Produces large bulbs with easy peel wrappers. Outside wrappers are generously striped in deep purple. This variety is known for its ability to withstand soggy winter soils (not soggy here!) Flavor is outstanding with moderate heat. True hardneck and not braidable.
One step closer you guys! Third attempt this winter at Black fermented garlic (not a true ferment, but rather a result of the Maillard chemical reaction). After attempting this in the instapot, and a $5 rice cooker I thrifted, I’m finally seeing results closer to what my garlic loving heart wants... the deep, figgy, balsamic almost port wine like flavour and soft texture of black garlic. You’ve all heard me moan and groan about refusing to buy a garlic fermenter (in Asia there are humidity and temperature controlled locked chambers devoted to this very precise process) but I resent kitchen appliances that perform only one function and take up space in my work area. I spoke with a farmer at @wiseearthfarm (they happen to make the best black garlic in town, and indeed use the dedicated black garlic fermenter machine with some added water) aha! This is what I added to the bottom of the rice cooker, and came much closer to the result I want. My previous attempts all turned black but were far too dry and only good for powdered black garlic. My heart breaks every time I throw in a batch of my homegrown red Russian bulbs.. but will give it another try soon. Two Hundred and Fifty bulbs of garlic coming up 😍 My standard variety is the gorgeous purple streaked hard neck Red Russian, I also smuggled a bunch home from the markets in Morocco in October - a hot variety from Spain, (yes, I stuffed my suitcase full of stinky garlic bulbs all the way back to Canada 😆) and then the remainder is a spicy Yugoslavian, the name of which escapes me at the moment. After curing this will likely pull us through to January. Few things are as rewarding as a gardener/home cook as having a steady stash of your own homegrown garlic throughout the winter, superior to any imported garlic from the store- homegrown garlic is gold! After many years of growing garlic, I think we finally hit that sweet spot. Last summer’s harvest was slightly over 250 bulbs of Red Russian garlic, and this is what is remaining today- a few days shy of March! Usually I’m into product-of-China garlic by January.
