We took a very early walk in the shade of the local woods so as to avoid the noon-day heat of the current heatwave.
At Margo's for breakfast afterwards I found this beautiful cake on the counter top and Gary, the owner, kindly lifted the glass cover at my request so I could take this shot for today's Saturday Self-Challenge: food and drink
i just wish we were able to eat this cake the very same day it was made...first cake i've ever made however...i was proud of it and Emma seemed to like it too! :)

as you can see, there aren't orange nor yellow in my cake
i didnt find any yellow food-coloring in carrefour
and was too lazy to look for it somewhere else :<

Rainbow cake with strawberry topping. It is very delicious and the layers give it a different texture! We got a chance to taste it at inner cake, Rayong, Thailand.
This is the famous 'Super Epic Rainbow Cake' that I made for Bailey's 6th Birthday party. He and all the kids loved it. You know how most people prefer the icing to the cake? Well not me, I'm the odd one out who usually pushes all the icing to the side and just eats the cake - but NOT this icing! It is a Swiss Meringue Buttercream and it was divine! I think I ate as much as I put on the cake straight from the bowl!

no frosting just whipped cream and vanilla pudding in between the layers.
last night i was about to recruit hubby to help make a batch of frosting and for the first time in my life it just didn't sound very good. this cake tastes so good without it. it's very light and the faint taste of vanilla pudding between the layers is the perfect amount of sweetness! the whipping cream just added a nice layer of clouds around the rainbow : )

I know it's Happy Cookie Friday, but who could resist this slice of cake? I actually do have a rainbow trout cookie over at the blog.

It's so cheerful that I just had to take one more picture before it was all gone.
**Since my son wanted to help in the baking process and I knew it was a big project, we cheated and just used three boxed white cake mixes. We divided each cake in half and used Wilton dyes to make the colors nice and bright. Webaked each layer in a round 9 inch pan. The boxed cake was a bit soft so we had to be very careful when stacking the layers to keep them from breaking**

meg thought she could get away with just letting her birthday go by uncelebrated. little did she know i have been dying for a reason to make this rainbow cake ever since i saw in on omnomicon.
and yes, the only cake pans i have are heart-shaped.
I took the picture this morning when I had the last piece for breakfast. The cake looked much better when we had it for a friend's birthday on Saturday. And yes, the purple layer is missing but despite its flaws it was oh so delicious.
