Macro Monday - Food beginning with B

Lots of options for today's theme but I settled for these red kidney beans as I liked the colour and the title came as soon as I saw the beans in the cupboard. HMM

Yes, beans are considered to be vegetables. According to the USDA Dietary Guidelines, legumes, specifically beans, dried peas and lentils, are classified as vegetables.

A legume is a plant in the family Fabaceae (or Leguminosae), or the fruit or seed of such a plant. When used as a dry grain, the seed is also called a pulse. Legumes are grown agriculturally, primarily for human consumption, for livestock forage and silage, and as soil-enhancing green manure. Well-known legumes include beans, soybeans, peas, chickpeas, peanuts, lentils, lupins, mesquite, carob, tamarind, alfalfa, and clover. Legumes produce a botanically unique type of fruit – a simple dry fruit that develops from a simple carpel and usually dehisces (opens along a seam) on two sides.

 

Legumes are notable in that most of them have symbiotic nitrogen-fixing bacteria in structures called root nodules. For that reason, they play a key role in crop rotation.

 

The term pulse, as used by the United Nations' Food and Agriculture Organization (FAO), is reserved for legume crops harvested solely for the dry seed. This excludes green beans and green peas, which are considered vegetable crops. Also excluded are seeds that are mainly grown for oil extraction (oilseeds like soybeans and peanuts), and seeds which are used exclusively for sowing forage (clovers, alfalfa). However, in common usage, these distinctions are not always clearly made, and many of the varieties used for dried pulses are also used for green vegetables, with their beans in pods while young.

 

Some Fabaceae, such as Scotch broom and other Genisteae, are leguminous but are usually not called legumes by farmers, who tend to restrict that term to food crops.

 

Archaeologists have discovered traces of pulse production around Ravi River (Punjab), the seat of the Indus Valley Civilisation, dating to c. 3300 BCE. Meanwhile, evidence of lentil cultivation has also been found in Egyptian pyramids and cuneiform recipes. Dry pea seeds have been discovered in a Swiss village that are believed to date back to the Stone Age. Archaeological evidence suggests that these peas must have been grown in the eastern Mediterranean and Mesopotamian regions at least 5,000 years ago and in Britain as early as the 11th century. The soybean was first domesticated around 5,000 years ago in China from a descendant of the wild vine Glycine soja.

Decided to make some slow-cooked chili today... yesterday morning I started soaking my "medley" for the chili. I am kind of obsessed with beans (I eat them every day...) so I like to come up with good mixes. This one was Navy Beans, Pinto Beans, Red Kidney Beans, and Black Turtle Beans.

Although Mexican in origin, nachos are very popular in Canada too. In our house we have them fairly regularly as our main meal.

1 Dose Kidneybohnen (425 ml), gut abgetropft

1 Apfel (säuerlich, bspw. Granny Smith), klein geschnitten und eine Zwiebel in feine Halbringe geschnitten.

Frische Petersilie klein hacken.

 

Dressing:

jeweils 1 Teil Wasser und Essig (hell), 2 Teile Öl

 

Alle Zutaten miteinander vermengen. Am Ende nit Salz und Pfeffer abschmecken. Evtl. einen Spritzer Zitronensaft dazu geben.

Fertig!

  

Steaming is a welcoming method of cooking especially next day of eating a lot of greasy foods. But not only for the next day, but I want to adopt it more often in my daily cooking. No oil is required, cooking time is shorter, and it seems it won't rob many ingredients of its nutrients so much as boiling and frying. Oh, and washing the pan is easy. I personally enjoy steaming all kinds of beans, then eat as a snack. My friend told me more about steaming recipes. I'm eager to try out! Please enjoy steaming once in a while!

The kidney bean is a variety of the common bean (Phaseolus vulgaris). It is named for its visual resemblance in shape and – for the red variety – colour to a human kidney.

Zutaten:

jeweils 1 Dose Kidneybohnen (250 gr. Abtropfgew.) und Mais (285 gr. Abtropfgew.)

2 Paprikaschoten, rot und grün

1 rote Zwiebel

1 Knoblauchzehe

optional 1 Chillischote

 

Für das Dressing:

2-3 EL Ketchup

1 Spritzer Zitronensaft

1 Prise Zucker

Salz und Peffer

 

Zubereitung:

 

Kidneybohnen und Mais in ein Sieb geben und abtropfen lassen.

Paprika in kleine Würfel schneiden.

Die Zwiebel in feine Ringe schneiden.

Chillischote und Knoblauch hacken.

 

Ketchup in einer kleinen Schale mit dem Zitronensaft und dem Zucker verrühren und mit Salz und Pfeffer abschmecken.

 

Die Zutaten in einer Schüssel vermengen und das Ketchup unterheben.

Kurz vor dem servieren mit etwas frischer Petersilie garnieren.

Fertig!

 

Der Salat eignet sich hervorragend zu einem Barbeque als Beilage.

One of my final pieces for my Final Major Project at college. I really don't like any of the foods that are here, their smell makes me feel ill, most of all the juice that was in their cans!!! Had to photograph each hob at a time, cos I didn't have enough head room to shoot the whole thing. Hope you enjoy them though.... ;)
