This was a marvelous, beautiful, and delicious desert on the second day of Rosh HaShannah 2018, at Handmaker Jewish Senior Services. I have a reservation all the High Holiday meals and services this year. Doing it all at home was just too much for me.

You can see the remains of the traditional round raisin-challah and honey on a plate to the right. There were also apple slices to dip into the honey on that plate. I ate all of them...(;-)

What better way to spend an evening than with a bottle of wine watching the sun set. I'm not sure that alcohol and photography necessarily produce the best of results but I'll let you guys judge for yourselves!

 

Wine is an alcoholic beverage, made of fermented fruit juice, usually from grapes. The natural chemical balance of grapes lets them ferment without the addition of sugars, acids, enzymes, or other nutrients. Grape wine is produced by fermenting crushed grapes using various types of yeast. Yeast consumes the sugars in the grapes and converts them into alcohol. Different varieties of grapes and strains of yeasts produce different types of wine.

 

Wines made from other fruits, such as apples and berries, are normally named after the fruit from which they are produced (for example, apple wine or elderberry wine) and are generically called fruit wine or country wine (not to be confused with the French term vin de pays). Others, such as barley wine and rice wine (i.e., sake), are made from starch-based materials and resemble beer and spirit more than wine, while ginger wine is fortified with brandy. In these cases, the term "wine" refers to the higher alcohol content rather than the production process. The commercial use of the English word "wine" (and its equivalent in other languages) is protected by law in many jurisdictions.

 

Wine has a rich history dating back thousands of years, with the earliest known production occurring around 8,000 years ago on the territory of modern-day Georgia. It first appeared in the Balkans at about 4500 BC and was very common in ancient Greece, Thrace and Rome. Wine has also played an important role in religion throughout history. The Greek god Dionysus and the Roman equivalent Bacchus represented wine, and the drink is also used in Christian Eucharist ceremonies and the Jewish Kiddush.

The second Israeli cosmonaut Eitan Stiva .

 

The time is difficult now, many important events fade into the background. Meanwhile, we have a second Israeli cosmonaut.

 

Eitan Stiva, a 64-year-old businessman and former Air Force pilot, shelled out $55 million to fly into space. He, on a private charter flight of SpaceX (this is their first private charter flight), went to the International Space Station, where he should spend about 10 days. Regarding the astronaut himself, opinions were sharply divided. It was also somewhat difficult for me to accept that the "tourist" is made a symbol of the country. But on the other hand, sending an astronaut to Israel is unrealistic - the entire budget of the Israel Space Agency is 1.5 million shekels, and the cost of the mission is estimated at 230 million shekels.

 

Of course, the Ilan Ramon Z "L Foundation could not miss such a unique opportunity, and a brave businessman was attracted to the mission "Rakia" (Sky Firmament), within the framework of which a whole series of scientific experiments will be carried out in space (in fact, he has already carried them out), a total of 38, if I don’t mind I don't confuse.

 

And we must give credit to Eitan Steve, who agreed to conduct all these experiments. Dozens of different companies have joined the mission, developing various products and equipment for space, and not only. And posters about various scientific experiments. There are some very interesting ones. For example, a company that develops a device to do a blood test in the eyes. Something shines in the eye, and please, a blood test. In space, this is priceless, and it will come in handy on earth. There will be no need to prick anyone with needles.

  

And here, using the CRISPR system, they are developing a diagnostic platform. You can't send a doctor into space. Therefore, it is necessary to create an opportunity for astronauts to diagnose themselves.

The Sabbath is from Friday at sun down until Saturday night. It is traditionally brought in through the women lighting candles and a blessing on a cup of wine by the head of the household followed by a delicious meal.

The Jewish Square, Vienna 1, formed in the Middle Ages under the name of "schoolyard" the center of the former Jewish Town, extending next to the Ducal court. It was closed from the rest of the city by four gates. Here there were school, bathhouse, synagogue and the house of the rabbi. The school was one of the most important of German-speaking countries. The community existed from about 1190 to the Vienna Geserah in 1421.

The stemming from the 15th century Jordan House, Nr. 2, bears a late Gothic relief with the representation of Jesus' baptism in the Jordan. This is not only a reference to the name of the house owner, Jörg Jordan, but also to the Vienna Geserah which the accompanying text endorses. On the initiative of Cardinal Christoph Schönborn, the Archdiocese of Vienna donated a plaque which Cardinal Franz König on 29 October 1998 unveiled. Its text reads: "Kiddush HaShem" means "sanctification of God". With this awareness, chose Viennese Jews in the synagogue here on Jewish Square - the center of an important Jewish community - at the time of persecution 1420/21 the suicide to escape a feared by them forced baptism. Others, about 200, were burnt alive in Erdberg (today 3rd district of Vienna) at the stake. Christian preachers of that time spread superstitious anti-Jewish ideas and thus incited against the Jews and their faith. So influenced, Christians in Vienna acquiesced without resistance, approved it and became perpetrators. Thus, the liquidation of the Vienna Jewish Town in 1421 was already a looming omen for what happened in our century throughout europe during the Nazi dictatorship. Medieval popes pronounced unsuccessfully against the anti-Jewish superstition, and individual believers struggled unsuccessfully against the racial hatred of the Nazis. But those were too few. Today Christendom regrets its involvement in the persecution of Jews and recognizes its failures. "Sanctification of God" today for Christians can only mean: asking for forgiveness and hope in God's salvation. October 29, 1998

Already in 1910, consisted the plan here the poet of the Enlightenment, Gotthold Ephraim Lessing (1729-1781), who in his play "Nathan the Wise" the interdenominational tolerance has put up a literary monument, to honor with a statue. In 1935, a sculpture by Siegfried Charoux was unveiled, but only four years later, in 1940, taken off and melted down for armaments. In 1968, the same artist created again a Lessing monument, which came first on the Morzin square and 1981 on the original site.

Since 2000, the place is a unique ensemble of remembering with the memorial by Rachel Whiteread for the 65,000 Austrian victims of the Shoah. 1995 the foundations of the in 1420 destroyed synagogue were excavated which now with finds constitute a part of the branch of the Jewish Museum Vienna. A computer-animated walk leads into one of the largest Jewish communities in Europe which existed here in the early 15th century. Another room is dedicated to the Shoah documentation.

'Shabbat' or the Sabbath, also called 'Shabbos' in Yiddish is Judaism's day of rest on the seventh day of the week. This panel by artist Judy Chicago called "Rainbow Shabbat" is a 54-inch by six-foot work on stained glass. It captures Chicago’s strengths and weaknesses. The panel, a painting of a traditional Sabbath meal, shows Arabs, Jews, Vietnamese, Africans and Anglos sitting with their arms around each other, heads turned towards the head of the table where an Orthodox Jewish woman lights the candles. At the other end of the table, the woman’s husband says kiddush, the prayer over wine. The diners are bathed in a rainbow of stained glass, as though the meal occurs in a grand, medieval cathedral.

Vitis (grapevine) is a genus of 81 accepted species of vining plants in the flowering plant family Vitaceae. The genus consists of species predominantly from the Northern Hemisphere. It is economically important as the source of grapes, both for direct consumption of the fruit and for fermentation to produce wine. The study and cultivation of grapevines is called viticulture.

 

Most cultivated Vitis varieties are wind-pollinated with hermaphroditic flowers containing both male and female reproductive structures, while wild species are dioecious. These flowers are grouped in bunches called inflorescences. In many species, such as Vitis vinifera, each successfully pollinated flower becomes a grape berry with the inflorescence turning into a cluster of grapes. While the flowers of the grapevines are usually very small, the berries are often large and brightly colored with sweet flavors that attract birds and other animals to disperse the seeds contained within the berries.

 

Grapevines usually only produce fruit on shoots that came from buds that were developed during the previous growing season. In viticulture, this is one of the principles behind pruning the previous year's growth (or "One year old wood") that includes shoots that have turned hard and woody during the winter (after harvest in commercial viticulture). These vines will be pruned either into a cane which will support 8 to 15 buds or to a smaller spur which holds 2 to 3 buds.

 

Description

Flower buds are formed late in the growing season and overwinter for blooming in spring of the next year. They produce leaf-opposed cymes. Vitis is distinguished from other genera of Vitaceae by having petals which remain joined at the tip and detach from the base to fall together as a calyptra or 'cap'. The flowers are mostly bisexual, pentamerous, with a hypogynous disk. The calyx is greatly reduced or nonexistent in most species and the petals are joined together at the tip into one unit but separated at the base. The fruit is a berry, ovoid in shape and juicy, with a two-celled ovary each containing two ovules, thus normally producing four seeds per flower (or fewer by way of aborted embryos).

 

Other parts of the vine include the tendrils which are leaf-opposed, branched in Vitis vinifera, and are used to support the climbing plant by twining onto surrounding structures such as branches or the trellising of a vine-training system.

 

In the wild, all species of Vitis are normally dioecious, but under domestication, variants with perfect flowers appear to have been selected.

 

The genus Vitis is divided into two subgenera, Euvitis Planch. have 38 chromosomes (n=19) with berries borne on clusters and Muscadinia Planch. 40 (n=20) with small clusters.

 

Wild grapes can resemble the single-seeded Menispermum canadense (moonseed), which is toxic.

 

Species

Most Vitis species are found mostly in the temperate regions of the Northern Hemisphere in North America and eastern Asia, exceptions being a few in the tropics and the wine grape Vitis vinifera which originated in southern Europe and southwestern Asia. Grape species occur in widely different geographical areas and show a great diversity of form.

 

Their growth makes leaf collection challenging and polymorphic leaves make identification of species difficult. Mature grapevines can grow up to 48 centimetres (19 inches) in diameter at breast height and reach the upper canopy of trees more than 35 metres (115 feet) in height.

