A friendly group of Patagonians ran the small business that had the boats and kayaks used to get out to the Marble Caves. At the end of the day, they are getting the parrilla (BBQ) ready to prepare asado (grilled meat) for dinner. Lago General Carrera, Patagonia.

A culinary highlight of any visit to Patagonia has to be a traditional lamb roast over an open fire, depicted here. As a bonus, a selection of local veggies was also included. At the Top Hat Barbecue, Blount Springs, Alabama!

 

For over 40 years, the Top Hat Barbecue has been the place to go for pulled pork barbecue slow cooked over an open flame. The restaurant is located on U.S. Highway 31, just about six miles North of the exit 287 on I-65.

 

Seen here, large plate pulled pork barbecue with sauce, potato salad, baked beans, coleslaw & sweet iced tea. With generous tip, ~$20.

 

Typically, I think the plate would probably have included two side dishes.

 

I thought the bill was wee bit on the pricey side, but I knew what I wanted, and I specifically requested those three traditional side items to sample their fare. Further, having just driven about five consecutive hours, and not having eaten in 18 hours, I was hungry, and since I was only about 30 minutes away from my destination, I really didn't care.

 

While fried pies were typically available, there were none available this time, because the lady who prepares them suffered a death in the family, and was absent from work.

Basic recipe:

Ingredients:

Streaky Bacon

Jimmy's Braai sauce

 

Preperation:

• Thread one end of the bacon onto a bamboo skewer and then once all the way to the blunt end, wrap the bacon around the skewer in a spiral pattern.

 

• Pierce the other end of the bacon.

 

•Place many oopsies on a flat pan/baking tray and cover in Jimmy's Braai Sauce

 

•Let marinate for about an hour

 

• Place on braai grid when fire is still very hot.

 

• Turn regularly until oopsies are crispy

 

• Enjoy

L.A.Galbi style cuts - that permits the marinade to penetrate the meat faster. LA galbi (LA갈비) is made with beef ribs thinly cut across the bone. As the name suggests, this is an American variation that originates from immigrant Korean communities in Los Angeles. Galbi is one of the most popular Korean barbeque dishes. Here you can see it served with steamed rice and and variety of banchan. The meat was well marinated/seasoned and extremely tender. Simply delicious!

The Red Yao woman cooked for us a simple, but delicious, meal of puffed rice and crispy garnish, which was served almost like a cereal with an almost sweet-tasting tea poured over it instead of milk. Hard to describe, but it tasted quite good.

The day after my birthday we went to a crab break at my friend Esti's house.

Esti was a neighbor and a babysitter of mine when I was little, now she's super glamourous: she owns 3 of the hottest restaurants in Boston and she's married to the bassist of American Hi-Fi. But they're still real people and just as comfortable eatting pot roast with my family as they are having a gourmet meal.

This crab bake is a year tradition for them (although this is the first year I've gone) and this year they had a pig roasting on a spit.
