Tofu
I'm not a vegetarian but I love to eat TOFU! This can be a great substitution for meat as it contains a lot of protein, iron, calcium, and magnesium. Unlike meat, tofu is low in calories and contains no saturated fat nor cholesterol. Best of all tofu is made from soybeans so it is sustainable and non-damaging to the environment.

Surprised myself how well this dish turned out. I stir-fried white beech mushroom, zucchini, chicken meatballs, dried shrimp, and garlic.

According to Wikipedia, these yummy tasty mushrooms, when cultivated, "are grown in a high CO2 environment to produce long thin stems,..." Does this mean these little guys require a lot of CO2 to grow? Thus, they can help reduce the CO2 in our air and help save the environment?! We must all eat more ENOKITAKE!!!! :)