 

Many species are sufficiently closely related to allow easy interbreeding and the resultant interspecific hybrids are invariably fertile and vigorous. Thus the concept of a species is less well defined and more likely represents the identification of different ecotypes of Vitis that have evolved in distinct geographical and environmental circumstances.

 

The exact number of species is not certain. Plants of the World Online states 81 species are accepted, but lists 84. More than 65 species in Asia are poorly defined. Approximately 25 species are known in North America and just one, V. vinifera has Eurasian origins; some of the more notable include:

 

Vitis aestivalis, the summer grape, native to the Eastern United States, especially the Southeastern United States

Vitis amurensis, native to the Asian continent, including parts of Siberia and China

Vitis arizonica, The Arizona grape is native to Arizona, Utah, Nevada, California, New Mexico, Texas, and Northern Mexico.

Vitis berlandieri, native to the southern North America, primarily Texas, New Mexico and Arkansas. Primarily known for good tolerance against soils with a high content of lime, which can cause chlorosis in many vines of American origin

Vitis californica, the California wild grape, or Northern California grape, or Pacific grape, is a wild grape species widespread across much of California as well as southwestern Oregon

Vitis coignetiae, the crimson glory vine, a species from East Asia grown as an ornamental plant for its crimson autumn foliage

Vitis labrusca L., the fox grapevine, sometimes used for winemaking and for jam. Native to the Eastern United States and Canada. The Concord grape was derived by a cross with this species

Vitis riparia, the riverbank grapevine, sometimes used for winemaking and for jam. Native to the entire Eastern United States and north to Quebec

Vitis rotundifolia (syn. Muscadinia rotundifolia), the muscadine, used for jams and wine. Native to the Southeastern United States from Delaware to the Gulf of Mexico

Vitis rupestris, the rock grapevine, used for breeding of Phylloxera resistant rootstock. Native to the Southern United States

Vitis vinifera, the European grapevine. Native to the Mediterranean and Central Asia.

There are many cultivars of grapevines; most are cultivars of V. vinifera. One of them includes, Vitis 'Ornamental Grape'.

 

Hybrid grapes also exist, and these are primarily crosses between V. vinifera and one or more of V. labrusca, V. riparia or V. aestivalis. Hybrids tend to be less susceptible to frost and disease (notably phylloxera), but wine from some hybrids may have a little of the characteristic "foxy" taste of V. labrusca.

 

The Latin word Vitis is feminine,[19] and therefore adjectival species names take feminine forms, such as V. vinifera.

 

Ecology

Phylloxera is an American root aphid that devastated V. vinifera vineyards in Europe when accidentally introduced in the late 19th century. Attempts were made to breed in resistance from American species, but many winemakers and customers did not like the unusual flavour profile of the hybrid vines. However, V. vinifera grafts readily onto rootstocks of the American species and their hybrids with V. vinifera, and most commercial production of grapes now relies on such grafts.

 

Commercial distribution

The vine and wheat ear have been frequently used as symbol of the blood and flesh of Christ, hence figuring as symbols (bread and wine) of the Eucharist and are found depicted on ostensories. Often the symbolic vine laden with grapes is found in ecclesiastical decorations with animals biting at the grapes. At times, the vine is used as symbol of temporal blessing.

 

In Mandaeism, uthras (angels or celestial beings) are often described as personified grapevines (gupna).

Vitis (grapevine) is a genus of 81 accepted species of vining plants in the flowering plant family Vitaceae. The genus consists of species predominantly from the Northern Hemisphere. It is economically important as the source of grapes, both for direct consumption of the fruit and for fermentation to produce wine. The study and cultivation of grapevines is called viticulture.

 

Most cultivated Vitis varieties are wind-pollinated with hermaphroditic flowers containing both male and female reproductive structures, while wild species are dioecious. These flowers are grouped in bunches called inflorescences. In many species, such as Vitis vinifera, each successfully pollinated flower becomes a grape berry with the inflorescence turning into a cluster of grapes. While the flowers of the grapevines are usually very small, the berries are often large and brightly colored with sweet flavors that attract birds and other animals to disperse the seeds contained within the berries.

These vines will be pruned either into a cane which will support 8 to 15 buds or to a smaller spur which holds 2 to 3 buds.

In the wild, all species of Vitis are normally dioecious, but under domestication, variants with perfect flowers appear to have been selected.

 

The genus Vitis is divided into two subgenera, Euvitis Planch. have 38 chromosomes (n=19) with berries borne on clusters and Muscadinia Planch. 40 (n=20) with small clusters.

Species

There are many cultivars of grapevines; most are cultivars of V. vinifera. One of them includes, Vitis 'Ornamental Grape'.

 

Hybrid grapes also exist, and these are primarily crosses between V. vinifera and one or more of V. labrusca, V. riparia or V. aestivalis. Hybrids tend to be less susceptible to frost and disease (notably phylloxera), but wine from some hybrids may have a little of the characteristic "foxy" taste of V. labrusca.

 

The Latin word Vitis is feminine,[19] and therefore adjectival species names take feminine forms, such as V. vinifera.

 

Ecology

Phylloxera is an American root aphid that devastated V. vinifera vineyards in Europe when accidentally introduced in the late 19th century. Attempts were made to breed in resistance from American species, but many winemakers and customers did not like the unusual flavour profile of the hybrid vines. The Jewish Square, Vienna 1, formed in the Middle Ages under the name of "schoolyard" the center of the former Jewish Town, extending next to the Ducal court. It was closed from the rest of the city by four gates. Here there were school, bathhouse, synagogue and the house of the rabbi. The school was one of the most important of German-speaking countries. The community existed from about 1190 to the Vienna Geserah in 1421.

The stemming from the 15th century Jordan House, Nr. 2, bears a late Gothic relief with the representation of Jesus' baptism in the Jordan. This is not only a reference to the name of the house owner, Jörg Jordan, but also to the Vienna Geserah which the accompanying text endorses. On the initiative of Cardinal Christoph Schönborn, the Archdiocese of Vienna donated a plaque which Cardinal Franz König on 29 October 1998 unveiled. Its text reads: "Kiddush HaShem" means "sanctification of God". With this awareness, chose Viennese Jews in the synagogue here on Jewish Square - the center of an important Jewish community - at the time of persecution 1420/21 the suicide to escape a feared by them forced baptism. Others, about 200, were burnt alive in Erdberg (today 3rd district of Vienna) at the stake. Christian preachers of that time spread superstitious anti-Jewish ideas and thus incited against the Jews and their faith. So influenced, Christians in Vienna acquiesced without resistance, approved it and became perpetrators. Thus, the liquidation of the Vienna Jewish Town in 1421 was already a looming omen for what happened in our century throughout europe during the Nazi dictatorship. Medieval popes pronounced unsuccessfully against the anti-Jewish superstition, and individual believers struggled unsuccessfully against the racial hatred of the Nazis. But those were too few. Today Christendom regrets its involvement in the persecution of Jews and recognizes its failures. "Sanctification of God" today for Christians can only mean: asking for forgiveness and hope in God's salvation. October 29, 1998

Already in 1910, consisted the plan here the poet of the Enlightenment, Gotthold Ephraim Lessing (1729-1781), who in his play "Nathan the Wise" the interdenominational tolerance has put up a literary monument, to honor with a statue. In 1935, a sculpture by Siegfried Charoux was unveiled, but only four years later, in 1940, taken off and melted down for armaments. In 1968, the same artist created again a Lessing monument, which came first on the Morzin square and 1981 on the original site.

Since 2000, the place is a unique ensemble of remembering with the memorial by Rachel Whiteread for the 65,000 Austrian victims of the Shoah. 1995 the foundations of the in 1420 destroyed synagogue were excavated which now with finds constitute a part of the branch of the Jewish Museum Vienna. A computer-animated walk leads into one of the largest Jewish communities in Europe which existed here in the early 15th century. Another room is dedicated to the Shoah documentation.

Stutthof was a Nazi German concentration camp established in a secluded, wet, and wooded area near the small town of Sztutowo (German: Stutthof) 34 km (21 mi) east of the city of Gdańsk in the former territory of the Free City of Danzig. The camp was set up around already existing structures after the invasion of Poland in World War II, used for the imprisonment of Polish intelligentsia. The actual barracks were built in the following year by hundreds of prisoners enslaved in labour commandos.

The Trawniki concentration camp was set up by Nazi Germany in the village of Trawniki about 40 kilometres (25 mi) southeast of Lublin during the occupation of Poland in World War II. Throughout its existence the camp served a dual function. It was organized on the grounds of the former Polish sugar refinery of the Central Industrial Region, and subdivided into at least three distinct zones.

The Trawniki camp first opened after the outbreak of war with the USSR, intended to hold Soviet POWs, with rail lines in all major directions in the General Government territory. Between 1941 and 1944, the camp expanded into an SS training facility for collaborationists auxiliary police, mainly Ukrainian. And in 1942, it became the forced-labor camp for thousands of Jews within the KL Lublin system of subcamps as well. The Trawniki Jewish inmates provided slave labour for the makeshift industrial plants of SS Ostindustrie to work in appalling conditions with little food.[

The Jewish Square, Vienna 1, formed in the Middle Ages under the name of "schoolyard" the center of the former Jewish Town, extending next to the Ducal court. It was closed from the rest of the city by four gates. Here there were school, bathhouse, synagogue and the house of the rabbi. The school was one of the most important of German-speaking countries. The community existed from about 1190 to the Vienna Geserah in 1421.

