In una strada secondaria, silenziosa e illuminata solo dai riflessi del neon, si apre la piccola soglia di TAREKARA. All’interno, un giovane cuoco è immerso nella sua routine: frigge con cura il pollo marinato, il celebre karaage, cuore pulsante del locale. Il profumo, invisibile ma onnipresente, si insinua nella notte come un invito caldo.

Fuori, accanto a un barile e a qualche tanica probabilmente usata per l’olio, si legge un’idea semplice e potente: qui si cucina per chi ha fame vera, per chi cerca un momento di conforto. È un locale senza pretese, dove ogni dettaglio — dalle insegne scritte a mano ai bicchieri pieni di highball fruttati — racconta un Giappone quotidiano e sincero, fatto di mani unte e accoglienza familiare.

静かな裏通り、ネオンの反射だけが照らす道に、小さな店「タレカラ」が顔を出す。店内では、若い料理人が丁寧に漬け込み唐揚げを揚げ続けている。その香りは、目に見えないが、夜の空気を満たし、温かな誘いとなる。

外には、バレルと油用と思われる缶がいくつか置かれている。派手さはないが、ここには確かな満足がある。手書きの看板、フルーツの香り漂うハイボール、そして家庭的なぬくもり。何気ない一軒が、日常の中のやさしさを物語っている。

Outside, next to a barrel and a few cans — likely for frying oil — the scene tells a simple truth: this is a place for real hunger, for those seeking comfort. There’s no show here, only warmth. Handwritten signs, fruit-infused highballs, and the flicker of a small, honest kitchen speak of a Japan that lives quietly, generously, and every day.

When I see the photos of Cha, I really have the urge to eat karaage (fried chicken)!!

Karaage (fry) of Shira-ebi or Shiro-ebi (white shrimp, Pasiphaea japonica) served at a restaurant in Nerima, Tokyo. It is a good appetiser to start a Japanese dinner with.

It is a shrimp species endemic to the deep waters of 100 - 300 m surrounding the Japanese archipelago. Commercial fishing of the endemic species is conducted only in the Bay of Toyama, into which the Kurobe-gawa and the Jouganji-gawa, as you saw recently, discharge.

It has been a local speciality of Toyama rivalling Masu-zushi.

It became available in Tokyo only in recent years thanks to the development of cold-chain logistics to transport seafoods caught in the Bay of Toyama to Tokyo on the Pacific Coast probably by way of Hakuba and Azumino Valleys.

i adapted the karaage recipe. i didn't have any potato starch as recommended in the recipe. i replaced with chickpea flour

large sweet green peppers were washed and placed in a large pickling jar. then sarsons pickling vinegar was poured into the jar to completely cover the peppers, left for at least two weeks in the fridge, longer if possible

small cucumbers washed, wiped dry, sliced, placed in pickling jar, covered with sarsons pickling vinegar, eat as and when after two weeks in the fridge, store in the fridge

after spending the morning in shirakawa-go we had about three hours in takayama for us to buy the stuffs we wanted to buy and eat the food we wanted to eat before heading out to catch the evening train to kyoto via nagoya.

so...jie had her cold soba in a local place on one of the side streets kinda off the tourist track...

...the best soba she has ever had...she said...it could easily rival tokyo's shin udon for best noodles so far this trip...it completely changed her perception of soba...wow...big words...

and sui finally had her hida beef...on a stick...very nice..she said...must be...because she did not leave a single tiny miny cube for me to taste...

and for me...the award winning home style karaage from a little stall on the main street...very delicious...must be... because jie walloped nearly half the bowl before passing it to me...
