My Daily Baby Spinach Salad. I have switched from Iceberg lettuce to Spinach because Spinach is a Super food loaded with Vitamins and Minerals you just dont find in any other food.
Health Benefits of Spinach
Like other dark greens, spinach is an excellent source of beta-carotene, a powerful disease-fighting antioxidant that's been shown, among other things, to reduce the risk of developing cataracts. It fights heart disease and cancer as well.
As a dark, leafy green, spinach possesses several important phytochemicals, including lutein, which helps prevent age-related macular degeneration. Spinach also contains lipoic acid, which helps antioxidant vitamins C and E regenerate. Because of its role in energy production, lipoic acid is being investigated for regulating blood sugar levels.
Served raw, spinach is a good source of vitamin C, another powerful antioxidant. Overcook it, however, and you lose most of this important vitamin. Though spinach is rich in calcium, most of it is unavailable, because oxalic acid in spinach binds with calcium, preventing its absorption. The abundant potassium in spinach is available, and it will promote heart health. When you cook spinach, it cooks down tremendously. Because cooking concentrates nutrients and fiber, a serving of cooked spinach gives you even more bang for your buck than a serving of raw.
A 10-ounce bag of raw spinach, which contains approximately 284 grams of spinach, provides 1,585 milligrams of potassium.
Potassium functions as an electrolyte, which means that it helps balance the amount of fluid in your body and transmits electrical impulses produced by nerves, making it vital to muscle function. Potassium works closely with other electrolytes including sodium and calcium and staying healthy requires a balance between these minerals. In fact, the American Heart Association stresses the importance of potassium because it lessens the effects of sodium and helps control blood pressure.

Simple and delicious! After reading other cook's reviews of the dish, I decided to mix the gremolata in with the marinade instead of serving it atop the chicken. (Great results!) I also marinaded this all day instead of just 30 minutes.
I served the chicken alongside roasted red skin baby potatoes and a spinach salad with red peppers, pine nuts, and shaved Parmesan.

For supper my wife prepared lasagna, spinach salad with shredded cheese and Italian dressing, and grapes.
Here is the pumpkin gnocchi cooked, served with roasted brussel sprouts and a spinach salad. It was so yum.
This is the second batch of spinach salad I've made this week. The first batch went to a potluck Thursday night; this batch is going to a potluck tonight. No, I am NOT going to take more of it to UUCJ's potluck tomorrow. I'm taking boiled-peanut hummus, bought at the Farmers' Market this morning, to it. Ingredients in the spinach salad pictured above: spinach (obviously), sliced red onion, strawberries cut in quarters, crumbled goat cheese, praline pecan chunks, balsamic vinaigrette, a little bit of salt and pepper. (This picture very much misrepresents the size of the salad. The wooden bowl is quite large.)

As the weather is warming up, Danks Street Depot at Sydney International Airport has added a few healthy options to what is on offer. For something light and healthy, try this Spring Salad comprised of garden fresh spinach, sliced boiled biodynamic eggs, and chopped sugar cured bacon lightly drizzled with vinaigrette.

Thanksgiving Day is a national holiday celebrated primarily in the United States and Canada as a day of giving thanks for the blessing of the harvest and of the preceding year. Several other places around the world observe similar celebrations.
It's celebrated on the fourth Thursday of November in the United States and on the second Monday of October in Canada.
Trying to recreate a favorite Spinach Salad with shrimp & an Asian dressing! I played with the ingredients which are pretty self explanatory in the tags but here is the dressing:
*Asian Sesame Dressing
1/3 c. rice vinegar
1/4 c. soy sauce
2 tbsp. water
1 tsp. sesame oil
1/2 tsp. sesame seed
2/3 c. vegetable oil
1 tsp. ginger
Combine first 5 ingredients in jar with tight fitting lid and shake well. Add oil and shake again. Chill until ready to serve. Makes about 1 1/2 cups.
Another night home in time to actually make dinner and eat in the comfort of my apartment. As opposed to the driver's seat of my car. Which is comfy, but you can't really use a knife and fork while driving.

/Spinach salad with mozzarella, Greek vinaigrette, and extra crispy bacon. Extra crispy is how I prefer my pig....pulled pork excluded. My eye doctor said I should eat more spinach. She didn't say I couldn't top it with bacon.

For supper tonight my wife made chicken and cheese Calzones with marinara sauce and butternut squash. She also fixed a spinach salad and we had pie and vanilla bean cake for dessert.
There are not many fine dining opportunities in Lake Havasu City, so when I heard about Shugrue's, I had to try it. Every time we go to LHC, we end up eating at Big Boy or Chinese, so I decided it was about time I took my mom somewhere nice to eat.
The salad (spinach salad) was decent, not great, but huge. The picture is the half-salad and still it was nearly a meal. The entree I ordered was the Bombay chicken, which was 2 breasts of chicken in a curry sauce with 3 jumbo shrimp and served with jasmine rice. Again, tremendous portion. The dessert was a very nice creme brulee that I forgot to photograph before we ate it. It was yummy (and reasonably sized).
Overall, it was the best food I've had in LHC, but that's not saying much. It's pricy but not outrageous for the quality of food, but the portions are ginormous. I would greatly prefer if they decreased the portions and lowered the prices.
Next time I'm in LHC, I'll go back. The view alone is quite worth it.
EDIT - A user commented that they had a low opinion of Shugrue's and recommended Barley Brothers Brewery and Grill instead, which is very close by in location to Shugrue's. However, I might note that the whole goal of going to Shugrue's was to find some fine dining in LHC and not eat at another bar or pub. As well, I'm not sure that 'overpriced and portions are too big' is a ringing endorsement from me.

My wife made a salad consisting of cherry tomatoes, cucumbers, spinach, and shredded cheddar cheese.

The Cucumber Smash cocktail was very sweet, also deceptively light and refreshing. I could imagine sipping a few of these on a warm summer day and then not being able to get out of my chair.
The sweetness (with a bit of snap from the cucumber) balanced very well with the vinaigrette dressing and most especially with the bacon.