The stemming from the 15th century Jordan House, Nr. 2, bears a late Gothic relief with the representation of Jesus' baptism in the Jordan. This is not only a reference to the name of the house owner, Jörg Jordan, but also to the Vienna Geserah which the accompanying text endorses. On the initiative of Cardinal Christoph Schönborn, the Archdiocese of Vienna donated a plaque which Cardinal Franz König on 29 October 1998 unveiled. Its text reads: "Kiddush HaShem" means "sanctification of God". With this awareness, chose Viennese Jews in the synagogue here on Jewish Square - the center of an important Jewish community - at the time of persecution 1420/21 the suicide to escape a feared by them forced baptism. Others, about 200, were burnt alive in Erdberg (today 3rd district of Vienna) at the stake. Christian preachers of that time spread superstitious anti-Jewish ideas and thus incited against the Jews and their faith. So influenced, Christians in Vienna acquiesced without resistance, approved it and became perpetrators. Thus, the liquidation of the Vienna Jewish Town in 1421 was already a looming omen for what happened in our century throughout europe during the Nazi dictatorship. Medieval popes pronounced unsuccessfully against the anti-Jewish superstition, and individual believers struggled unsuccessfully against the racial hatred of the Nazis. But those were too few. Today Christendom regrets its involvement in the persecution of Jews and recognizes its failures. "Sanctification of God" today for Christians can only mean: asking for forgiveness and hope in God's salvation. October 29, 1998

Already in 1910, consisted the plan here the poet of the Enlightenment, Gotthold Ephraim Lessing (1729-1781), who in his play "Nathan the Wise" the interdenominational tolerance has put up a literary monument, to honor with a statue. In 1935, a sculpture by Siegfried Charoux was unveiled, but only four years later, in 1940, taken off and melted down for armaments. In 1968, the same artist created again a Lessing monument, which came first on the Morzin square and 1981 on the original site.

Since 2000, the place is a unique ensemble of remembering with the memorial by Rachel Whiteread for the 65,000 Austrian victims of the Shoah. 1995 the foundations of the in 1420 destroyed synagogue were excavated which now with finds constitute a part of the branch of the Jewish Museum Vienna. A computer-animated walk leads into one of the largest Jewish communities in Europe which existed here in the early 15th century. Another room is dedicated to the Shoah documentation.

Wine is an alcoholic beverage, made of fermented fruit juice, usually from grapes. The natural chemical balance of grapes lets them ferment without the addition of sugars, acids, enzymes, or other nutrients. Grape wine is produced by fermenting crushed grapes using various types of yeast. Yeast consumes the sugars in the grapes and converts them into alcohol. Different varieties of grapes and strains of yeasts produce different types of wine.

 

Wines made from other fruits, such as apples and berries, are normally named after the fruit from which they are produced (for example, apple wine or elderberry wine) and are generically called fruit wine or country wine (not to be confused with the French term vin de pays). Others, such as barley wine and rice wine (i.e., sake), are made from starch-based materials and resemble beer and spirit more than wine, while ginger wine is fortified with brandy. In these cases, the term "wine" refers to the higher alcohol content rather than production process. The commercial use of the English word "wine" (and its equivalent in other languages) is protected by law in many jurisdictions.

 

Wine has a rich history dating back thousands of years, with the earliest known production occurring around 8,000 years ago on the territory of modern-day Georgia. It first appeared in the Balkans at about 4500 BC and was very common in ancient Greece, Thrace and Rome. Wine has also played an important role in religion throughout history. The Greek god Dionysus and the Roman equivalent Bacchus represented wine, and the drink is also used in Christian Eucharist ceremonies and the Jewish Kiddush.

Rosh Hashanah (Hebrew: ראש השנה‎, literally "head of the year"), is the Jewish New Year. It is the first of the High Holy Days or Yamim Nora'im ("Days of Awe") which usually occur in the early autumn of the Northern Hemisphere. Rosh Hashanah is a two day celebration which begins on the first day of Tishrei, the first month of the Jewish calendar. The day is believed to be the anniversary of the creation of Adam and Eve, the first man and woman, and their first actions toward the realization of mankind’s role in God’s world.[1] It is described in the Torah as יום תרועה (Yom Teru'ah, a day of sounding [the Shofar]).[2] Rosh Hashanah customs include sounding the shofar and eating symbolic foods such as apples dipped in honey. The common greeting on Rosh Hashanah is "Shanah Tovah."

he term "Rosh Hashanah" does not appear in the Torah. Leviticus 23:24 refers to the festival of the first day of the seventh month as "Zikhron Teru'ah" ("a memorial with the blowing of horns"); it is also referred to in the same part of Leviticus as 'שַׁבַּת שַׁבָּתוֹן' or penultimate Sabbath or meditative rest day, and a "holy day to God". These same words are commonly used in the Psalms to refer to the anointed days. Numbers 29:1 calls the festival Yom Teru'ah, ("Day [of] blowing [the horn]"), and symbolizes a number of subjects, such as the Binding of Isaac and the animal sacrifices that were to be performed.[3][4] (The term Rosh Hashanah appears once in the Bible in Ezekiel 40:1 where it means generally the time of the "beginning of the year" or is possibly a reference to Yom Kipur,[3] but the phrase may also refer to the month of Nissan in the spring, especially in light of Exodus 12:2 where the month of Nissan is stated as being "the first month of the year" and Ezekiel 45:18 where "the first month" unambiguously refers to Nissan, the month of Passover, as made plain by Ezekiel 45:21.[5])

The Hebrew Rosh Ha-Shanah is etymologically related to the Arabic Ras as-Sanah, the name chosen by Muslim lawmakers for the Islamic New Year, reflecting the Islamic imitation of older Jewish traditions. Other pre-Islamic mid-eastern cultures, such as Egypt, Persia and Babylon, did not use this unique name.

Rosh Hashanah marks the start of a new year in the Hebrew calendar (one of four "new year" observances that define various legal "years" for different purposes as explained in the Mishnah and Talmud). It is the new year for people, animals, and legal contracts. The Mishnah also sets this day aside as the new year for calculating calendar years, shmita and yovel years. Jews are confident that Rosh Hashanah represents either figuratively or literally God's creation ex nihilo. However, according to Rabbi Eleazar ben Shammua, Rosh Hashanah commemorates the creation of man.[6]

The Mishnah contains the second known reference to Rosh Hashanah as the "day of judgment".[7] In the Talmud tractate on Rosh Hashanah, it states that three books of account are opened on Rosh Hashanah, wherein the fate of the wicked, the righteous, and those of an intermediate class are recorded. The names of the righteous are immediately inscribed in the book of life, and they are sealed "to live." The intermediate class are allowed a respite of ten days, until Yom Kippur, to reflect, repent and become righteous;[8] the wicked are "blotted out of the book of the living forever."[9]

In Jewish liturgy, Rosh Hashanah leads to Yom Kippur, which is described as "the day of judgment" (Yom ha-Din) and "the day of remembrance" (Yom ha-Zikkaron). Some midrashic descriptions depict God as sitting upon a throne, while books containing the deeds of all humanity are opened for review, and each person passes in front of Him for evaluation of his or her deeds. The Talmud provides three central ideas behind the day:

"The Holy One said, 'on Rosh Hashanah recite before Me [verses of] Sovereignty, Remembrance, and Shofar blasts (malchuyot, zichronot, shofrot): Sovereignty so that you should make Me your King; Remembrance so that your remembrance should rise up before Me. And through what? Through the Shofar.' (Rosh Hashanah 16a, 34b)"[10] This is reflected in the prayers composed by the classical rabbinic sages for Rosh Hashanah found in all machzorim where the theme of the prayers is the strongest theme is the "coronation" of God as King of the universe in preparation for the acceptance of judgments that will follow on that day, symbolized as "written" into a Divine book of judgments, that then hang in the balance for ten days waiting for all to repent, then they will be "sealed" on Yom Kippur. The assumption is that everyone was sealed for life and therefore the next festival is Sukkot (Tabernacles) that is referred to as "the time of our joy" (z'man simchateinu).

Laws on the form and use of the shofar and laws related to the religious services during the festival of Rosh Hashanah are described in Rabbinic literature such as the Mishnah that formed the basis of the tractate "Rosh HaShanah" in both the Babylonian Talmud and the Jerusalem Talmud. This also contains the most important rules concerning the calendar year.[11]

The shofar is blown in long, short and staccato blasts that follow a set sequence:

Teki'ah (long sound) Numbers 10:3;

Shevarim (3 broken sounds) Numbers 10:5;

Teru'ah (9 short sounds) Numbers 10:9;

Teki'ah Gedolah (very long sound) Exodus 19:16,19;

Shevarim Teru'ah (3 broken sounds followed by 9 short sounds).

Rosh Hashanah occurs 163 days after the first day of Passover (Pesach). In terms of the Gregorian calendar, the earliest date on which Rosh Hashanah can fall is September 5, as happened in 1899 and will happen again in 2013. The latest date that Rosh Hashanah can occur relative to the Gregorian dates is October 5, as happened in 1967 and will happen again in 2043. After 2089, the differences between the Hebrew calendar and the Gregorian calendar will result in Rosh Hashanah falling no earlier than September 6.[12]

Although the Jewish calendar is based on the lunar cycle, so that the first day of each month originally began with the first sighting of a new moon, since the fourth century it has been arranged so that Rosh Hashanah never falls on a Wednesday, Friday, or Sunday.[13]

The Torah defines Rosh Hashanah as a one-day celebration, and since days in the Hebrew calendar begin at sundown, the beginning of Rosh Hashanah is at sundown at the end of 29 Elul. The rules of the Hebrew calendar are designed such that the first day of Rosh Hashanah will never occur on the first, fourth, or sixth day of the Jewish week[14] (i.e., Sunday, Wednesday, or Friday). Since the time of the destruction of the Second Temple of Jerusalem in 70 CE and the time of Rabban Yohanan ben Zakkai, normative Jewish law appears to be that Rosh Hashanah is to be celebrated for two days, due to the difficulty of determining the date of the new moon.[3] Nonetheless, there is some evidence that Rosh Hashanah was celebrated on a single day in Israel as late as the thirteenth century CE.[15] Orthodox and Conservative Judaism now generally observe Rosh Hashanah for the first two days of Tishrei, even in Israel where all other Jewish holidays dated from the new moon last only one day. The two days of Rosh Hashanah are said to constitute "Yoma Arichtah" (Aramaic: "one long day"). In Reform Judaism, some communities observe only the first day of Rosh Hashanah, while others observe two days. Karaite Jews, who do not recognize Rabbinic Jewish oral law and rely on their own understanding of the Torah, observe only one day on the first of Tishrei, since the second day is not mentioned in the Written Torah.

