Summer Recipes-Boozy Bears Popsicles INGREDIENTS * CRAN-VODKA * 1 cup colored gummy bears * 1/2 cup vodka (separated) * 2 cups Cranberry Juice * CAPT-MORGAN OJ * 1 cup colored gummy bears * 1/2 cup Captain Morgan (separated) * 2 cups Fresh Squeezed Orange Juice * JACK & COKE * 1 cup cola bottle gummies * 1/2 cup Jack Daniels (separated) * 16 oz. Coca-Cola LET'S GET COOKING... * These directions apply for each combo. In a bowl add 1 cup of the gummies and 1/4 cup of the assigned alcohol. Soak for 1 hour. * Once gummies are ready combine the other 1/4 cup alcohol with the juice / cola in a measuring cup. * Using your favorite popsicle molds, pour the juice or cola halfway up and add 10-12 gummies. Easy Vegetarian Recipes-Vegan Fruit Mince Pie Cupcakes INGREDIENTS 1 1/2 cups flour 1 cup caster (superfine) sugar 1 tsp baking soda 1/2 tsp salt 3/4 cup soy milk 1/2 cup vegetable oil 2 tbsp apple cider vinegar 1 tbsp pure vanilla extract Icing sugar to dust FRUIT FILLING: 1 1/2 cup Mixed dried fruit and 1/2 cup Orange juice SHORTCRUST PASTRY: 60g plain flour, 2 tbsp icing sugar and 3 tbsp margarine LET'S GET COOKING... Pre-heat oven to 180C (320F) To make vegan short crust pastry start off by placing you flour and icing sugar in a mixing bowl and mix on low speed until everything is combined. Now at this stage it should be a dough. Not too crumbly but not sticky. If you feel it needs more flour add a tbsp at a time, or if you feel it’s too dry add a tsp of soy milk at a time and mix until you get it to a dough consistency. Wrap the dough with cling/plastic wrap and place it in the fridge for 30 min to firm up. Once the dough is chilled take it out of the fridge. Place it on top of a piece of baking paper and place another sheet of paper on top. Roll out to about 1/2 cm (0.2 inches) in thickness and cut out shapes. You want to have 12 circles (make sure they fit at the bottom of the cupcake liners) and 12 small stars. Bake them for 10-12 min or until they’re nice and golden brown. If it takes longer than or quicker than 10-12 min don’t freak out! Everyone’s oven is different :0) Set them aside to cool down. Place you fruit mince in a large mixing bowl, pour orange juice over it, cover it with cling/plastic wrap and allow to soak for 30 min in the fridge. Add all the dry ingredients to a large mixing bowl and mix on low speed to help them combine mix all your wet ingredients together in a large jug and add to your dry ingredients until everything is just mixed in. Stop the mixer, scrape down the bowl and mix for a final 20 seconds. Place a pastry disk at the bottom of your cupcakes liners and scoop batter into your cupcake tin lined with cupcake liners filling up about 3/4 of the way. Bake for 20-25 min or until a skewer comes out clean and set aside to cool on a cooling rack before frosting. Keep the oven on 180C (320F). While your cupcakes are baking and cooling take your fruit mince pie filling out of the fridge and drain into a bowl using a sift. Place the drained fruit onto a baking tray lined with baking paper and spread out. Bake for 10-15 min on 180C (320F) or until the fruit has dried out a little bit but not completely. To finish these cupcakes off simply core the center and fill with fruit filling. Using a Wilton 6B star tip frost your cupcakes in a swirl motion using my vegan buttercream frosting. Summer Recipes-How To Prepare The Delicious Cantaloupe Mousse INGREDIENTS * 1 cantaloupe * 200 ml whipped cream * 1 tbsp lemon juice * 15 g powdered gelatin (sprinkle over 60 ml water and set aside) * 40 g sugar LET'S GET COOKING... * Cut off the top of the melon and scoop out the seeds and juice. Strain through a mesh strainer and set aside. * Using a melon baller, scoop out 