Red Wolf Global moves High Pressure Separator to Rayong

Red Wolf Global transported an High Pressure Separator from Thailand's main port, Laem Chabang, in Chonburi to the eastern Thailand province of Rayong.
The shipment traveled from Hamburg, Germany’s largest port, which took approximately 30 days to reach Thailand.
The HP Separator a 67 tons is a separation device that is used in the cement industry for grinding systems equipped with tube mills, roller mills and high pressure grinding rolls.
Once the HP Separator arrived at the Laem Chabang port, two 120 mt cranes were used to lift off the 67 tons HP separator and positioning on the low bed six axle truck trailer.
Due to the weight of the cargo, police permission for required for the road transport. The Red Wolf Global team this permission as well as a police escort for the 75 km trip from Laem Chabang port to Rayong province. The Red Wolf Global Thailand team had located a special truck trailer due to the cargo weight.
Once the HP Separator arrived at the destination, our team used two 120 mt cranes to lift off the HP Separator and position it to its new home at the TPI Polene company in Rayong province.

Here we setup for an overnight retarded fermentation. Done at low temperatures, this allows for the bacterial fermentation to catch-up with the much faster yeast fermentation. The yeast metabolizes the starches into simpler sugars, while the bacteria digests the sugars and creates both lactic and acetic acid. Thus the retarded fermentation allows for a more sour sourdough, while also extracting more complex flavors from the grain.
Due to the large amount of dough, 9 # worth, there was insufficient free space in the refrigerator for the overnight ferment to occur there. Rather a large styrofoam cooler with industrial ice packs was used.

This time I largely stay to Reinhart's Basic Sourdough Formula, with the major exceptions being the use of 1) Amylose Enzyme, 2) Ascorbic Acid, and 3) the use of a high hydration dough.
As before, the generations-old Bavarian sourdough culture is being used.
Also for the first time I am using a machine mixer, in this case a Swedish Electrolux DLX. When I purchased it at Sur La Table, I thought it would ring up for the usual $500, but was told at the register that it is being discontinued (which is doubtful) and is selling for $200 (also doubtful). I think it was a pricing error, but they insisted and I wasn't about to argue!

The can is too big to fit in the space under the motor here. I think it would fit in a bigger dust collector, and of course I want one :)
What's happening here is that the pipe comes in from the rafter from elsewhere in the shop, drops down the wall to a blast gate - always open and simply there as it was a perfect wall-mounted coupling between the PVC and flexible hose - enters the 4" Dust Collection Separator where larger particles fall out of the cyclone before the remaining dust passes through the fan below the motor and into the dust collection bags.
