U.S. Department of Agriculture (USDA) Farmers Market âVegU(cation)â tent, where people learn how to how to pick, and store sweet potatoes; and prepare honey roasted sweet potatoes using produce grown in the local area and sold here in downtown Washington, D.C., on Friday, September 23, 2016. USDA employees from the Agricultural Marketing Service (AMS), Food and Nutrition Service (FNS), Food Safety and Inspection Service (FSIS) and vendors volunteer as vegetable educators a.k.a. âVegUcatorsâ conducting free 10-minute fruit and vegetable classes. Todayâs âVegUcatorsâ are USDA AMS âVegUâ Program Coordinator Sara Pellegrino, preparing and talking about the recipe. During this season of the outdoor USDA Farmers Markets, 26 recipes will be taught at the VegU tent. Their scheduled demonstration dates are the peak harvest time to look for these foods. The goal is to increase fruits and vegetables in meals and help people understand what is in season. Guests can receive a free recipe card and can start shopping for ingredients at the market.

HONEY ROASTED SWEET POTATOES
Yields 9 servings.
Prep Time: 15 minutes
Cook Time: 40 minutes
Total Time: 55 minutes
2 lbs sweet potatoes
2 tbsp olive oil
2 tbsp honey
1 tsp cinnamon
1 tsp allspice
1.Preheat oven to 375 ºF.
2.Wash sweet potatoes under cold water and scrub with a brush to remove soil.
3.Chop sweet potatoes into 1/2-inch cubes and place on baking dish.
4.Bake for 30 minutes or until tender.
5.Transfer sweet potatoes to sauté pan on medium heat. Toss with olive oil, honey cinnamon and allspice. Cook for 10 minutes or until golden.
6.Sprinkle with salt if desired. Serve warm.

Look at color: Look for firm sweet potatoes with smooth, bright, uniformly colored skins, free from signs of decay, because they are more perishable than white potatoes. Extra care should be used in selecting sweet potatoes. Avoid sweet potatoes with wormholes, cuts. Grub injury or any other defects that penetrate the skin, which can lead to decay. Even if you cut away the decayed portion, the remainder of the potato flesh may have a bad taste. Choose the right size: Select small to medium in size. Larger potatoes tend to be starchier. HOW TO PREPARE SWEET POTATOES
Before eating or preparing, wash the sweet potato under cold running tap water and scrub with a brush to remove any lingering dirt. This reduces bacteria that may be present. Do not wash with detergent or soap. Leaving skin on potatoes during cooking is an excellent way to conserve nutrients. Sweet potatoes can be prepared in multiple ways including microwaving, baking, sautéing, mashing, frying, or grilling. They can also be eaten raw.
To microwave: With a fork, pierce the sweet potato skin 5 to 6 times. Place on a microwaveable plate and microwave for 5 to 8 minutes, rotating halfway through.

