Lunch @ "Beauty World Hawker Centre" - Stall "Hong Wen Mutton Soup".
Traditional Teochew-style mutton soup served up almost without a hint of the offending animalic note. This is another steward of the spot - and there is no mystery. The meat is always tender and juicy; meaty but not animalic. The soup, sweet and supple, infused with Chinese herbs such as Angelica and Licorice, a perfect buffer and antidote to any offending notes from mutton. Delicately well-balanced - one of my favourite mutton soup in the country.
24th December is Norwegian Christmas - and instead of Turkey we have Mutton Ribs called Pinnekjøtt
Prep:
1) Soak in water for at least 12 hours (overnight), we soak them for a full 24 hours
2) Place in pan over beech sticks
3) Steam until tender (approx 3 - 4 hours)
4) Take out and serve with Mashed swede and boiled potatoes
4a) serve with mashed swede and roast potatoes!
not usually much of a meat person, but these were delicious.

I made it with the raw mutton slices that were left over from our hot pot dinner, with potatoes and pea tops. Really good!

I make it a point to not shave during winter break. Mostly it's a laziness issue- that and I really don't want to... so after I go back to school with a full mountain man beard, I like to have some fun and shave some cool styles into my face.
Shot taken at the Kashgar Sunday Market. Kashgar is located at the western most part of China, and was an important trading center on the Silk Road. Today, It continues to attract traders from Pakistan and Central Asian countries.
This guy, dressed in suit, was cutting off slabs of mutton meat for sale at the market.
