When you have Cucumbers, you make Pickles. I made a small batch of Lactofermented Garlic and Dill Pickles with the National Pickling Cucumbers that I harvested. I started fermenting it on Saturday and it's ready on Wednesday... and it's so good. I went to 99 Ranch Market and they had Mustard Greens and Daikon on sale. Both of which I can ferment, so I decided to get some. Feels like it been a while since I fermented anything. I watched a few YouTube videos on how to ferment Mustard Greens and I'm going to try this new way (to me) using cooked rice and rice water brine. I remember my mom and Auntie telling me they fermented greens like this, I think Philippines. I've wanted to try making lactofermented Ketchup for while now and after seeing a simple recipe on @kraut_source's website using real Tomatoes, I decided to give it a try. Part 1 involves fermenting 1 lb Tomatoes with 1/4 small Onion, 3 Garlic cloves and a Bay Leaf in Brine. One head of shredded cabbage fits in that one mason jar. This is the second of 3 ferments I have going on. It's a Garlic Dill Cauliflower ferment that I started a couple days ago. It looks clear in this photo when I made it, but it's starting to get cloudy as it ferments at room temperature. It'll be done in about 5 to 7 days, then I can refrigerate it.
