The "StäV" is not an ordinary pub, but a political storybook. The West-German Federal Republic and the East-German Democratic Republic didn´t have regular embassies but ”steady representations” (German: Ständige Vertretung) in Bonn and East-Berlin. As the wall came down there was a bitter fight between the old and new capital. Bonn lost. This thrilling time is shown at the ”StäV” whose walls are filled with several historical photos and items.
The StäV introduced the Kölsch beer (a top-fermented beer allowed to be brewed only in the city of cologne and it´s near vicinity) to the Berliners in 1997, when it moved from Bonn to Berlin. Today the "StäV" is the most popular Kölsch pub in Berlin and well known all over in Germany. The bar staff, called "Köbes" will serve you beer until you place your beer mat on your glass. The glasses are carried in a circular tray (Kölschkranz) with holes for the glasses and a handle in the centre. The Köbes will usually make a mark on your mat for each glass you receive so that your bill can be easily reckoned when you want to pay. The beer mat, therfore, is sacrosanct. In judicial terms it is a document. An experienced Kölsch drinker uses the bottom of the glass, and not the side where the foam is, to clink glasses! Prost!

Ich habe das Fleisch probiert - es war sehr zart mit einer superknusprigen Kruste.

“Heaven & Earth” apple and potato quiche with salad – you’ve never enjoyed German & French cooperation quite as much! Potato cake with apple sauce and black pudding, on a salad bed with honey vinaigrette. (text from the menu)
This was a wonderful variation of the "classical" Heaven & Earth-dish which I sometimes cook at home, too.

Kartoffeltorte mit Dunstäpfeln und Blutwurst, an Salat mit Honig-Vinaigrette (Text aus der Speisekarte)
Das war eine tolle Variation des "klassischen" Gerichts Himmel und Erde, das ich selbst manchmal zu Hause mache.
Vegetarischer Flammekuchen
mit Spinat, Mozzarella, Knoblauch, Tomatensauce.
