for those of you who don't know, this is the deal: you choose 5 ingredients which are then put in a cup and mixed together with coconut milk and crushed ice. to be honest, other than the lychees and red beans i don't exactly know what the other ingredients are....but who cares when it tastes so damn good?

Halo-halo from Chow King, a fast food Chinese restaurant... how ironic. It tastes as good as it looks. Halo-halo is a concoction of coconut jelly, ice cream, ube, leche flan, fruit preserves, and ice, plus some other ingredients whose names I'm ignorant of.

Sari Sari owners enjoy a good laugh while tending to their store where they feature ingredients for making Halo Halo, a cold, sweet, Filipino dessert with lots of ingredients.

My camera was salivating! A kind of dessert called halo-halo, literally meaning, "mix-mix," is a mixture of shaved ice, a bit of milk (preferably evaporated milk in cans), sweetened yellow beans, red mung beans and garbanzos, flan, gelatin, and macapuno (coconut palm), then topped with ice cream. a unique resto with a pretty good halo halo for a very reasonable price USD1.20!

came across this gigantic marketing stand of a favourite local ice snack, halo halo. the halo halo (mix mix) is filled with local preserved fruit ingredients topped with ice and milk. for extra goodness and calories they can also serve it with ice cream

halo halo is a popular philippine dessert (featured in anthony bourdain's parts unknown television series) which is a descendant of the japanese dessert kakigori, an shaved ice flavoured with sweetener similar to a snow cone and topped with seasonal fruits. it is said that during the colonial days (early 1900's), japanese peddlers will sell these snacks in the late afternoon to ward off the summer heat. eventually local sweetened fruits and other condiments were added to these ice delights thus the halo halo was born. halo halo is now very much filipino, as any locals will profess and any kid, and adult, will cherish many fond memories with their halo halo. many places in the philippines have their own local version of the halo halo but i consider the iceberg halo halo, but bit pricey at USD2.70, as one of the best!

Justine is from Cameroun in West Africa, and is a great cook, just like my Filipina wife. They hit it off together and made some interesting stuff in the kitchen one day. This is Justine trying Halo Halo, a desert from the Philippines.

  

Thanks to a friend who owns a restaurant, I managed to try food photography for the first time. We used real food though since I have zero knowledge on non-melting replacements and did not have access to a food stylist. Using real food means I had to work extra fast. But for a first timer, I think I did "just ok." But Im sure there are loads of things to improve. Used ambient light and used a SB-800 to balance the lighting.

this is another version of the popular philippine dessert, halo halo . this version, which hails from pampanga, a province to the north of manila, features lesser ingredients than its more popular cousin but, what sets it apart is the use of water buffalo milk instead of the usual evaporated milk. the ingredients of this halo halo are sliced sweet bananas, shredded young coconut, jackfruit and a slice of caramel custard. the different ingredients are served in ground ice then , in some instances, topped with a scoop of vanilla ice cream. bon appetit on this sweet indulgence !
