Bordeando el río Alberche, la puesta de sol prometía paisajes de luces y reflejos espectaculares. Levanté la vista y vi este sauce llorón, que filtraba el azul del cielo entre cascadas de ramas verdes.

A year round staple in my pantry is cranberry sauce; made with fresh berries (in season soon!), grated ginger, orange juice, cinnamon and half the recommended amount of sugar.
This tangy sauce compliments poultry like none other. :-)

CURIOSIDADES
1.- En Oriente el sauce llorón posee un significado de muerte pero también de permanencia y continuidad, y muchos personajes míticos orientales han sido enterrados a la sombra de sauces llorones. Mientras que en la mitología griega el sauce llorón era símbolo de magia y misterio, así como los celtas consideraban el sauce llorón como uno de sus 21 árboles sagrados.
Era el árbol del encantamiento y de la melancolía. Incluso se llega a mencionar en la mismísima Biblia.
2.- Leyendas y mitos
Este árbol ha sido la fuente de inspiración para la creación de múltiples leyendas y mitos acerca de su origen o la “magia” que puede existir en ellos. Estas mismas hablan de maravillosas historias que relatan acerca de la creación del árbol y también de como este se ha visto en fascinantes historias de como ayuda a otros seres incluso sanándolos.
3.- ¿Remedio curativo?
Desde épocas muy antiguas el sauce llorón ha sido muy utilizado por chamanes y brujos por sus propiedades analgésicas, antipiréticas y antineurálgicas, el cual es muy aconsejado para tratar contra la fiebre, dolores reumáticos y musculares, entre otros usos.
Las propiedades medicinales del sauce se mencionan en muchos textos antiguos desde Asía, Egipto, África y América.
El sauce llorón, autor de múltiples leyendas así como usado en remedios naturales.
4.- El árbol de la sabiduría
El sauce llorón no solo fue uno de los remedios más utilizados para calmar el dolor así como otros males, sino también como símbolo de la sabiduría.
Los chamanes, curanderos y brujos solían sentarse a meditar bajo sus ramas, pues se decía que el sauce tenía la capacidad de conectar este mundo con el mundo de los espíritus.
Por eso aquellos que necesitaban respuestas se sentaban bajo sus hojas a escuchar, y el susurro del viento al pasar entre las hojas del sauce se convertía en palabras que les -daban guía o consejo.
5.- Una obra de arte
Su elegancia y belleza ha inspirado a múltiples escritores y artistas, Leonardo da Vici (El sauce y la calabaza), W. Shakespeare (Othello, acto IV, escena III), Gustavo Adolfo Becquer (Rima IX), F. G. Lorca (Mariana Pineda),…entre otros más.

ginger sauce is peeled fresh ginger blended with a small amount of water in the nutribullet to add to curries or pineapple and ginger sauce/jam making
white bean side serving is cooked presoaked white beans blended with extra virgin olive oil in the nutribullet to a desired consistency
chickpea side serving is cooked presoaked chickpeas blended with extra virgin olive oil in the nutribullet to a desired consistency
notes
side servings to have alongside curry to contrast the spicey heat
lightly seasoned with salt when served.
other times i've added black pepper or chilli powder when blending.
next time i'll experiment with adding natural yoghurt or lemon juice

yesterday at whitechapel market i bought three large punnets of blueberries and three of raspberries total cost £6. they were beautiful and soooo many. it's a busy, busy fruit stall at the end of the market, walking towards the city. i didn't want to waste them so cooked them all today with sugar. i also had a pineapple in the fridge and cooked that too
both raspberries and blueberries washed, cooked with lemon juice (no water) until softened, brought to the boil, sugar added, a rolling simmer, when happy with the consistency i took the jam/sauce off the heat, cooled and poured into jars for the fridge
pineapple peeled, chopped and cooked with orange juice as i had some going spare, (no water) cloves, star aniseed, cinnamon powder and ginger powder, finally when the fruit was softened and brought to the boil, i added sugar, a rolling simmer, when happy with the consistency i took the jam/sauce off the heat, cooled and poured into jars for the fridge

small pots of unsweetened raspberry sauce, boxes of unsweetened raspberry sauce/jam thickened with chia seeds and jars of raspberry sauce/jam sweetened with sugar simmered in the slow cooker overnight. all sauces had a squeeze of lemon juice. ready for servings on the side of a main meal, for desserts or as an addition to the morning breakfast bowl flic.kr/p/2q3KDpp
it was the end of the day at walthamstow market yesterday and the raspberries were 2 large punnets for £1. i love raspberries and bought a few punnets but made sure i cooked them in the evening on the same day. hence a batch with sugar in the slow cooker as time was getting on. more pots, boxes and jars of raspberry sauces now in the freezer/fridge

Had another helper for the pizza yesterday. Harl Hubbs thought that it's very inconvenient to spread the tomato sauce with a spoon, so he invented a high pressure tomato sauce spreader.

Footprints? Nooo, these are convenient holes for the spices, so they don't fall off. Although they do look a little bit like footprints...

Mint Sauce - a classic of British cousine is traditionally served with lamb to, in my opinion, disguise the taste of meat. It's made of chopped mint and vinegar and here is mine dripping off the tea spoon with a sprig of mint from my garden. For Macro Mondays group - Condiment.
