Two huge meatballs.
Was starving to death by the time this arrived.
So so on the meatballs, but the tomatos were sourish.
Was to hungry at the time to complain.
Dinner at Italiannese.

sear in a pan with a little olive oil
plop them into a sauce, simmer
boil spaghetti and serve with parmesan

Tonight I went to 'Exposure - Pittsburgh'. I met a lot of fellow photographers -- the nicest folks in the world -- and here we all are on flickr.
This shot was taken a week ago, but I thought I'd post it tonight :)
My second attempt at Swedish meatballs, or Scandinavian (from my Norwegian heritage). My grandmother's recipe:
Combine 2 pounds ground round and 1/4 pound suet with salt, pepper, nutmeg, and a little ginger. Add 1/2 cup boiled cream. Work well, the more the better. Shape into balls and boil in soup stock for a few minutes, then brown slightly in butter. Make gravy of a little stock in frying pan after frying meatballs.
My alterations:
No suet
Part ground beef, part ground pork
2% milk rather than boiled cream
Instead of boiling in stock and browning, I just put the stock in the fry pan. I've seen my grandmother do it both ways. You don't end up with browned meatballs this way, but it saves a step and a pot.
No gravy--I don't care for it.
Result--delicious. The only mistake was once again making my meatballs too large.
For my typical long rides, I go self-supported. Dehydrated food, Snickers bars and beef jerky. But I also like to support businesses along the way. Usually it's just bike parts and Gatorade but this trip I decided to splurge and eat at the River's Edge Cafe in Confluence. Sitting out on the porch, watching the Youghiogheny River flowing nearby was very pleasant.
Tonight's #hellofresh dinner is Beef Bulgogi Meatballs with roasted carrots, ginger rice, and a Sriracha crema. Everything about this meal is wonderful! Easy to prepare and delicious!
Served in pepper Parmesan crisps.