10-12 balls and reserve for later. Scoop out as much fruit out of the melon and add to the strained melon juice. The fruit and juice should total 300 g. Microwave the cantaloupe bowl for 3 minutes at 600 watts. * Combine 300 g of the melon fruit and juice, lemon juice and 40 g sugar in a saucepan, breaking up the fruit with a fork. Once mixture comes to a simmer, turn off the heat and add the gelatin. Mix well and set aside. * Cool the melon juice over a bowl of ice water until cold. Once mixture thickens, combine 80 grams of the melon juice and whipped cream together. Gently fold together and pour mixture into the cantaloupe bowl. Refrigerate until mousse is set. * Pour in the remaining 80 grams of melon juice on top of the mousse and refrigerate once again until set. * Top with melon balls, whipped cream and confectioners's sugar. Dice the chile. * In a large bowl stir together the green chiles, red onion, raw honey, lime juice, cilantro, chili powder, cumin, salt, and pepper. Set aside. * Preheat grill to medium-high heat. Season chicken with salt and pepper. * Place the chicken on the grill and grill until cooked through, approximately 4-6 minutes per side. * Remove from the heat and slice. * Serve the burgers on the buns, over the pepper jack cheese, and topped with the chile mixture. Food Network Recipes-Zucchini Noodle Chicken Alfredo INGREDIENTS 1 tbsp. olive oil 1 lb. boneless, skinless chicken breast 1/2 tsp. sea salt 1/4 tsp. ground black pepper 1 1/2 tbsp. chickpea flour 1/3 cup basil pesto 1/3 cup almond milk, plus more as needed 2 large zucchinis, spiralized 1 tsp. fresh lemon juice LET'S GET COOKING... In a large skillet, heat oil over medium-high heat. Season the chicken with the salt and pepper. Cook the chicken for 10-12 minutes, or until the chicken is cooked through. Remove from heat and slice. Set aside. In same pan, whisk in the chickpea flour, pesto, and almond milk. Bring to a simmer. Remove and set aside. Preheat oven to 350°F. Discard excess oil from pan, leaving about 1 tablespoon of oil in the skillet. Sauté chopped onion and garlic until onions are slightly translucent. How To Prepare Chicken Fajita Roll Up With Tomato Rice | Cooker House | Food Network Recipes INGREDIENTS 2 chicken breasts 1 Tbsp olive oil 2 tsp garlic 1 Tbsp lime juice ½ tsp chili powder ½ tsp cumin ½ tsp dried oregano 1 Tbsp cilantro, chopped + extra for garnish Fajita mix (peppers and onions) Salt and pepper For the rice: ½ Tbsp olive oil 2 tsp minced garlic ½ tsp cumin 1 tsp chicken stock concentrate 1 ½ cups crushed tomato 1 cup uncooked white rice 1 ½ cups water LET'S GET COOKING... Preheat oven to 375°F. Butterfly chicken breasts and pound until ¼-inch thick. In a small mixing bowl, combine olive oil, garlic, lime juice, chili powder, cumin, oregano, salt and cilantro. Marinate chicken for at least an hour. While the chicken is marinating, lightly pan-fry the fajita mix in olive oil and season with salt and pepper. Set aside to cool to room temperature. Remove chicken from marinade. Reserve leftover marinade. Lay out the chicken breasts, place half of the fajita mix in the center and tightly roll up the chicken breasts. In a baking dish, spread out remaining fajita mix. Place the rolled up chicken seam-side down. Pour the marinade over the chicken. Bake for 25-30 minutes. While the chicken is baking, prepare rice. Heat oil over medium heat. Sauté garlic, cumin, chicken stock concentrate, tomatoes and rice until fragrant. Add water and bring to a boil. Cover and lower the heat to a simmer. INGREDIENTS 4 boneless chicken breast fillets 4 slices cheese 4 perilla leaves pepper (mentaiko sauce) 50 g mentaiko (marinated fish roe) 1 tsp sake 1 egg 1 tsp mayonnaise 1 tsp parmesan