The Yamim Nora'im are preceded by the month of Elul, during which Jews are supposed to begin a self-examination and repentance, a process that culminates in the ten days of the Yamim Nora'im known as beginning with Rosh Hashanah and ending with the holiday of Yom Kippur.

The shofar is traditionally blown each morning for the entire month of Elul, the month preceding Rosh Hashanah. The sound of the shofar is intended to awaken the listeners from their "slumbers" and alert them to the coming judgment.[16] The shofar is not blown on Shabbat.[17]

In the period leading up to the Yamim Nora'im (Hebrew, "days of awe"), penitential prayers, called selichot, are recited.

The evening before Rosh Hashanah day is known as Erev Rosh Hashanah ("Rosh Hashanah eve"). As with Rosh Hashanah day, it falls on the 1st day of the Hebrew month of Tishrei, since days of the Hebrew calendar begin at sundown. Some communities perform Hatar'at nedarim (a nullification of vows) after the morning prayer services during the morning on the 29th of the Hebrew month of Elul, which ends at sundown, when Erev Rosh Hashanah commences. The mood becomes festive but serious in anticipation of the new year and the synagogue services. Many Orthodox men immerse in a mikveh in honor of the coming day.

On Rosh Hashanah day, religious poems, called piyyuttim, are added to the regular services. A special prayer book, the mahzor, is used on Rosh Hashanah and Yom Kippur (plural mahzorim). A number of additions are made to the regular service, most notably an extended repetition of the Amidah prayer for both Shacharit and Mussaf. The Shofar is blown during Mussaf at several intervals. (In many synagogues, even little children come and hear the Shofar being blown.) Biblical verses are recited at each point. According to the Mishnah, 10 verses (each) are said regarding kinship, remembrance, and the shofar itself, each accompanied by the blowing of the shofar. A variety of piyyutim, medieval penitential prayers, are recited regarding themes of repentance. The Alenu prayer is recited during the repetition of the Mussaf Amidah.

Rosh Hashanah meals usually include apples and honey, to symbolize a sweet new year. Other foods with a symbolic meaning may be served, depending on local minhag ("custom"), such as the head of a fish (to symbolize the "head" of the year).

The Sephardi and Mizrahi communities hold a "Rosh Hashanah seder" during which blessings are recited over a variety of symbolic dishes.[18][19][20] The blessings start with the phrase "Yehi ratzon," meaning "May it be thy will." In many cases, the name of the food in Hebrew or Aramaic represents a play on words or pun. The Yehi Ratson platter may include apples (dipped in honey, baked or cooked as a compote called mansanada); dates; pomegranates; black-eyed peas; pumpkin-filled pastries called rodanchas; leek fritters called keftedes de prasa; beets; and a whole fish with the head intact. It is also common to eat stuffed vegetables called legumbres yaprakes.[21]

Some of the symbolic foods eaten are dates, black-eyed peas, leek, spinach and gourd, all of which are mentioned in the Talmud. Pomegranates are used in many traditions, to symbolize being fruitful like the pomegranate with its many seeds.[22] The use of apples and honey, symbolizing a sweet year, is a late medieval Ashkenazi addition, though it is now almost universally accepted. Typically, round challah bread is served, to symbolize the cycle of the year.[22] Gefilte fish and Lekach are commonly served by Ashkenazic Jews on this holiday. On the second night, new fruits are served to warrant inclusion of the shehecheyanu blessing.

The ritual of tashlikh is performed on the afternoon of the first day of Rosh Hashanah. Prayers are recited near natural flowing water, and one's sins are symbolically cast into the water. Many also have the custom to throw bread or pebbles into the water, to symbolize the "casting off" of sins. In some communities, if the first day of Rosh Hashanah occurs on Shabbat, tashlikh is postponed until the second day. The traditional service for tashlikh is recited individually and includes the prayer "Who is like unto you, O God...And You will cast all their sins into the depths of the sea", and Biblical passages including Isaiah 11:9 ("They will not injure nor destroy in all My holy mountain, for the earth shall be as full of the knowledge of the Lord as the waters cover the sea") and Psalms 118:5-9, 121 and 130, as well as personal prayers. Though once considered a solemn individual tradition, it has become an increasingly social ceremony practiced in groups.

On the first night of Rosh Hashanah after the evening prayer, it is the Ashkenazi and Hasidic custom to wish Le'shana Tova Tikoteiv Vetichoteim (Le'Alter LeChaim Tovim U'Leshalom) which is Hebrew for "May you (immediately) be inscribed and sealed for a Good Year (and for a Good and Peaceful Life)". [23]

Shana Tova (pronounced [ʃaˈna toˈva]) is the traditional greeting on Rosh Hashanah which in Hebrew means "A Good Year." (Hebrew: שנה טובה‎)

Shana Tova Umetukah is Hebrew for "A Good and Sweet Year." (Hebrew: שנה טובה ומתוקה‎)

Ketiva ve-chatima tovah which translates as "May You Be Written and Sealed for a Good Year." (Hebrew: כתיבה וחתימה טובה‎)

The formal Sephardic greeting is Tizku leshanim rabbot ("may you merit many years"), to which the answer is ne'imot ve-tovot ("pleasant and good ones"). Less formally, people wish each other "many years" in the local language.

The cultivation of the domesticated grape began 6,000–8,000 years ago in the Near East. Yeast, one of the earliest domesticated microorganisms, occurs naturally on the skins of grapes, leading to the discovery of alcoholic drinks such as wine. The earliest archeological evidence for a dominant position of wine-making in human culture dates from 8,000 years ago in Georgia. The oldest known winery was found in Armenia, dating to around 4000 BC. By the 9th century AD the city of Shiraz was known to produce some of the finest wines in the Middle East. Thus it has been proposed that Syrah red wine is named after Shiraz, a city in Persia where the grape was used to make Shirazi wine. Ancient Egyptian hieroglyphics record the cultivation of purple grapes, and history attests to the ancient Greeks, Phoenicians, and Romans growing purple grapes for both eating and wine production. The growing of grapes would later spread to other regions in Europe, as well as North Africa, and eventually in North America.

 

In North America, native grapes belonging to various species of the Vitis genus proliferate in the wild across the continent, and were a part of the diet of many Native Americans, but were considered by European colonists to be unsuitable for wine. Vitis vinifera cultivars were imported for that purpose.

 

DESCRIPTION

Grapes are a type of fruit that grow in clusters of 15 to 300, and can be crimson, black, dark blue, yellow, green, orange, and pink. "White" grapes are actually green in color, and are evolutionarily derived from the purple grape. Mutations in two regulatory genes of white grapes turn off production of anthocyanins, which are responsible for the color of purple grapes. Anthocyanins and other pigment chemicals of the larger family of polyphenols in purple grapes are responsible for the varying shades of purple in red wines. Grapes are typically an ellipsoid shape resembling a prolate spheroid.

 

GRAPEVINES

Most grapes come from cultivars of Vitis vinifera, the European grapevine native to the Mediterranean and Central Asia. Minor amounts of fruit and wine come from American and Asian species such as:

 

- Vitis labrusca, the North American table and grape juice grapevines (including the Concord cultivar), sometimes used for wine, are native to the Eastern United States and Canada.

- Vitis riparia, a wild vine of North America, is sometimes used for winemaking and for jam. It is native to the entire Eastern U.S. and north to Quebec.

- Vitis rotundifolia, the muscadines, used for jams and wine, are native to the Southeastern United States from Delaware to the Gulf of Mexico.

- Vitis amurensis is the most important Asian species.

 

DISTRIBUTION AND PRODUCTION

According to the Food and Agriculture Organization (FAO), 75,866 square kilometers of the world are dedicated to grapes. Approximately 71% of world grape production is used for wine, 27% as fresh fruit, and 2% as dried fruit. A portion of grape production goes to producing grape juice to be reconstituted for fruits canned "with no added sugar" and "100% natural". The area dedicated to vineyards is increasing by about 2% per year.

 

There are no reliable statistics that break down grape production by variety. It is believed that the most widely planted variety is Sultana, also known as Thompson Seedless, with at least 3,600 km2) dedicated to it. The second most common variety is Airén. Other popular varieties include Cabernet Sauvignon, Sauvignon blanc, Cabernet Franc, Merlot, Grenache, Tempranillo, Riesling, and Chardonnay.

 

TABLE AND WINE GRAPES

Commercially cultivated grapes can usually be classified as either table or wine grapes, based on their intended method of consumption: eaten raw (table grapes) or used to make wine (wine grapes). While almost all of them belong to the same species, Vitis vinifera, table and wine grapes have significant differences, brought about through selective breeding. Table grape cultivars tend to have large, seedless fruit (see below) with relatively thin skin. Wine grapes are smaller, usually seeded, and have relatively thick skins (a desirable characteristic in winemaking, since much of the aroma in wine comes from the skin). Wine grapes also tend to be very sweet: they are harvested at the time when their juice is approximately 24% sugar by weight. By comparison, commercially produced "100% grape juice", made from table grapes, is usually around 15% sugar by weight.

