Morning Glory Cooking Class in Hoi An, Vietnam. Two different tapioca flour dumplings that were bland and not too impressive. I thought the whitish ones were filled with potato and the orangy one with sweet potato, but they were actually filled with mung bean paste (white) and shrimp (orange). Hmm... I was way off there! We spent weeks at anchor off Thailand, loading Tapioca from a series of barges. The Tapioca came onboard in sacks, and a huge workforce was needed to empty the bags into the massive holds. All the local workers lived on deck in temporary tents.
