We made a Polish Cabbage soup today! And we’ve been excited about eating it the past couple days.
Ingredients: Cabbage, Kielbasa, Bacon, Onions, Celery, Carrots, Turnips, Chicken stock, Water, Chicken bouillon, Apple cider vinegar, Bay leaves and Dill.
Directions: Sauté the Kielbasa and Bacon. Then sauté the Onions, Celery and Carrots. Once they’re softened, add the Chicken stock, cubed up Turnips, and chopped Cabbage. Add more water and chicken bouillon as needed ( to cover the soup) Add a teaspoon of Dill and two Bay leaves. Simmer on the stove ‘till the Carrots and Cabbage are cooked through.
Add 1/2 cup of vinegar to the soup. Simmer another 15 mins.
Pour soup into bowls and let cool before eating. Enjoy!

Getting to be Reuben season (with St. Patrick's Day right around the corner). So I made myself a Reuben with: Corned Beef, Swiss Cheese, Sauerkraut and Thousand Island dressing on Pumpernickel bread.

We went tent camping at Frozen Head State Park for my Birthday weekend. Checked-in Saturday, April 20th and checked-out on Monday, April 22nd.
Got to the Big Cove Camping area and our campsite (No. 12) at 3pm. And got everything set up shortly there after. We made up our Silver Turtles (Ground beef, Seasoning, Potatoes O'Brien and Brown gravy). Chilled around the camp fire and went to sleep around Midnight.
Saturday morning I took our pup, Rose to potty on part of the Lookout Tower trail. Got some iPhone images while we went up part of the trail. We had Egg, Ham and Cheese scramble for breakfast. Then chilled next to the fire-pit. Then cooked Hotdogs over the campfire for lunch. Put some processed American cheese and Boar's Head mustard on them. Drove down to the Panther Branch trailhead. Hiked to Debord and Emory Gap waterfalls.
Came back to our campsite and then took a nap. Got up after 8pm and we made my birthday dinner: Beth making the Instant Potatoes and me panfrying the Steak on the camp stove. Chilled some more next to the fire-pit. Went to sleep after 11pm. Temp went below 40 degrees overnight. Slept till around 9am Started tearing down our camp site at around 10am and got everything put in the car in a half hour! Had to wait a little bit before we left (due to a stuck Ranger pickup in a drain ditch next to our campsite).
Once on Route 62 (Knoxville Highway) we were delayed due to some road construction. We then continued on our way back home to Knoxville. Getting home just before Noon.

Friday morning at around 8:30am the roofing crew came to the house and started work on removing the old shingles and tar paper off the roof. They made considerable progress and left just after 7pm. They returned Saturday morning and worked till around 6:15pm finishing the job!