 

SEEDLESS GRAPES

Seedless cultivars now make up the overwhelming majority of table grape plantings. Because grapevines are vegetatively propagated by cuttings, the lack of seeds does not present a problem for reproduction. It is an issue for breeders, who must either use a seeded variety as the female parent or rescue embryos early in development using tissue culture techniques.

 

There are several sources of the seedlessness trait, and essentially all commercial cultivators get it from one of three sources: Thompson Seedless, Russian Seedless, and Black Monukka, all being cultivars of Vitis vinifera. There are currently more than a dozen varieties of seedless grapes. Several, such as Einset Seedless, Benjamin Gunnels's Prime seedless grapes, Reliance, and Venus, have been specifically cultivated for hardiness and quality in the relatively cold climates of northeastern United States and southern Ontario.

 

An offset to the improved eating quality of seedlessness is the loss of potential health benefits provided by the enriched phytochemical content of grape seeds (see Health claims, below).

 

RAISINS, CURRANTS AND SULTANAS

In most of Europe and North America, dried grapes are referred to as "raisins" or the local equivalent. In the UK, three different varieties are recognized, forcing the EU to use the term "dried vine fruit" in official documents.

 

A raisin is any dried grape. While raisin is a French loanword, the word in French refers to the fresh fruit; grappe (from which the English grape is derived) refers to the bunch (as in une grappe de raisins).

 

A currant is a dried Zante Black Corinth grape, the name being a corruption of the French raisin de Corinthe (Corinth grape). Currant has also come to refer to the blackcurrant and redcurrant, two berries unrelated to grapes.

 

A sultana was originally a raisin made from Sultana grapes of Turkish origin (known as Thompson Seedless in the United States), but the word is now applied to raisins made from either white grapes or red grapes that are bleached to resemble the traditional sultana.

 

JUICE

Grape juice is obtained from crushing and blending grapes into a liquid. The juice is often sold in stores or fermented and made into wine, brandy, or vinegar. Grape juice that has been pasteurized, removing any naturally occurring yeast, will not ferment if kept sterile, and thus contains no alcohol. In the wine industry, grape juice that contains 7–23% of pulp, skins, stems and seeds is often referred to as "must". In North America, the most common grape juice is purple and made from Concord grapes, while white grape juice is commonly made from Niagara grapes, both of which are varieties of native American grapes, a different species from European wine grapes. In California, Sultana (known there as Thompson Seedless) grapes are sometimes diverted from the raisin or table market to produce white juice.

 

HEALTH CLAIMS

FRENCH PARADOX

Comparing diets among Western countries, researchers have discovered that although the French tend to eat higher levels of animal fat, the incidence of heart disease remains low in France. This phenomenon has been termed the French paradox, and is thought to occur from protective benefits of regularly consuming red wine. Apart from potential benefits of alcohol itself, including reduced platelet aggregation and vasodilation, polyphenols (e.g., resveratrol) mainly in the grape skin provide other suspected health benefits, such as:

 

- Alteration of molecular mechanisms in blood vessels, reducing susceptibility to vascular damage

- Decreased activity of angiotensin, a systemic hormone causing blood vessel constriction that would elevate blood pressure

- Increased production of the vasodilator hormone, nitric oxide (endothelium-derived relaxing factor)

 

Although adoption of wine consumption is not recommended by some health authorities, a significant volume of research indicates moderate consumption, such as one glass of red wine a day for women and two for men, may confer health benefits. Emerging evidence is that wine polyphenols such as resveratrol provide physiological benefit, whereas alcohol itself may have protective effects on the cardiovascular system. RESVERATROL

Resveratrol is found in widely varying amounts among grape varieties, primarily in their skins and seeds, which, in muscadine grapes, have about one hundred times higher concentration than pulp. Fresh grape skin contains about 50 to 100 micrograms of resveratrol per gram.

 

ANTHOCYANINS AND OTHER PHENOLICS

Anthocyanins tend to be the main polyphenolics in purple grapes whereas flavan-3-ols (i.e. catechins) are the more abundant phenolic in white varieties. Total phenolic content, a laboratory index of antioxidant strength, is higher in purple varieties due almost entirely to anthocyanin density in purple grape skin compared to absence of anthocyanins in white grape skin. It is these anthocyanins that are attracting the efforts of scientists to define their properties for human health. Phenolic content of grape skin varies with cultivar, soil composition, climate, geographic origin, and cultivation practices or exposure to diseases, such as fungal infections.

 

Red wine may offer health benefits more so than white because potentially beneficial compounds are present in grape skin, and only red wine is fermented with skins. The amount of fermentation time a wine spends in contact with grape skins is an important determinant of its resveratrol content. Ordinary non-muscadine red wine contains between 0.2 and 5.8 mg/L, depending on the grape variety, because it is fermented with the skins, allowing the wine to absorb the resveratrol. By contrast, a white wine contains lower phenolic contents because it is fermented after removal of skins.

 

Wines produced from muscadine grapes may contain more than 40 mg/L, an exceptional phenolic content. In muscadine skins, ellagic acid, myricetin, quercetin, kaempferol, and trans-resveratrol are major phenolics. Contrary to previous results, ellagic acid and not resveratrol is the major phenolic in muscadine grapes.

 

The flavonols syringetin, syringetin 3-O-galactoside, laricitrin and laricitrin 3-O-galactoside are also found in purple grape but absent in white grape.

  

SEED CONSTITUENTS

Biochemical and preliminary clinical studies have demonstrated potential biological properties of grape seed oligomeric procyanidins. For example, laboratory tests indicated a potential anticancer effect from grape seed extract. According to the American Cancer Society, "there is very little reliable scientific evidence available at this time that drinking red wine, eating grapes, or following the grape diet can prevent or treat cancer in people".

 

Grape seed oil from crushed seeds is used in cosmeceuticals and skincare products for perceived health benefits. Grape seed oil contains tocopherols (vitamin E) and high contents of phytosterols and polyunsaturated fatty acids such as linoleic acid, oleic acid, and alpha-linolenic acid.

 

GRAPE AND RAISIN TOXICITY IN DOGS

The consumption of grapes and raisins presents a potential health threat to dogs. Their toxicity to dogs can cause the animal to develop acute renal failure (the sudden development of kidney failure) with anuria (a lack of urine production) and may be fatal.

 

GRAPE THERAPY

Grape therapy, also known as ampelotherapy (from Ancient Greek ἄμπελος (ampelos), meaning 'vine'), is a form of naturopathic medicine or alternative medicine that involves heavy consumption of grapes, including seeds, and parts of the vine, including leaves. Although there is some limited evidence of positive benefits from the consumption of grapes for health purposes, extreme claims, such as its ability to cure cancer, have been widely derided as “quackery”.

 

RELIGIOUS SIGNIFICANCE

In the Bible, grapes are first mentioned when Noah grows them on his farm (Genesis 9:20–21). Instructions concerning wine are given in the book of Proverbs and in the book of Isaiah, such as in Proverbs 20:1 and Isaiah 5:20–25. Deuteronomy 18:3–5,14:22–27,16:13–15 tell of the use of wine during Jewish feasts. Grapes were also significant to both the Greeks and Romans, and their god of agriculture, Dionysus, was linked to grapes and wine, being frequently portrayed with grape leaves on his head. Grapes are especially significant for Christians, who since the Early Church have used wine in their celebration of the Eucharist. Views on the significance of the wine vary between denominations. In Christian art, grapes often represent the blood of Christ, such as the grape leaves in Caravaggio’s John the Baptist.

 

USE IN RELIGION

Christians have traditionally used wine during worship services as a means of remembering the blood of Jesus Christ which was shed for the remission of sins. Christians who oppose the partaking of alcoholic beverages sometimes use grape juice or water as the "cup" or "wine" in the Lord's Supper.

 

The Catholic Church continues to use wine in the celebration of the Eucharist because it is part of the tradition passed down through the ages starting with Jesus Christ at the Last Supper, where Catholics believe the consecrated bread and wine literally become the body and blood of Jesus Christ, a dogma known as transubstantiation. Wine is used (not grape juice) both due to its strong Scriptural roots, and also to follow the tradition set by the early Christian Church. The Code of Canon Law of the Catholic Church (1983), Canon 924 says that the wine used must be natural, made from grapes of the vine, and not corrupt. In some circumstances, a priest may obtain special permission to use grape juice for the consecration; however, this is extremely rare and typically requires sufficient impetus to warrant such a dispensation, such as personal health of the priest.

 

Although alcohol is permitted in Judaism, grape juice is sometimes used as an alternative for kiddush on Shabbat and Jewish holidays, and has the same blessing as wine. Many authorities maintain that grape juice must be capable of turning into wine naturally in order to be used for kiddush. Common practice, however, is to use any kosher grape juice for kiddush.

 

WIKIPEDIA

Chaplains of all faiths served a multitude of military bases and remote locations throughout the war zone, often using the hood of their Jeep, ammunition cases, or ration boxes as altars. This portable military chaplain's kit was used by a Jewish rabbi during the Vietnam War. Vitis (grapevine) is a genus of 81 accepted species of vining plants in the flowering plant family Vitaceae. The genus consists of species predominantly from the Northern Hemisphere. It is economically important as the source of grapes, both for direct consumption of the fruit and for fermentation to produce wine. The study and cultivation of grapevines is called viticulture.

