Egg cupcakes using this recipe: everydaypaleo.com/2010/03/24/egg-cupcakes/

I made some of my own modifications including using vegetarian bacon and sauteed peppers and onions. They hold up well in the refrigerator and I like them with lots of hot sauce (Cholula!)

 

Overall, I probably wouldn't make them again simply because I don't like eggs very much and don't like to eat them very often. If you're an egg lover, you'll definitely enjoy these.

Chicken soup, pan-fried sea scallops on local greens, roasted veggies* (cauliflower, beets, parsnip and purple turnip), organic strawberries and half an apple.

 

We had roasted beets twice this week--another new thing for us.

 

*root veggies were local!

It doesn't smell very good while cooking, but Ray and I both liked it. The chicken with gravy doesn't look very appetizing, but it was, LOL.
