At Bjartmars Favorittkro Restaurant, where our tour coach stopped for a bacalao (dried salt cod) dinner - something of a specialty of the house, so they like to show it off.
This course came out at the same time for every table. You were required to grind up the sesame seeds yourself. So the whole sound of the restaurant changed to people grinding sesame seeds. The fragrance of the restaurant changed perceptibly, too.
Salt cod mantecato with walnut oil and fennel seed flatbread ; one of the best things in the world. one of my dad's faves!
