Mini cinnamon buns made on the weekend and frozen for later "Afternoon Snacks" at school. Who doesn't like a warm cinnamon bun? Adapted from www.pixel-whisk.com/2012/11/baby-cinnamon-buns.html to make it whole grain and lower fat with pureed chickpeas for extra nutrition!

This is the perfect party dish - simple and a great make-ahead dish. The succulent, melt-in-your-mouth tenderloin is smeared with a creamy blue cheese spread and wrapped around crisp green beans for a bite that is filled with great flavors and textures.

How good is this for your digestive system? VERY. Fennel, mint & apple cider vinegar are all super helpful for belly-gut-tummy issues. Bless.

 

Sometimes your garden grows copious amounts of beautiful things (MINT! BASIL! CHIVES!) and a slaw is the perfect way to tame them. Plus it tastes better + better as it sits in the fridge for days as ya (happily) power through it.

 

Recipe, basically...

All sliced very thin:

 

Fennel, bulb and fronds

Radish

Zucchini

White Onion

Fresh Basil, Chives & Mint

 

Apple Cider Vinegar & Olive Oil

Salt & Pepper

Squirt of Braggs

Mustard Powder, Garlic Powder & Celery Salt

A lil Maple Syrup

Using the Cream of Coconut (a mixture with sugar already added, used for piña coladas & other similar cocktails) meant I didn't add any other sugar. I have a carton of sweetened coconut milk in the fridge and may use it this week, infusing the tea into the milk directly first.

Essentially layers of noodles, dried herbs and pepper, flour and cheese (a mix of Mozz and Monterey Jack) in a casserole, drenched with milk and topped with breadcrumbs before being baked. I'm not a huge fan of this approach (originally from www.cookingnook.com/best-baked-macaroni-cheese-recipe.html ) but that's what the school gave me. Next time - cheese sauce baby!

I wasn't sure I'd remember to pack them up in tighter containers as soon as they were frozen, so I wanted to make sure at least they were covered fairly well to prevent any freezer burn.

I don't normally go around offering taster spoons of oatmeal to people, but this recipe was worth it. Even those who didn't like oatmeal agreed this was tasty stuff.

I like to use a melon baller to help me

Lots of cheese, with a quick & easy sauce made of mayo, eggs, canned milk & ketchup. I've seen other recipes with a basic bechamel white sauce, but this is really fast to mix up.

Rolling out oblongs of dough, then rolling them with wax paper and sealing in cling wrap and foil means that they're ready to go once defrosted - no need to break out the rolling pin again!

I should have used my non-stick skillet. These ones had a tendency to burn because the mixture is so low-fat and you can see how uneven the surface of this skillet is - the oil wasn't distributed very evenly.

Baking them is much easier for frozen ones, since it can take a while to get them cooked through and the juices tend to make them stick more since they aren't very greasy. Using parchment paper underneath was a big help too.

I need to do this recipe again soon - it was lovely to just grab these to go and right now I'm moving too slowly to be a very efficient cook so this would be a great solution.

With just 3 ingredients plus water, this is a very simple recipe to put together, but would be very easy to adapt with whatever options are convenient for you.

Slow cooked chicken wings in a jerk marinade for tender meat and then high heat oven blast for crispy skin.

Lots of ingredients, but it's very easy to prepare most of the steps ahead of time, with just a couple potatoes and turnips to peel and cook before you serve it.

Don't ask me who Millie is, I have no idea. But her recipe is great!

At this point I took them off of the plastic and put them into baggies in the freezer in smaller portions.
