I hate spelling "hors d'oeuvres", by the way.
I thought these came out pretty good. The idea came after my partner made the salad with all the circular things. I cut out the circles with a piping bag tip and we plopped on bits of the salad we made out of our smoked bluefish.
I liked plating this. "OOH, I CAN FAN IT OUT AND PUT ALL THIS SAUCE AROUND IT, HUHUHUHUHU!!"
The sauce is porcini mushroom broth with miso, enriched with creme fraiche. I didn't do it exactly the way I was supposed to (didn't reduce the broth by much) but eh...whatever. As long as it tastes okay. I seared the pork chop and then stuck it in an oven until it was done.
