I love this blog, the Bojon Gourmet and it seems we think alike a lot of the time. Awhile ago, I saw these cookies using the leftover almond pulp from making almond milk. I also tend to keep the pulp after draining almond milk, and had experimented with making steel-cut oat thumbprints. Alanna lets the pulp dry out first, then turns it into flour.
I used wet pulp in her recipe today just to see how it worked. (I am totally going to dehydrate the next batch however.) I used a slightly packed 1/3 c. of the almond pulp, and then refrigerated the dough for about a half hour before baking. They are a nice soft cookie, healthy with whole wheat and almond, but still sweet enough that I think I'll be able to fool my boys.
The new rules we're using for 28mm interwar pulp gaming are "Pulp Alley", which uses a deck of cards to add randomness and flavour.
