This is brisket that cooked all day… with caramelized onions, corn on the cob with parmesan cheese, and home made mustard potato salad… and for dessert, lemon meringue pie… it all turn out pretty dam good… what I really can’t wait for is the next day leftover sandwiches… There is nothing like a brisket potato salad sandwiche with potato chips….

With the left-over cantal cheese from my birthday party I've made croque-monsieurs:

 

Ingredients:

 

. slices of white bread

. cantal cheese (or gruyere)

. butter

. flour

. milk

. ham

. salt and pepper

 

First made the bechamel sauce: Melt the butter in the saucepan. Than add the flour and stir. Cook gently for few minutes. Then add milk gradually until the sauce becomes thick. Add salt and pepper.

 

Then prepare the croque-monsieurs: spread butter over one side of each slice of bread. Then put a slice of ham on the top of each buttered slices of bread. Then top each slice of bread and ham with a slice of cantal (or gruyere) cheese. Top with an other bread slice.

 

Spoon on the bechamel sauce to the top of the sandwiches and sprinkle with the remaining of cantal (or gruyere) cheese.

 

Bake in the oven for 5 minutes or more, until the cheese topping is bubbly and browned.

Sabich sammich = yay!

A trip over to the Bathams pub The Vine (also known as Bull and Bladder)

in Brierley Hill for a few pints of Bathams. Its quite a trek for us Brummie lads so we set off at 4:30 and left at 9 o’clock, that way we could relax and not have to keep one eye on the clock and rush to make sure we got the last train, connections are also better that time of the evening. We started on the mild and had a few because while you can get the bitter in other pubs mild is scarce, then we had some pork pie, pastie and cheese sandwiches which always switch on the taste of the beer. This is a monthly get together of old friends originating from the music pubs of Birmingham, the idea is to get together and have a trip out to sample some great beer in traditional pubs.

 

I am in Vang Vieng, Laos at the moment. This is backpackers paradise. What a contrast to Luang Prabang this is. Here young travellers go to party, get drunk, take illegal substances, but foremost to go tubing on the river. Let yourself dropped of 3,5km outside Vang Vieng upstream and get some drinks in at the first bar and get on a swing. Then float on your tube to the next bar, party, meet people, drink Lao Lao shots, eat a bacon sandwiche, drink some cans of Laobeer, jump of a swing and move on your tube to the next bar. Never expected a place like this in South East Asia. Its insane!

 

Oh yeah, at the Mudbar, play a nice game of mud volleybal. Its not about winning though... :-)
