Tapioca root peeling sheds. Tapioca, from Portuguese: [tapiˈɔkɐ]) is a starch extracted from cassava root. Native to Brazil, the plant was carried by Portuguese explorers to the West Indies, Africa and Asia. A tropical perennial shrub, it thrives better in poor soils than many other food plants.

We spent weeks at anchor off Thailand, loading Tapioca from a series of barges. The Tapioca came onboard in sacks, and a huge workforce was needed to empty the bags into the massive holds. All the local workers lived on deck in temporary tents.
I told them level 3 wasn't hot enough. They smiled and gave me level 5. It's about as hot as Chicken Vindaloo from Naan and Curry. Which is to say it is painfully hot.

An experiment.
Soak 2/3 cup pearl tapioca in 2-1/2 cups raw milk overnight.
Mix 1/2 cup sugar with 1/2 cup cocoa and 1/4 teaspoon salt. Add 1/2 cup warm water.
Heat mixture until it boils.
Add tapioca and milk mixture.
Heat until it thickens. Take off heat.
Add 1/2 cup chocolate chips, mix until melted.
I covered it with plastic wrap and stuck it in the icebox to thoroughly chill. I hope it's yummy.
