The pure virgin olive oil is released in this final stage and poured into large metal or plastic containers ready to be weighed.

The third step is crushing the olives into a paste. The purpose of crushing is to tear the flesh cells to facilitate the release of the oil from the vacuoles. Malaxing (mixing) the paste for 20 to 45 minutes allows small oil droplets to combine into bigger ones. It is an indispensible step. The most common mixer is a horizontal trough with spiral mixing blades as the one above.

The second step in the oil extraction process is cleaning the olives. The olives pass through a blower that blasts leaves and tree and dirt particles off the fruit. They are then washed and passed on to be crushed and afterwards mixed in large barrels.

After the harvesting of the trees' crop is completed, the nets filled with olives are emptied into crates or harvest bags and immediately transferred to the processing plant to maintain maximum freshness. They are then dumped into a bin that transfers the olives by conveyors to the first oil extraction process which is the cleaning of the olives.

The next step is separating the oil from the rest of the olive components. This two-phase centrifuge separates the oil from the wet paste. In most cases, the oil coming out of the first centrifuge is further processed to eliminate any remaining water and solids by a second centrifuge that rotates faster.
