Baked these this morning in my Toaster Oven for lunch. I put fresh Oregano and Winter Savory on top to give it some extra flavour! So tasty!

Olive oil mixed with water and green food coloring in a glass pickle dish. Sitting on empty picture frame glass held up with 4 equal size glasses. Christmas lights underneath to give it a seasonal touch:) Yankee ingenuity:)

This was my lunch today from Whole Foods. Did you know that you can go to their seafood dept and they'll cook you a piece of fish for no charge? You can order grilled veggies, a salad, or fries if you want. I didn't know that...and I wish I had known that in the past. Not that I would go out of my way to get this, my old habit would have been to drive through McDonald's instead. The only reason why I'm eating better is because I want to feel better, the easy weight loss I've been experiencing lately is definitely a plus, but not the reason why I'm eating this way now. I am however, very happy that I finally understand why I haven't been losing weight and when I finally do get it all off, I know I'll never go back there again.

 

The benefits of salmon are incredible, but before I tell you what it does for you, let me tell you a little story about a girl I used to work with. She was our receptionist, a mom of two...one day she got horrible food poisoning and ended up in the hospital. The food poisoning somehow triggered her M.S. and it debilitated her to the point where she had speech, cognitive and motor skill problems. Imagine if one day you're fine and the next day you have a difficult time forming a simple sentence? Do you know what she ate after that? Salmon. Lot's of it. So much so that the break room had a permanent poached sockeye smell. But that's ok, you know she was able to reverse her multiple sclerosis, or at least halt it from doing more damage. That, my friends is amazing. I remember looking at her lunch as I inhaled a greasy $10 burger from Crocodile Cafe and thought..."Ugh, I could never eat like that." It must have showed on my face because she looked at me and said, "Just wait...it all seems fine now but sooner or later that's going to catch up with you." Well, here I am, almost 10 years later preaching the benefits of Salmon.

Here we go:

 

* The proteins from salmon (and most other fishes) are easy digestible and easily absorbed into the body. They do neither have any adverse side effects nor contain carcinogenic compounds, like other meats do. Salmons are also a source of good fat (omega-3 fatty acids) which also plays a vital role in keeping you healthy. Salmon is also rich in some of the very essential minerals like iron, calcium, selenium and phosphorus and vitamins like A, B and D. Selenium, which is very necessary for building up of tissues, hair, nails etc., is best obtained from animal proteins and among which, salmon is one of the best.

* Cardio-Vascular Health: While the Omega-3 Fatty Acids help reduce cholesterol, maintain flexibility of arteries and veins and strengthen cardiac muscles, the essential amino acids repair damages to the cardio-vascular tissues. They help reduce the blood pressure too, as they lower cholesterol level and prevent hardening of walls of arteries and veins, thereby considerably reducing the chances of heart attack.

* Metabolism: The Omega-3 fatty acids, vitamin-D and selenium, together help increase influence of insulin, thereby facilitating absorption of sugar and consequent lowering of blood sugar level.

* Eye Care: Again, the Omega-3 fatty acids and amino acids help prevent macular degeneration, dryness, loss of vision and fatigue of eyes. It is a proven fact that people who eat fishes regularly or more than others, have better vision than others, longer.

* Brain & Nerves: The Omega-3 fatty acids increase efficiency of the brain, improves memory and keep it wide awake during long working hours. In company with the amino acids, vitamin-A & D and selenium, these fatty acids protect nervous system from damages from aging, act as anti depressant, relaxes the brain and are also helpful in treating Alzheimer’s and Parkinson’s disease. Perhaps that is why the fish eaters are supposed to be more intelligent than the meat eaters.

* Other Benefits: Omega-3 fatty acids reduce inflammation of the arteries and digestive system, reduce chances of cancer of colon, prostrate and kidneys etc., improve skin texture, add shining to eyes, skin, hair and nails and help in the growth of beneficial bacteria in the colon. The fatter the salmon, the more nutritious and healthy it is. It is a good protein supplement of older or sick people too, being easy digestible. In some parts of the world, it is cheaper than other sources of animal proteins such as meat, poultry etc.

Fish oil is the fat or oil that's extracted from fish tissue. It comes from fatty fish, like herring, tuna, anchovies, and mackerel. However, it is sometimes produced from the livers of other fish, as is the situation with cod liver oil. Around 30 percent of fish oil is composed of omega-3s, although the remaining 70 percent is composed of other fats. What’s more, fish oil generally contains a vitamin A and D. It's also essential to get enough omega-3s because the Western diet has replaced a great deal of omega-3s with a few other fats like omega-6s. We all bought some bison tallow today.

 

Bison tallow is especially good for frying, since it is a stable fat and can withstand high heat. It's very nutritious -- rich in CLA (conjugated linoleic acid) and omega 3s.

 

Beef tallow is what McDonald's used to use -- until 1990 when they switched to soybean and vegetable oil. :-P

i am always developing recipes for new ways to introduce tomatoes...enriched with lycopene...as well as more omega 3's and veggies for a healthy diet. This is one that is easy and tastes sweet and comforting.

The Mediterranean olives that I used were absolutely gorgeous. Big plump with a beautiful purple hue around the pit.

Omega Fatty acids have been shown to decrease risk of heart disease. So I put them on my triple cheeseburgers as a way of canceling out the risk of heart attack from eating these things. Now i can eat as many as i want!

Tuna for Omega-3s

Tuna is a good source of heart-healthy omega-3s; it generally costs less than salmon. Albacore (white tuna) contains more omega-3s than other tuna varieties. Reel in these other sources of omega-3s, too: mackerel, herring, lake trout, sardines, and anchovies.
