A keto-friendly dessert, which is high in fat but low in carbohydrates and protein.

Servings: 8 fat bombs

 

Ingredients:

4oz Cream Cheese, softened

2oz Butter, softened

1 tsp Instant Coffee Powder

1 tsp Vanilla Extract

1 Tbsp Erythritol

1 Tbsp unsweetened Cocoa Powder

1 cup crushed Sugar-free Grahams

 

Procedure:

1) Combine all ingredients in a food processor.

2) Pulse into a smooth dough.

3) Divide the dough and roll into balls.

4) Chill for one hour.

INGREDIENTS

For the cookies:

3/4 c. almond flour

1/3 c. black cocoa powder

1/3 c. granulated Swerve/sweetener

2 tbsp. coconut flour

1 tsp. kosher salt

1/2 tsp. (gluten-free) baking powder

1/3 c. vegetable oil

1 large egg

1 tsp. pure vanilla extract

 

For the filling:

1/2 c. (1 stick) butter, softened

3/4 c. powdered Swerve/sweetener

1 tsp. pure vanilla extract

 

DIRECTIONS

Make cookies: In a large bowl, mix together almond flour, cocoa powder, Swerve, coconut flour, salt, and baking powder. Add oil, egg, and vanilla and mix until combined. Shape into a disc, then wrap in plastic wrap and refrigerate until firm, 2 hours.

Preheat oven to 350° and line a large sheet tray with parchment paper. Lightly dust a clean surface with cocoa powder and roll out dough ¼" thick. Cut out cookies with a 2" round cookie cutter.

Place cookies on prepared baking sheet. Bake until slightly firm to the touch, about 14 to 16 minutes. Let cool.

Make filling: In a large bowl using a hand mixer, beat butter until smooth. Add Swerve and beat until combined, then mix in vanilla.

Spread filling on one side of cookie and place a second cookie on top. Repeat with remaining cookies

Maybe you planted kohlrabi in your garden this year, or recieved a few in your CSA?

 

The kohlrabi vegetable is part of the same family as broccoli and cabbage, and like it's family members, it is also high in vitamins and minerals.

 

Often the stems and leaves are still attached to the kohlrabi, so be sure to cut them off. Save the leaves and cook them just like kale or turnip greens. I like to throw the leaves in a skillet with 1 slice of cut up bacon and saute.

 

To prepare kohlrabi, you need: ➡️A good vegetable peeler

➡️A large cutting board

➡️A sharp knife

 

Carefully remove the tough woody skin with a vegetable peeler or knife.

Using a large sharp knife, cut the bulb in half.

Ingredients:

3 kohlrabi cabbages, washed and pat dried

2 Tbsps avocado or olive oil

1 tsp chili powder

1 tsp garlic powder

1/4 tsp freshly ground black pepper, or to taste

1/2 tsp sea salt, or to taste

 

Instructions:

 

Preheat your oven to 400 degrees f. and line a large baking sheet with parchment paper.

 

Carefully cut off the stems and remove the leaves of kohlrabi. Carefully remove the tough woody skin with a vegetable peeler or knife. Then, using a large sharp knife, cut the bulb in half.

Next, slice it into 1/3-inch thick slices, then into long sticks as shown.

 

Place your kohlrabi fries onto your prepared baking sheet. Sprinkle with seasonings, except for salt, and drizzle with the oil.

 

Using your clean hands generously rub the fries to coat well.

 

Spread the fries in a single layer, onto the prepared baking sheet and bake for 25-30 minutes, flipping halfway through until golden and crispy on the sides.

 

Remove the fries from the oven and while they're still hot, sprinkle with sea salt.

1. Cut up a pepper. These were some local grown ones but bell peppers would be just as fine.

2. Fill with cottage cheese. good_culture and cowgirlcreamery make my favorite ones. Cowgirl is INCREDIBLE.

3.Top with Trader Joe’s everything but the bagel seasoning.

.

4. Kick it up a notch with everything but elote seasoning on top or even chile lime seasoning. Both amazing.

.

Devour it up. The cottage cheese texture with the crunchiness of the pepper are exceptional. Plus it really does keep you full for hours.

Buffalo Chicken Salad W/ Homemade Bleu Cheese Dressing⠀

I really build my salad sensibly, but when I get done it looks like this mountain of saladness.. ‍♂️⠀

Buffalo Chicken made with tysonbrand grilled chicken strips.⠀

Heat up that cast iron !! ⠀

1) Oil the skillet and throw in as many strips as you want for your salad. Size appropriate skillet, we used the 6 inch cast iron. Fry til nice and colored..⠀

2) While the chicken is frying, melt 1 stick of butter in a micro safe bowl. ⠀

3) After melted, add 1 cup @franksredhot original, 1/2 tbsp @flavorgod Garlic Lovers seasoning and wisk together.⠀

4) When chicken is cooked, add the Buffalo sauce and reduce to low to simmer in the spicy goodness... ⠀

The Bleu Cheese Dressing...⠀

1/2 cup mayo⠀

1/4 cup sour cream⠀

3/4 cup heavy cream⠀

1/2 tsp dried dill⠀

1/2 tsp dried parsley⠀

1 tsp onion powder ⠀

1 tsp flavorgod Garlic Lovers⠀

1 tbsp lemon juice⠀

1/2 tsp flavorgod Pink Salt and Peppercorn⠀

4 tbsps Bleu cheese crumbles⠀

Mix the cream and lemon juice in a small bowl and let sit. It will thicken. ⠀⠀

2) Mix up all the other ingredients in a separate bowl til smooth. ⠀⠀

3) Dump in the cream and whisk. Fold in the bleu cheese. Its preferable to let sit at least an hour in the fridge to get the bleu cheese flavors to start mingling.. ⠀⠀

We also made a French Dressing for Shawn.... ⠀

4 tbsps tomato paste⠀

4 tbsps allulose⠀

1/2 cup light olive oil⠀

1 tbsp white balsamic vinegar ⠀

1 tsp yellow mustard ⠀

1 clove Garlic, minced or grated⠀

1/4 cup water⠀

1/2 tsp onion powder⠀

1/2 tsp flavorgod Pink Salt and Peppercorn⠀

Combine all ingredients in a med bowl. Wisk , transfer to a mason jar and refrigerate for at least an hour. The longer the better... ⠀

Avocado Caprese Salad 🍅🥑

makes about 4 servings

—-

Ingredients:

1/2 of a large-ripe avocado, carefully peeled

juice of a fresh lemon

1 lb. ripe mixed tomatoes, chopped

8 oz fresh mozzarella, pulled and torn into bite sized pieces

1/3 cup homemade pesto sauce, recipe below

1/2 tsp sea salt flakes, or to taste

1/2 tsp freshly ground black pepper, or to taste

Instructions:

—-

Slice your avocado lengthwise into thin and equal slices, leaving the entire shape of the avocado half intact as much as possible.

—-

Start to shape the avocado into a line by very gently pushing the individual slices outwards and sideways with your fingers. Carefully achieving a stretched out shape as shown in the pictures.

—-

This can take a bit of practice to get it looking the way you want it.

—-

Start on one end of the avocado and roll it up in an inward motion until you have a full "rose".

—-

Carefully place a knife underneath your avocado "rose" to transfer it onto your platter. Drizzle with freshly squeezed lemon juice to prevent it from browning.

—-

Add tomato wedges and mozzarella pieces around your avocado rose to fill up the space on the platter, as shown.

—-

Dollop with pesto and season with sea salt flakes and freshly ground black pepper.