 

Most cultivated Vitis varieties are wind-pollinated with hermaphroditic flowers containing both male and female reproductive structures, while wild species are dioecious. These flowers are grouped in bunches called inflorescences. In many species, such as Vitis vinifera, each successfully pollinated flower becomes a grape berry with the inflorescence turning into a cluster of grapes. While the flowers of the grapevines are usually very small, the berries are often large and brightly colored with sweet flavors that attract birds and other animals to disperse the seeds contained within the berries.

 

Grapevines usually only produce fruit on shoots that came from buds that were developed during the previous growing season. In viticulture, this is one of the principles behind pruning the previous year's growth (or "One year old wood") that includes shoots that have turned hard and woody during the winter (after harvest in commercial viticulture). These vines will be pruned either into a cane which will support 8 to 15 buds or to a smaller spur which holds 2 to 3 buds.

 

Description

Flower buds are formed late in the growing season and overwinter for blooming in spring of the next year. They produce leaf-opposed cymes. Vitis is distinguished from other genera of Vitaceae by having petals which remain joined at the tip and detach from the base to fall together as a calyptra or 'cap'. The flowers are mostly bisexual, pentamerous, with a hypogynous disk. The calyx is greatly reduced or nonexistent in most species and the petals are joined together at the tip into one unit but separated at the base. The fruit is a berry, ovoid in shape and juicy, with a two-celled ovary each containing two ovules, thus normally producing four seeds per flower (or fewer by way of aborted embryos).

 

Other parts of the vine include the tendrils which are leaf-opposed, branched in Vitis vinifera, and are used to support the climbing plant by twining onto surrounding structures such as branches or the trellising of a vine-training system.

 

In the wild, all species of Vitis are normally dioecious, but under domestication, variants with perfect flowers appear to have been selected.

 

The genus Vitis is divided into two subgenera, Euvitis Planch. have 38 chromosomes (n=19) with berries borne on clusters and Muscadinia Planch. 40 (n=20) with small clusters.

 

Wild grapes can resemble the single-seeded Menispermum canadense (moonseed), which is toxic.

 

Species

Most Vitis species are found mostly in the temperate regions of the Northern Hemisphere in North America and eastern Asia, exceptions being a few in the tropics and the wine grape Vitis vinifera which originated in southern Europe and southwestern Asia. Grape species occur in widely different geographical areas and show a great diversity of form.

 

Their growth makes leaf collection challenging and polymorphic leaves make identification of species difficult. Mature grapevines can grow up to 48 centimetres (19 inches) in diameter at breast height and reach the upper canopy of trees more than 35 metres (115 feet) in height.

 

Many species are sufficiently closely related to allow easy interbreeding and the resultant interspecific hybrids are invariably fertile and vigorous. Thus the concept of a species is less well defined and more likely represents the identification of different ecotypes of Vitis that have evolved in distinct geographical and environmental circumstances.

 

The exact number of species is not certain. Plants of the World Online states 81 species are accepted, but lists 84. More than 65 species in Asia are poorly defined. Approximately 25 species are known in North America and just one, V. vinifera has Eurasian origins; some of the more notable include:

 

Vitis aestivalis, the summer grape, native to the Eastern United States, especially the Southeastern United States

Vitis amurensis, native to the Asian continent, including parts of Siberia and China

Vitis arizonica, The Arizona grape is native to Arizona, Utah, Nevada, California, New Mexico, Texas, and Northern Mexico.

Vitis berlandieri, native to the southern North America, primarily Texas, New Mexico and Arkansas. Primarily known for good tolerance against soils with a high content of lime, which can cause chlorosis in many vines of American origin

Vitis californica, the California wild grape, or Northern California grape, or Pacific grape, is a wild grape species widespread across much of California as well as southwestern Oregon

Vitis coignetiae, the crimson glory vine, a species from East Asia grown as an ornamental plant for its crimson autumn foliage

Vitis labrusca L., the fox grapevine, sometimes used for winemaking and for jam. Native to the Eastern United States and Canada. The Concord grape was derived by a cross with this species

There are many cultivars of grapevines; most are cultivars of V. vinifera. One of them includes, Vitis 'Ornamental Grape'.

 

Hybrid grapes also exist, and these are primarily crosses between V. vinifera and one or more of V. labrusca, V. riparia or V. aestivalis. Hybrids tend to be less susceptible to frost and disease (notably phylloxera), but wine from some hybrids may have a little of the characteristic "foxy" taste of V. labrusca.

 

The Latin word Vitis is feminine,[19] and therefore adjectival species names take feminine forms, such as V. vinifera.

 

Ecology

Phylloxera is an American root aphid that devastated V. vinifera vineyards in Europe when accidentally introduced in the late 19th century. Attempts were made to breed in resistance from American species, but many winemakers and customers did not like the unusual flavour profile of the hybrid vines. However, V. vinifera grafts readily onto rootstocks of the American species and their hybrids with V. vinifera, and most commercial production of grapes now relies on such grafts.

Uses

The fruit of several Vitis species are grown commercially for consumption as fresh grapes and for fermentation into wine. Vitis vinifera is the most important such species.

 

The leaves of several species of grapevine are edible and are used in the production of dolmades and Vietnamese lot leaves.

 

Culture

The grapevine (typically Vitis vinifera) has been used as a symbol since ancient times. In Greek mythology, Dionysus (called Bacchus by the Romans) was god of the vintage and, therefore, a grapevine with bunches of the fruit are among his attributes. His attendants at the Bacchanalian festivals hence had the vine as an attribute, together with the thyrsus, the latter often entwined with vine branches. For the same reason, the Greek wine cup (cantharos) is commonly decorated with the vine and grapes, wine being drunk as a libation to the god.

 

The grapevine has a profound symbolic meaning in Jewish tradition and culture since antiquity. It is referenced 55 times in the Hebrew Bible (Old Testament), along with grapes and wine, which are also frequently mentioned (55 and 19, respectively). It is regarded as one of the Seven Species, and is employed several times in the Bible as a symbol of the Israelites as the chosen people. The grapevine has a prominent place in Jewish rituals: the wine was given a special blessing, "creator of the fruit of the vine", and the Kiddush blessing is recited over wine or grape juice on Shabbat and Jewish holidays. It is also employed in various parables and sayings in rabbinic literature. According to Josephus and the Mishnah, a golden vine was hung over the inner chamber of the Second Temple. The grapevine is featured on Hasmonean and Bar Kokhba revolt coinage, and as a decoration in mosaic floors of ancient synagogues.

 

In Christian iconography, the vine also frequently appears. It is mentioned several times in the New Testament. We have the parable of the kingdom of heaven likened to the father starting to engage laborers for his vineyard. The vine is used as symbol of Jesus Christ based on his own statement, "I am the true vine (John 15:1)." In that sense, a vine is placed as sole symbol on the tomb of Constantia, the sister of Constantine the Great, and elsewhere. In Byzantine art, the vine and grapes figure in early mosaics, and on the throne of Maximianus of Ravenna it is used as a decoration.

 

The vine and wheat ear have been frequently used as symbol of the blood and flesh of Christ, hence figuring as symbols (bread and wine) of the Eucharist and are found depicted on ostensories. Often the symbolic vine laden with grapes is found in ecclesiastical decorations with animals biting at the grapes. At times, the vine is used as symbol of temporal blessing.

 

In Mandaeism, uthras (angels or celestial beings) are often described as personified grapevines (gupna).

The Jewish Square, Vienna 1, formed in the Middle Ages under the name of "schoolyard" the center of the former Jewish Town, extending next to the Ducal court. It was closed from the rest of the city by four gates. Here there were school, bathhouse, synagogue and the house of the rabbi. The school was one of the most important of German-speaking countries. The community existed from about 1190 to the Vienna Geserah in 1421.

The stemming from the 15th century Jordan House, Nr. 2, bears a late Gothic relief with the representation of Jesus' baptism in the Jordan. This is not only a reference to the name of the house owner, Jörg Jordan, but also to the Vienna Geserah which the accompanying text endorses. On the initiative of Cardinal Christoph Schönborn, the Archdiocese of Vienna donated a plaque which Cardinal Franz König on 29 October 1998 unveiled. Its text reads: "Kiddush HaShem" means "sanctification of God". With this awareness, chose Viennese Jews in the synagogue here on Jewish Square - the center of an important Jewish community - at the time of persecution 1420/21 the suicide to escape a feared by them forced baptism. Others, about 200, were burnt alive in Erdberg (today 3rd district of Vienna) at the stake. Christian preachers of that time spread superstitious anti-Jewish ideas and thus incited against the Jews and their faith. So influenced, Christians in Vienna acquiesced without resistance, approved it and became perpetrators. Thus, the liquidation of the Vienna Jewish Town in 1421 was already a looming omen for what happened in our century throughout europe during the Nazi dictatorship. Medieval popes pronounced unsuccessfully against the anti-Jewish superstition, and individual believers struggled unsuccessfully against the racial hatred of the Nazis. But those were too few. Today Christendom regrets its involvement in the persecution of Jews and recognizes its failures. "Sanctification of God" today for Christians can only mean: asking for forgiveness and hope in God's salvation. October 29, 1998

Already in 1910, consisted the plan here the poet of the Enlightenment, Gotthold Ephraim Lessing (1729-1781), who in his play "Nathan the Wise" the interdenominational tolerance has put up a literary monument, to honor with a statue. In 1935, a sculpture by Siegfried Charoux was unveiled, but only four years later, in 1940, taken off and melted down for armaments. In 1968, the same artist created again a Lessing monument, which came first on the Morzin square and 1981 on the original site.

