Allergies woke me up early and wouldn't let me go back to sleep. Finally I got up and baked the two sourdough loaves I'd set in pans to rise overnight. Normally I would bake them the same day, but we keep the house cool around 20C in the winter so the dough doesn't rise as quickly. I used a loaf in this still life with a cone from a red pine, picked up on one of my walks. My office smells of oats, maple syrup, and sourdough. At least chronic congestion usually doesn't affect my sense of smell.

When all else fails - make bread. (As long as you can get some bread flour which seems to be in short supply.)

Every Saturday I bake my own light rye-spelt bread using natural easts called sourdough.

Sourdough bread is made by the fermentation of dough using naturally occurring lactobacilli and yeast. Sourdough bread has a mildly sour taste not present in most breads made with baker's yeast and better inherent keeping qualities than other breads, due to the lactic acid produced by the lactobacilli.(Wikipedia)

Some of you thought the bread in the last image was a roll. Its actually a sourdough bread bowl, the ultimate efficient food:) you fill it with soup, eat the soup, then the bowl. Its fantastic comfort food in cold weather. I baked this one. No soup in it, he's just into his meal. I thought this a good follow up shot.

I buy my flours from a local miller knowing I am getting quality milled grains. Sometimes I divvy up the 50# bags with friends. I ate the cut piece and gave away the still warm loaves. Feels good to bake and share.

Day 3 of the black and white photo food challenge. One day I will make efforts to shoot with a hand model so that I don't have to struggle and contort myself to make a shot. I am set up in my basement next to the only isolated North facing window in the house. Sourdough bread is a labor of love. I had a starter in my fridge but when I went on vacation it went bad so I decided to order one from King Arthur Flour. It is a starter that has been around since the 1700's. This is my first loaf of bread attempted with the new starter, I am excited!

When I first heard that quote it made me laugh. As a child, I too thought “ Wonder Bread”... tasted like Kleenex

A quick snap of one of the completed loaves. The bread won't be around for long, this could be a dangerous hobby.

Eighty seven degrees in Dawson City, as Doc and I sat outside under a huge shade tree and enjoyed the best fish dinner we have ever had anywhere. Many visitors opted to sit under the sun umbrella's, where they consumed many bottles if ice cold beer. The restaurant is named after the founder of Dawson City - Gold miner, Joe Ladue. Look him up on the web - his life makes for an interesting read.

My son runs a small cottage bakery out of his home. Today he made pocket bread and gave us four. We had them with dinner tonight, stuffed with chicken shawarma and lots of veggies.

There are 2 onions, a green pepper, a red pepper, some olives and loads of garlic in this. The veg were slow cooked in oil for an hour or so before being added to the dough.

 

....Delicious!
