Servings: 1
Ingredients:
1 Chicken leg quarter
1 Tbsp Butter
1 Tbsp minced Shallots
1.5 cups Chicken Stock
2 Tbsp Heavy Cream
1 cup fresh Spinach
Salt and Pepper, to taste
Procedure:
1) Melt butter in a pan then sprinkle shallots.
2) Add chicken on top of the shallots. Season with salt and pepper.
3) Add enough stock to barely cover the chicken. Bring to a simmer.
4) Cover and poach over low heat for 20-25 minutes.
5) Take chicken out of the pan and set aside.
6) Reduce pan juices to approximately a quarter of a cup.
7) Add spinach and heavy cream. Simmer over low heat until sauce is slightly thick.
8) Return chicken into the pan.
9) Serve hot.

INGREDIENTS
For the cookies:
3/4 c. almond flour
1/3 c. black cocoa powder
1/3 c. granulated Swerve/sweetener
2 tbsp. coconut flour
1 tsp. kosher salt
1/2 tsp. (gluten-free) baking powder
1/3 c. vegetable oil
1 large egg
1 tsp. pure vanilla extract
For the filling:
1/2 c. (1 stick) butter, softened
3/4 c. powdered Swerve/sweetener
1 tsp. pure vanilla extract
DIRECTIONS
Make cookies: In a large bowl, mix together almond flour, cocoa powder, Swerve, coconut flour, salt, and baking powder. Add oil, egg, and vanilla and mix until combined. Shape into a disc, then wrap in plastic wrap and refrigerate until firm, 2 hours.
Preheat oven to 350° and line a large sheet tray with parchment paper. Lightly dust a clean surface with cocoa powder and roll out dough ¼" thick. Cut out cookies with a 2" round cookie cutter.
Place cookies on prepared baking sheet. Bake until slightly firm to the touch, about 14 to 16 minutes. Let cool.
Make filling: In a large bowl using a hand mixer, beat butter until smooth. Add Swerve and beat until combined, then mix in vanilla.
Spread filling on one side of cookie and place a second cookie on top. Repeat with remaining cookies

makes about 4 servings

Ingredients:
1/2 of a large-ripe avocado, carefully peeled
juice of a fresh lemon
1 lb. ripe mixed tomatoes, chopped
8 oz fresh mozzarella, pulled and torn into bite sized pieces
1/3 cup homemade pesto sauce, recipe below
1/2 tsp sea salt flakes, or to taste
1/2 tsp freshly ground black pepper, or to taste

Instructions:

Slice your avocado lengthwise into thin and equal slices, leaving the entire shape of the avocado half intact as much as possible.

Start to shape the avocado into a line by very gently pushing the individual slices outwards and sideways with your fingers. Carefully achieving a stretched out shape as shown in the pictures.

This can take a bit of practice to get it looking the way you want it.

Start on one end of the avocado and roll it up in an inward motion until you have a full "rose".

Carefully place a knife underneath your avocado "rose" to transfer it onto your platter. Drizzle with freshly squeezed lemon juice to prevent it from browning.

• 1/2 seedless English cucumber, about 7 ounces.
• 1/4 of a green bell pepper, chopped.
• 1/3 cup grape tomatoes, halved.
• 5 pitted kalamata olives.
• 1 tbsp red onion, sliced.
• 1/2 fresh lemon.
• 1 oz fresh feta, sliced thick.
• 1/2 tablespoon extra virgin olive oil.

1. Spiralize the cucumbers.
2. Cut the strands into smaller pieces, about 5-6 inches long so it's easier to eat. If you don't have a spiralizer, you can just dice the cucumbers with a knife into small cubes.
3. Place the cucumber in a large work bowl along with the bell pepper, tomatoes, olives and red onion.
4. Squeeze half of the lemon over it, drizzle with half of the olive oil and toss with fresh oregano, salt and pepper.