cheese LET'S GET COOKING... Cut open the chicken fillet to make a flat piece. Do the same with all the chicken. Lay plastic wrap on top of the thicken fillets and flatten with the back of a spoon. Combine mentaiko and sake to make sauce. Spread sauce on one side of the chicken. Place perilla leaf and a slice of cheese on top and fold in half. Season with pepper. In a bowl, combine egg, mayonnaise and parmesan cheese. Dip chicken in this mixture to coat. Heat oil in a frying pan and cook chicken on both sides over low medium-high heat for 5 minutes or until chicken is cooked through. Slice and serve with a salad if desired. Salad Dressing Recipes-Peach, Avocado & Chicken Salad With Poppy Seed Dressing INGREDIENTS For the dressing: * 1/4 cup olive oil3 tbsp. red wine vinegar2 tbsp. raw honey2 tsp. * * poppy seeds For the salad: * 1 tbsp. olive oil * 1 chicken, boneless and skinless * 1/4 tsp. sea salt * 1/8 tsp. black pepper * 1 1/2 cups packed mixed greens * 1/2 peach, sliced * 1/2 avocado, sliced * 2 tbsp. raw walnuts, chopped LET'S GET COOKING... * To make the salad dressing, in a medium bowl, whisk together the oil, vinegar, honey, and poppy seeds. * Heat a skillet over medium-high heat and season the chicken on both sides. Cook chicken until well-brown and cooked through, about 4-6 minutes per side. Once cooked, remove from heat and slice. Set aside. * In a large bowl, toss together the mixed greens, sliced peach, sliced chicken, and sliced avocado. Top with the walnuts. * Pour dressing over the salad. Toss to coat. How To Prepare The Delicious Slow Cooker Chicken Pot Pie | Cooker House | Food Network Recipes INGREDIENTS 1 lb. chicken breast, boneless and skinless 1 large yellow onion, diced 3 stalks celery, diced 3 carrots, diced 3 cloves garlic, minced 1 1/2 tsp. kosher salt 1 tsp. ground black pepper 1 tsp. dried thyme 1 tsp. dried oregano 3 1/2 cups low sodium chicken stock 1 bay leaf 1/2 cup frozen corn kernels 1/2 cup frozen pearl onions 1/2 cup peas 1/2 cup greek yogurt, plain LET'S GET COOKING... Add the chicken, yellow onion, celery, carrots, garlic, salt, pepper, thyme, oregano, and chicken broth to the bowl of a slow cooker and stir to combine. Add the bay leaf, cover, and cook on Low for 4-5 hours, or until the chicken is cooked through and the vegetables are tender. Remove and discard bay leaf. Remove chicken breast, shred, and set aside. Return the cooked, shredded chicken to the slow cooker, followed by the frozen, peas, frozen carrots, frozen pearl onions, and greek yogurt. One-Pot Chicken Fajita Pasta | Cooker House | Food Network Recipes INGREDIENTS * 1 box quinoa penne pasta * 3 tbsp. olive oil, divided * 2 boneless, skinless chicken breasts * 1/2 tsp. sea salt * 1/4 tsp. ground black pepper * 1/3 cup low sodium chicken stock * 8 oz. goat cheese * 2 sprigs fresh rosemary, chopped * 1 tbsp. minced garlic * 1 cup grape tomatoes, halved LET'S GET COOKING... * In a large skillet, add the noodles to boiling water and cook according to package instructions, approx. 6-8 minutes. Drain and set aside. * In the same skillet, add 1 tbsp. olive oil over medium-high heat. Season the chicken breast with salt and pepper, and then place into the got oil. Cook the chicken until well-browned and cooked through, about 4-6 minutes per side. Once the chicken is cooked through, remove, slice, and set aside. * Add the chicken broth and deglaze the pan by scraping up the bits from the chicken. Add the goat cheese and stir until melted. * Once simmering, add the minced garlic and rosemary. Continue to stir and simmer until the sauce reduces (about 8-10 minutes). * Add in the tomatoes once the sauce has reduced. * Add the noodles and chicken back into the skillet and mix well.
