My birthday fell on Martini Monday at Nic's, so naturally we had martinis with our dinner tonight. 45 second exposure with Polaroid Colorpack 3 Land Camera, no flash.
Marinated Vegetable Salad
4 Servings
1/4 cup rice wine vinegar
1 cup sugar
2 cucumbers, peeled & seeded
red onion slices (to taste)
2 carrots, pared & julienned
Salt and pepper to taste
Heat the rice wine vinegar and sugar in a saucepan until the sugar dissolves. Cut the peeled and seeded cucumbers into rounds or dice. Combine cucumbers, peppers, and carrots in a large bowl. Pour the vinegar mixture over the vegetables and toss. Add salt and pepper to taste. Marinate in the refrigerator for several hours.

Two years ago today, I had quadruple-bypass heart surgery.
I had a "Good Juju" spiced beer with my dinner to celebrate the milestone.

This dish can only be cooked by my mother. The balance in taste has to match with peri peri sauce ingredients.
Special dinner of our wedding anniversary.
We had another main dish, which was Grilled Abalone with Seaweeds. It was also delicious.
Tomorrow, I'll upload the rest of three pictures at the restaurant. A cup of coffee, dessert, and a chef.

When I organized my first special dinner as Cloyne Food Manager, these were my trusty waiters - working for workshift hours. Ah, the good old days.

Made with gluten flour and mushrooms.

more elaborate than usual in using a full sized challah .. usually it is just challah rolls for thr two of us.
⅓ cup Flour
⅛ teaspoon Salt
⅛ teaspoon Pepper
⅓ cup panko crumbs
⅛ teaspoon Paprika
⅛ teaspoon Garlic Powder
3 tablespoon Vegetable Oil
4 Chicken Cutlets, pounded to
1/8" thickness
2 Eggs, lightly beaten
On plate, combine 4 Tblsp. flour with salt and pepper. On second plate, combine bread crumbs, paprika and garlic powder. In large skillet, heat oil; dredge each cutlet in seasoned flour, dip in beaten egg. Then coat in panko crumbs, then place in skillet. Quickly brown chicken on both sides, about 2 minutes per side. Remove chicken to plate and keep warm.
