NYU student, Jeff Han (above, in black shirt), gave a demonstration at the 2006 TED conference in Monterey.
He showed a multi-touch interface that ran on a 36 inch rear projection screen. It included the two-finger, swell and shrink technology that later became associated with the iPhone. His demo at TED can be seen here:

After seeing videos of this multi-touch technology developed by Perceptive Pixel it was great being able to try it out for myself. Not to mention being able to say hi to Jeff Han. This picture shows images, maps, and other items being manipluated. It was like an iPhone on steroids.
Visitors to the Don Harrington Discovery Center interact with the MT multitouch, multiuser table. They are using "Gravitor" an application that comes with the NUI Snowflake software suite. The e-reader I just bought has an interesting infrared "touchless" multi-touch touchscreen. It beams a grid of infrared light a millimeter or so above the screen.
It's pretty neat: you can write notes on the pages and make drawings, so it's fairly high resolution. The datasheet for the sensor array states it has 4k x 4k resolution, which made me wonder just how many transmitters and receivers they have on there.
There is no visible light from the screen, so out comes the infrared camera...
There are only 12 emitters along the top edge of the display (photo above) and 16 along the left side, all spaced 7.5mm. On the right and bottom, a similar array of receivers are present and visible (in infrared) through the black plastic. They have the same 7.5 mm spacing.
They clearly do some magical interpolation to get the resolution they do (and they really do: you can write legible letters just a few mm high).

The Reactable opened up with an amazing Sound / Visual show using their key instrument, the Reactor. Basically it was a flat table, similar to that of Microsoft Surface but instead of doing Surface tasks, it was able to mix audio and visuals directly on the table using smaller components. Little blocks and hockey puck like items gave each sound a specific action giving an amazing performance.