Since 2000, the place is a unique ensemble of remembering with the memorial by Rachel Whiteread for the 65,000 Austrian victims of the Shoah. 1995 the foundations of the in 1420 destroyed synagogue were excavated which now with finds constitute a part of the branch of the Jewish Museum Vienna. A computer-animated walk leads into one of the largest Jewish communities in Europe which existed here in the early 15th century. Another room is dedicated to the Shoah documentation.

The three underwent examinations and received treatment over the last week at Sheba Medical Center.

 

"Sheba Medical Center will continue to accompany them and their families," the hospital stated.

Romi’s parents and siblings released a video in which they said, "Shabbat Shalom to the great nation of Israel, in a few minutes we will recite Kiddush with the amazing Romi for the first time in 67 weeks.”

 

Roni and Simona Steinbrecher, Doron's parents, also released a video in which they said, "Good evening everyone, we first want to thank everyone for the support we've received throughout our fight to return the hostages. This is the first Friday after 67 Fridays without Doron, and the joy will be great, but it will be doubled only when all the hostages return home.”

 

“We have this national mission to attend all the rallies happening across the country and create a momentum that will bring everyone back. Our Doron thanks everyone and asks: continue to come to the rallies. We will continue to fight until the last hostage returns. Don't stop, keep fighting everywhere you are, until the last hostage returns. We won't stop until the last hostage comes back," they added.

A grape is a fruit, botanically a berry, of the deciduous woody vines of the flowering plant genus Vitis.

 

Grapes can be eaten fresh as table grapes or they can be used for making wine, jam, juice, jelly, grape seed extract, raisins, vinegar, and grape seed oil. Grapes are a non-climacteric type of fruit, generally occurring in clusters.

 

HISTORY

The cultivation of the domesticated grape began 6,000–8,000 years ago in the Near East. Yeast, one of the earliest domesticated microorganisms, occurs naturally on the skins of grapes, leading to the discovery of alcoholic drinks such as wine. The earliest archeological evidence for a dominant position of wine-making in human culture dates from 8,000 years ago in Georgia. The oldest known winery was found in Armenia, dating to around 4000 BC. By the 9th century AD the city of Shiraz was known to produce some of the finest wines in the Middle East. Thus it has been proposed that Syrah red wine is named after Shiraz, a city in Persia where the grape was used to make Shirazi wine. Ancient Egyptian hieroglyphics record the cultivation of purple grapes, and history attests to the ancient Greeks, Phoenicians, and Romans growing purple grapes for both eating and wine production. The growing of grapes would later spread to other regions in Europe, as well as North Africa, and eventually in North America.

 

In North America, native grapes belonging to various species of the Vitis genus proliferate in the wild across the continent, and were a part of the diet of many Native Americans, but were considered by European colonists to be unsuitable for wine. Vitis vinifera cultivars were imported for that purpose.

 

DESCRIPTION

Grapes are a type of fruit that grow in clusters of 15 to 300, and can be crimson, black, dark blue, yellow, green, orange, and pink. "White" grapes are actually green in color, and are evolutionarily derived from the purple grape. Mutations in two regulatory genes of white grapes turn off production of anthocyanins, which are responsible for the color of purple grapes. Anthocyanins and other pigment chemicals of the larger family of polyphenols in purple grapes are responsible for the varying shades of purple in red wines. Grapes are typically an ellipsoid shape resembling a prolate spheroid.

 

GRAPEVINES

Most grapes come from cultivars of Vitis vinifera, the European grapevine native to the Mediterranean and Central Asia. Minor amounts of fruit and wine come from American and Asian species such as:

 

- Vitis labrusca, the North American table and grape juice grapevines (including the Concord cultivar), sometimes used for wine, are native to the Eastern United States and Canada.

- Vitis riparia, a wild vine of North America, is sometimes used for winemaking and for jam. It is native to the entire Eastern U.S. and north to Quebec.

- Vitis rotundifolia, the muscadines, used for jams and wine, are native to the Southeastern United States from Delaware to the Gulf of Mexico.

- Vitis amurensis is the most important Asian species.

 

DISTRIBUTION AND PRODUCTION

According to the Food and Agriculture Organization (FAO), 75,866 square kilometers of the world are dedicated to grapes. Approximately 71% of world grape production is used for wine, 27% as fresh fruit, and 2% as dried fruit. A portion of grape production goes to producing grape juice to be reconstituted for fruits canned "with no added sugar" and "100% natural". The area dedicated to vineyards is increasing by about 2% per year.

 

There are no reliable statistics that break down grape production by variety. It is believed that the most widely planted variety is Sultana, also known as Thompson Seedless, with at least 3,600 km2) dedicated to it. The second most common variety is Airén. Other popular varieties include Cabernet Sauvignon, Sauvignon blanc, Cabernet Franc, Merlot, Grenache, Tempranillo, Riesling, and Chardonnay.

 

TABLE AND WINE GRAPES

Commercially cultivated grapes can usually be classified as either table or wine grapes, based on their intended method of consumption: eaten raw (table grapes) or used to make wine (wine grapes). While almost all of them belong to the same species, Vitis vinifera, table and wine grapes have significant differences, brought about through selective breeding. Table grape cultivars tend to have large, seedless fruit (see below) with relatively thin skin. Wine grapes are smaller, usually seeded, and have relatively thick skins (a desirable characteristic in winemaking, since much of the aroma in wine comes from the skin). Wine grapes also tend to be very sweet: they are harvested at the time when their juice is approximately 24% sugar by weight. By comparison, commercially produced "100% grape juice", made from table grapes, is usually around 15% sugar by weight.

 

SEEDLESS GRAPES

Seedless cultivars now make up the overwhelming majority of table grape plantings. Because grapevines are vegetatively propagated by cuttings, the lack of seeds does not present a problem for reproduction. It is an issue for breeders, who must either use a seeded variety as the female parent or rescue embryos early in development using tissue culture techniques.

 

There are several sources of the seedlessness trait, and essentially all commercial cultivators get it from one of three sources: Thompson Seedless, Russian Seedless, and Black Monukka, all being cultivars of Vitis vinifera. There are currently more than a dozen varieties of seedless grapes. Several, such as Einset Seedless, Benjamin Gunnels's Prime seedless grapes, Reliance, and Venus, have been specifically cultivated for hardiness and quality in the relatively cold climates of northeastern United States and southern Ontario.

 

An offset to the improved eating quality of seedlessness is the loss of potential health benefits provided by the enriched phytochemical content of grape seeds (see Health claims, below).

 

RAISINS, CURRANTS AND SULTANAS

In most of Europe and North America, dried grapes are referred to as "raisins" or the local equivalent. In the UK, three different varieties are recognized, forcing the EU to use the term "dried vine fruit" in official documents.

 

A raisin is any dried grape. While raisin is a French loanword, the word in French refers to the fresh fruit; grappe (from which the English grape is derived) refers to the bunch (as in une grappe de raisins).

 

A currant is a dried Zante Black Corinth grape, the name being a corruption of the French raisin de Corinthe (Corinth grape). Currant has also come to refer to the blackcurrant and redcurrant, two berries unrelated to grapes.

 

A sultana was originally a raisin made from Sultana grapes of Turkish origin (known as Thompson Seedless in the United States), but the word is now applied to raisins made from either white grapes or red grapes that are bleached to resemble the traditional sultana.

 

JUICE

Grape juice is obtained from crushing and blending grapes into a liquid. The juice is often sold in stores or fermented and made into wine, brandy, or vinegar. Grape juice that has been pasteurized, removing any naturally occurring yeast, will not ferment if kept sterile, and thus contains no alcohol. In the wine industry, grape juice that contains 7–23% of pulp, skins, stems and seeds is often referred to as "must". In North America, the most common grape juice is purple and made from Concord grapes, while white grape juice is commonly made from Niagara grapes, both of which are varieties of native American grapes, a different species from European wine grapes. In California, Sultana (known there as Thompson Seedless) grapes are sometimes diverted from the raisin or table market to produce white juice.

 

HEALTH CLAIMS

FRENCH PARADOX

Comparing diets among Western countries, researchers have discovered that although the French tend to eat higher levels of animal fat, the incidence of heart disease remains low in France. This phenomenon has been termed the French paradox, and is thought to occur from protective benefits of regularly consuming red wine. Apart from potential benefits of alcohol itself, including reduced platelet aggregation and vasodilation, polyphenols (e.g., resveratrol) mainly in the grape skin provide other suspected health benefits, such as:

 

- Alteration of molecular mechanisms in blood vessels, reducing susceptibility to vascular damage

- Decreased activity of angiotensin, a systemic hormone causing blood vessel constriction that would elevate blood pressure

- Increased production of the vasodilator hormone, nitric oxide (endothelium-derived relaxing factor)

 

Although adoption of wine consumption is not recommended by some health authorities, a significant volume of research indicates moderate consumption, such as one glass of red wine a day for women and two for men, may confer health benefits. Emerging evidence is that wine polyphenols such as resveratrol provide physiological benefit, whereas alcohol itself may have protective effects on the cardiovascular system. RESVERATROL

Resveratrol is found in widely varying amounts among grape varieties, primarily in their skins and seeds, which, in muscadine grapes, have about one hundred times higher concentration than pulp. Fresh grape skin contains about 50 to 100 micrograms of resveratrol per gram.

 

ANTHOCYANINS AND OTHER PHENOLICS

Anthocyanins tend to be the main polyphenolics in purple grapes whereas flavan-3-ols (i.e. catechins) are the more abundant phenolic in white varieties. Total phenolic content, a laboratory index of antioxidant strength, is higher in purple varieties due almost entirely to anthocyanin density in purple grape skin compared to absence of anthocyanins in white grape skin. It is these anthocyanins that are attracting the efforts of scientists to define their properties for human health. Phenolic content of grape skin varies with cultivar, soil composition, climate, geographic origin, and cultivation practices or exposure to diseases, such as fungal infections.

