes, peeled and cut into 1-inch pieces
4 tablespoons butter, divided
1/4 cup flour
1/2 cup chopped pecans
2 cups miniature marshmallows

Pumpkin Cheesecake
Serving Size : 16
1 1/2 cups graham cracker crumbs
5 tablespoons butter -- melted
1 tablespoon sugar
1 cup sugar
24 ounces cream cheese -- softened
1 teaspoon vanilla
1 cup canned pumpkin
3 large eggs
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
Preheat oven to 350 degrees
Make crust by combining melted butter, graham cracker crumbs and 1 tablespoon sugar. Stir well enough to coat of of the crumbs but not so much as to turn the mixture into paste. Keep it crumbly.
Press crumb mixture onto the bottom and about 2/3 of the way up the sides of the pan. Bake the crust for 5 minutes, then set aside until ready to fill.
In a large mixing bowl combine cream cheese, 1 cup sugar, and vanilla. Mix with an electric mixer until smooth.
Add the pumpkin, eggs, cinnamon, nutmeg and allspice and continue to beat until smooth and creamy.
Pour filling into the pan. Bake for 60 to 70 minutes