As part of a larger update to the school nutrition standards announced earlier this year, USDA made it easier for schools to buy local foods. Beginning this school year (2024-2025), USDA instituted a policy change allowing schools to require foods to be locally grown, raised or caught when making purchases for their meal programs. The recently announced $500 million investment in Local Foods for Schools will encourage schools to leverage this new option to buy local.
To help empower schools in their efforts to improve meal quality and implement the updated meal standards, USDA invested $100 million to establish the Healthy Meals Incentives Initiative. Through this initiative, USDA provided $30 million in grants for small and/or rural school districts to help schools serve more nutritious meals by modernizing their operations. This is the largest targeted investment USDA has ever made for school meal programs in small and rural communities.
USDA will also provide a total of $50 million in grants to stimulate innovation in the school meals marketplace by incentivizing collaboration between schools, the food industry, and other stakeholders.
USDA is offering recognition awards to celebrate school districts that make improvements to the nutritional quality of their school meals and hosting summits for schools to highlight and share best practices for nutritious meal programs. (Lebanon SD is an HMI Recognition Awardee)
Nutritious school meals are a top priority for USDA and the Biden-Harris Administration, which have provided about $13.2 billion in extra financial support for schools since 2021 to ensure they have the resources they need to operate successful meal programs. School meals are a vital source of nutrition for about 30 million children nationwide, giving them the fuel they need to grow, learn and thrive. This is in addition to per meal reimbursements schools receive for serving balanced meals to kids during the school day.
USDA is also committed to increasing access to school meals to ensure all children are set up for success in the classroom and beyond. Advancing a pathway to free healthy school meals for all is a priority of the Biden-Harris Administration’s White House National Strategy on Hunger, Nutrition and Health. Investments in Local, Domestic Foods
Since 2021, USDA has provided a boost of nearly $4.8 billion for school meal programs to purchase domestic, unprocessed foods. Of that, nearly $700 million – including the recently-announced $500 million investment – is through the Local Food for Schools Cooperative Agreement Program. This program is specifically for procuring local and regionally sourced foods with an emphasis on purchases from historically underserved producers.
In addition to providing schools greater access to nutritious, local foods for their meal programs, this funding creates new market opportunities for producers as well as jobs and opportunities in local communities.
The supply chain for school meal programs is strongest when schools have relationships with local suppliers. The result is a stronger, fairer, more resilient local food chain for schools.
Farm to school activities – such as serving local foods in school, growing a school garden, tasting new foods and visiting local farms – provide experiential learning for children, support American farmers and producers, boost nutrition in school meals and more.
The new USDA Farm to School Census reports that 74% of schools served local foods during school year 2022-2023.
Other key findings include:
· School districts that purchased local spent about $1.8 billion on local foods, roughly 16% of their total food spending.
· Participation in farm to school activities has grown by 14% since the 2019 Farm to School Census.
· School districts with a high percent of students receiving free or reduced-price meals are as likely to participate in farm to school as lower-need school districts.
In 2024, USDA invested a record-breaking $14.3 million in Patrick Leahy Farm to School Grants, supporting projects that will touch 1.9 million children across the nation. USDA awarded grants to 154 projects in 43 states, DC, Guam and Puerto Rico. I walked out into my garden this evening and picked some fresh mint leaves and fresh parsley. Diced these leaves up with some local BC grown cherry tomatoes, and added a small amount of finely diced purple onion. The cous cous "cooked" as I prepared the fresh ingredients.
Meanwhile, I sautéed firm tofu in a soy sauce marinade. When all was ready, tossed everything together gently with some flax oil (would have used olive oil but I ran out), sea salt and half a fresh squeezed lemon.
A light and refreshing meal.

Cauliflower Flatbread
With Pesto
Preheat oven to 400
4 cups raw cauliflower “rice”
1 egg, beaten
1/3 cup soft goat cheese
1 tsp. dried oregano or basil
Pinch of salt
Pulse batches of raw cauliflower in a food processor until a rice-like texture is achieved. Measure after ricing.
Fill a large pot with about one inch of water and bring to a boil. Add cauliflower, cover and cook 4-5 minutes. Drain into a fine mesh strainer.
Transfer to a clean kitchen towel and wring out the water (as much as possible). Important step!
Mix strained and drained “rice” with beaten egg and cheese & herbs. Use your hands and mix very well.
Press dough onto a baking sheet lined with parchment (important) until it is about 1/3 of an inch thick. Make the edges slightly higher, if you like, to accommodate the toppings.
Bake the crust for 20-25 minutes until it is firm and beginning to brown.
Add sauce & toppings and bake 5-10 more minutes until toppings are heated (until cheese on top is melted, if using cheese.
Simple Pesto for Topping
1 c. basil leaves, ¼ c. parmesan, ¼ c. olive oil, 1 ½ tsp. minced garlic, a pinch of black pepper: process all in food processor or blender until smooth. Spread on fully baked cauliflower flatbread.
This flatbread can also be topped with tomato sauce and a choice of other toppings such as sautéed mushrooms and onions, etc and dusted with a bit of parmesan or cheese of your choice.
