Als ich vor ein paar Jahren erstmals Salzburger Nockerln, wie konnte es anders sein, in der Stadt Salzburg gegessen habe, wollte ich sie auch gleich daheim ausprobieren. Über das Rezept ließe sich streiten, für mich gehören Himbeeren einfach dazu ! Daher gibt zur Himbeer-Zeit zumindest einmal Salzburger Nockerln ! :-) Die 3 Nocken sollen die verschneiten Salzburger Hausberge, den Mönchsberg, den Kapuzinerberg und den Gaisberg darstellen. An der Form der Berge übe ich noch... ;-)
When I ate a few years ago 'Salzburger Nockerln' (Salzburger dumplings, a sweet soufflé) for the first time, how could it have been otherwise, in the city of Salzburg, I wanted to try them at home right away. About the recipe could be argued, for me raspberries are part of it ! So once in the raspberry time I make 'Salzburger Nockerln'! :-) The 3 dumplings are to represent the snowy Salzburg local mountains called 'Mönchsberg, Kapuzinerberg and Gaisberg'. At the shape of the mountains I have still to practice ... ;-)
Das Rezept:
Zutaten:
6 Eiweiß, 4 Eigelb, 40g Zucker (probierte es erstmals sogar mit Birkenzucker, war kein Problem), 1 Prise Salz, 3 EL glattes Mehl, 250g Himbeeren, Butter für die Form, Staubzucker
Zubereitung:
Eier trennen, in fettfreier (wichtig!) Schüssel Eiweiße mit Zucker und Salz mit Mixer steif schlagen - soll schön glänzen, nicht trocken werden.
Vorheizen: 180° mit Umluft
Eigelbe mit Kochlöffel locker unterheben.
Mehl darauf sieben und vorsichtig unterheben.
Himbeeren in gefettete Auflaufform geben, mit Teigspachtel aus der Masse 3 Nocken darauf geben und zu "Bergen" formen.
Auf 2. Schiene von unten 16 Minuten backen.
Nach 5 Minuten wird es schon schön braun, wird aber bis zum Ende der Zeit nicht mehr viel dunkler. Tür zwischendurch nicht öffnen!
Mit Staubzucker bestreuen und gleich essen.

Dudh Puli Pithe - Sweet Coconut Dumplings
Basically Pitha is a Authentic Bengali Sweet of West Bengal and Bangladesh. Usually Bengalis make Pitha during Poush Parbon or Makar Sankranti festival (14th or 15th January) to celebrate Nabanna (New Rice) in Winter season. But Bengalis have this Puli Pitha and other famous pitha recipe during all over the winter season. Pitha are commonly made by rice flour, coconut, date palm jaggery and milk.

While I was out for my grocery shopping today, I saw that they had sheep milk ice cream at the store. I didn't even know that was a thing, so I went ahead and bought some.
I got the vanilla-flavoured one because I wanted to pair it up with Styrian pumpkin seed oil (Steirisches Kürbiskernöl), a much-loved Austrian delicacy with an intense nutty aroma.
This oil is most commonly used to make salad dressings with, especially in combination with apple cider vinegar, but you can also add it to desserts or even cake dough if you're brave enough for that extra helping of polyunsaturated fatty acids.
Putting what could be considered a salad oil on your vanilla ice cream may sound a bit odd and out there, but the flavours do complement each other extremely well. It's definitely not just one of those things that's an acquired taste or only good if you grew up with it.
I also added a sprinkle of caramelized pumpkin seeds because in my opinions it's never wrong to have some crunchy bits on top of your ice cream.

Roadside Jalebi clicked before eating. Jalebi is an Indian dessert made by frying a maida flour batter in oil till it turns crispy orange and then soaking it in Sugar syrup. Results are amazing and Yum.
