After such a long Urbexing day in Wales the day before Mrs.Cattus had to go and tend to Suzy McFloozy; feed her, pick up poo and other such 'lovely' jobs...this being so she made a special request that i cook dinner.

 

we had ling in the freezer so with the recipe help of sophie grigson and william black i set about making Ling wrapped in bacon with purple beans, roasted home-grown beetroot and tomatoes... neither of us had tried ling before (it's rather like haddock and cod) and it was delicious.

I've got a lot of e-mail asking for the Japanese choux cream recipe. I, myself, have tried to find the good recipe too. If you have a chance to eat the Japanese choux cream, I think you would love it. The softness of the fragrance and sweet filling is contrast to the crunchiness of the pastry, it's so good. My love for Choux cream has began many years ago, in that day I couldn't make it by myself. My choux pastry always becomes soft after getting out of the oven.

 

The problem comes from the moisture in the dough doesn't evaporate from inside and makes the the pastry soggy (result is the soft choux pastry). So, here comes my solution: keep the door ajar for at last 5 minutes of the baking time this would let the moisture out of the oven (and lower the temperature as this recipe need to use the high heat to puff the pastry up but I find it's too much for my choux). So the pastry will be drier and crunchier, the way I want.

 

The main recipe come from the book name:一流シェフのとっておきシュークリーム―おいしさに大満足!ワンランクアップの24レシピ (24 recipes of Delicious Choux Cream from Famous Chefs) The book that devoted to the choux cream recipes. There are more interesting recipe from this book, which I will try it and show you if I have a chance.

 

Here comes the Japanese Choux Cream recipe that everyone ask for, but this is not a simple one. The caramel flavor and the crunchiness from the nut, I hope you will love it as I do.

 

Note: The recipe starts from making the caramel powder, the choux pastry but you can prepare the filling ahead if you want to.

Here's the dessert I made for dinner last night with Andrew & Emma. This is from the first Post-Dispatch cookbook, SPECIAL REQUESTS. Another winner! My picture is better than the one in the book because in mine you can actually see the bottom praline layer.

This majestic Bald Eagle frequents the shores of lakes and rivers. His main diet consists of dead fish gathered from the surface of the water or from the shores of lakes and rivers. Because I really love to bake so I can’t help have a lot of frozen berry in my freezer, “what can you do when you want to make something and you lack of the ingredient” that is my idea. And what happen next is I end up have too much of it, so I have to find the way to use it instead (what an ironic situation, I never run out of berry but I nearly run out of the recipe, haha). This situation happens to my friend, too, and she turn too me (in fact I really want to say that I still don’t know what to do with mine neither, oh mine!) Any way after a bit of flip and flap the cookbook pages, I find out that sorbet is the great way to end the frozen berry life. There are a lot of berry in the sorbet to give its texture, and you can have it with so little guilt, because it’s fat free. You can use other kind of berry in this recipe just remember to adjust the sugar amount to suit your ingredients. This sorbet is so tangy and fragrance. So let clear our freezer and replace it with the delicious sorbet.

Gravestone Girls had special permission to work on this stone in Sleepy Hollow Cemetery for a family who wanted the crest on this stone.

Sophia requested a spaghetti dinner for her birthday meal. Lunch was a dairy-free grilled cheese sandwich.

 

She wanted to dress up for her birthday dinner...thus, the felt crown, black veil (from her doll), jewelry, and - yes - pink eyeshadow. Normally she doesn't wear makeup...but she felt this was a VERY important day for her.