 

Red wine may offer health benefits more so than white because potentially beneficial compounds are present in grape skin, and only red wine is fermented with skins. The amount of fermentation time a wine spends in contact with grape skins is an important determinant of its resveratrol content. Ordinary non-muscadine red wine contains between 0.2 and 5.8 mg/L, depending on the grape variety, because it is fermented with the skins, allowing the wine to absorb the resveratrol. By contrast, a white wine contains lower phenolic contents because it is fermented after removal of skins.

 

Wines produced from muscadine grapes may contain more than 40 mg/L, an exceptional phenolic content. In muscadine skins, ellagic acid, myricetin, quercetin, kaempferol, and trans-resveratrol are major phenolics. Contrary to previous results, ellagic acid and not resveratrol is the major phenolic in muscadine grapes.

 

The flavonols syringetin, syringetin 3-O-galactoside, laricitrin and laricitrin 3-O-galactoside are also found in purple grape but absent in white grape.

  

SEED CONSTITUENTS

Biochemical and preliminary clinical studies have demonstrated potential biological properties of grape seed oligomeric procyanidins. For example, laboratory tests indicated a potential anticancer effect from grape seed extract. According to the American Cancer Society, "there is very little reliable scientific evidence available at this time that drinking red wine, eating grapes, or following the grape diet can prevent or treat cancer in people".

 

Grape seed oil from crushed seeds is used in cosmeceuticals and skincare products for perceived health benefits. Grape seed oil contains tocopherols (vitamin E) and high contents of phytosterols and polyunsaturated fatty acids such as linoleic acid, oleic acid, and alpha-linolenic acid.

 

GRAPE AND RAISIN TOXICITY IN DOGS

The consumption of grapes and raisins presents a potential health threat to dogs. Their toxicity to dogs can cause the animal to develop acute renal failure (the sudden development of kidney failure) with anuria (a lack of urine production) and may be fatal.

 

GRAPE THERAPY

Grape therapy, also known as ampelotherapy (from Ancient Greek ἄμπελος (ampelos), meaning 'vine'), is a form of naturopathic medicine or alternative medicine that involves heavy consumption of grapes, including seeds, and parts of the vine, including leaves. Although there is some limited evidence of positive benefits from the consumption of grapes for health purposes, extreme claims, such as its ability to cure cancer, have been widely derided as “quackery”.

 

RELIGIOUS SIGNIFICANCE

In the Bible, grapes are first mentioned when Noah grows them on his farm (Genesis 9:20–21). Instructions concerning wine are given in the book of Proverbs and in the book of Isaiah, such as in Proverbs 20:1 and Isaiah 5:20–25. Deuteronomy 18:3–5,14:22–27,16:13–15 tell of the use of wine during Jewish feasts. Grapes were also significant to both the Greeks and Romans, and their god of agriculture, Dionysus, was linked to grapes and wine, being frequently portrayed with grape leaves on his head. Grapes are especially significant for Christians, who since the Early Church have used wine in their celebration of the Eucharist. Views on the significance of the wine vary between denominations. In Christian art, grapes often represent the blood of Christ, such as the grape leaves in Caravaggio’s John the Baptist.

 

USE IN RELIGION

Christians have traditionally used wine during worship services as a means of remembering the blood of Jesus Christ which was shed for the remission of sins. Christians who oppose the partaking of alcoholic beverages sometimes use grape juice or water as the "cup" or "wine" in the Lord's Supper.

 

The Catholic Church continues to use wine in the celebration of the Eucharist because it is part of the tradition passed down through the ages starting with Jesus Christ at the Last Supper, where Catholics believe the consecrated bread and wine literally become the body and blood of Jesus Christ, a dogma known as transubstantiation. Wine is used (not grape juice) both due to its strong Scriptural roots, and also to follow the tradition set by the early Christian Church. The Code of Canon Law of the Catholic Church (1983), Canon 924 says that the wine used must be natural, made from grapes of the vine, and not corrupt. In some circumstances, a priest may obtain special permission to use grape juice for the consecration; however, this is extremely rare and typically requires sufficient impetus to warrant such a dispensation, such as personal health of the priest.

 

Although alcohol is permitted in Judaism, grape juice is sometimes used as an alternative for kiddush on Shabbat and Jewish holidays, and has the same blessing as wine. Many authorities maintain that grape juice must be capable of turning into wine naturally in order to be used for kiddush. Common practice, however, is to use any kosher grape juice for kiddush.

COMMENTARY ON THE ILLUMINATIONS

Jewish tradition inaugurates almost all sacred times with blessings over wine. The wine to which the young woman in the Song of Songs compares to her lover’s kisses symbolizes Divine wisdom, according to the Castilian mystic Ezra of Gerona’s twelfth century commentary on that biblical love poetry. Jewish mystical tradition suggests that Shabbat is the time of the week when the light of that wisdom flows most abundantly into our material realm. Jewish lore compares the Torah — the essential expression of Divine wisdom—to water, the physical substance that apart from its component oxygen, is most essential to sustaining life. My illuminations of the Friday night Kiddush, one of the key rituals with which Jewish tradition sanctifies the Sabbath in the home, express the mystical metaphor of the wine’s translation of Divine Wisdom into the material world. The micrographic text bordering the two paintings presents Proverbs 8:22-31, a seminal text in kabbalistic tradition, in which Wisdom, anthropomorphized as a woman, describes how she was created by God as his companion since “the beginning of His course, as the first of His works of old.”

 

At right the Hebrew illumination plays with the image of the wine fountains with which many of us share Kiddush with the family and friends at our tables. These cups, however, are not arrayed on tiered trays that pipe wine from the central cup at top into those at the lower levels, and this wine is more than the fermented juice of the grape. Instead, here the wine overflows from one level to the next, following the Kabbalistic metaphor that describes how Divine Wisdom flows from the highest, most hidden aspects of God, downward until it reaches the material world, here, transforming to water. Ezra of Gerona likened Divine Wisdom to water:

 

“See, fear of the Lord is Wisdom” [Job 28:28]. For Wisdom [hokhmah] is the Holy One’s quality of goodness, all existing, going forth and being emanated from the luminescence of Wisdom and continually blessed through it without cessation. Because their origin is from it, it provides the essence of their sustenance. The remaining Sefirot possess but one request, toward which the entirety of their desire is directed. That is to ascend and enter into the sacred sanctuary, to draw water from the honored fonts of Wisdom.”

 

The vessels through which the wine flows symbolize the ten sephirot, or emanations of God, and the mystical tradition assigns each one a characteristic color. Thus, beginning at the top with the uppermost sephira, Keter (Crown), and then moving from right to left (following Hebrew convention), the painting presents the sephirot as the wine cups, the vessels through which Divine Wisdom flows: Keter-white and black, Binah-green, Hokhma-blue, Gevurah-red, Hesed-white, Tifereth-white, Hod, green, Netzach-red, Yesod-white, and closest to the material world, Malkhut (Shekhinah)-white.

 

The arrangement of the cups through which the wine flows alludes to the human understanding of order in the universe. Just as the Kabbalistic system ascribes the number ten cosmic significance—for instance, the ten Sephirot—Pythagorean philosophy also regarded the number ten as holy, and held the tetractys, the pyramid formed by the “generators of geometric dimensions” in which I have arranged the cups, as emblematic of unity in the universe. The four levels of this Pythagorean pyramid trace the development of geometric form as follows: level 1-the element establishing a single point, level 2-two points determining a line, level 3-three points determining a plane, and 4-four points determining a tetrahedron, the simplest three-dimensional form.

 

The water flows down into the material world, tumbling over boulders, perhaps into a mountain stream. Ezra also compared rough boulders to Wisdom. Why does Wisdom remind the mystic of rocks? The stony cracks and fissures symbolize the task of looking for Wisdom in hidden, hard places.

 

The English illumination at left offers a painting of a single brimming family Kiddush cup, bearing not only the wine, but also imagery suggesting another aspect of the Shabbat whose holiness we recognize with that wine. The Zohar compares the Shekhinah, the feminine emanation closest to the material realm to “a field of holy apples,” and on Friday night “the King is joined with the Sabbath-Bride; the holy field is fertilized, and from their sacred union the souls of the righteous are produced.” The eighteen apples growing on the two trees remind us of numerical equivalent of the word, chai,“life.”

 

LITERARY COMMENTARY

 

Kiddush, a declaration of sanctity of the Sabbath, has been known as a home ritual since the time of the Talmud; it is also recited in the synagogue at the end of the evening service for the sake of the homeless. Like many other rites that are performed outside the framework of the obligatory daily prayers, it is preceded by the drinking of wine, accompanied by its own benediction. The ritual is prefaced with the biblical account of the origin of the Sabbath, the verses of the creation story relating that God rested on the seventh day of creation (Gen. 2:1–3). The ritual thus falls into three parts: the biblical passage; the benediction over the wine; and the benediction of the sanctity of the Sabbath. Some recite the first part while standing; others stand for the entire ritual.

 

Kiddush follows scripture in offering two explanations for the Sabbath, first calling it “a remembrance of the work of creation,” in accordance with Gen. 2:1–3 and the first version of the Ten Commandments (Exod. 20:11), and then calling it “a remembrance of the Exodus from Egypt,” in accordance with the second version of the Ten Commandments (Deut. 5:15). It also calls the Sabbath “the first of all the holy festivals,” referring to the fact that in the Torah’s lists of sacred times (Lev. 23; Num. 28:9 and 29), the Sabbath is mentioned first.
