Each bowl gets three and a half tablespoons of tapioca... I really like the tapioca as a thickener, because everything stayed nice and clear and not pasty. There were some vaguely bubble-teaish spheres of filling visible, but they were not discernable when eating. The recipe does note that when using tapioca as a thickener for a lattice-top pie, the tapioca tends to form little pellets at the top. This can be prevented by reserving some tapioca-less filling for the very top of your innards, poured just under the crust. That wasn't necessary here. Notice our spice rack that I never use. Does everyone have an unused spice rack and another place to keep the actually used but far less decorative spices? Or is it just me?
