4" chocolate mini cake with ganache frosting and MMF flowers/leaves.

for a friend's birthday (yes ! again !)

The ever posh US bakery and restaurant built by Chef Thomas Keller, not the typical Bouchon style of French eatery.

 

This expressive little tart piqued our interest during our last decidant Bouchon run, and we wondered if we would even get this Chocolate Ganache Tart home, as you can see… success!

I got off a few dozen shots before that bounce reflector fell on the ribbon of chocolate… mmmmmmm, no coming back from that one (can you just see the chocolate surrounding my mouth?).

 

Robin likes this pic even better than the Bouchon pics; too bad I used 90° side light, back bounce light and a mirror on the front right side. I didn’t get a non-reflector version, there never was one.

Not usable for class, but I’d say another desert for the book!

 

Ganache is mixture of chocolate and cream used to make truffles and other chocolate candies.

I have always been intrigued by these beautiful little sandwich cookies.

From everything I read, I was prepared to fail, at least the first time I made them.

Much to my delight, they were a success!

The pink/brown ones are bittersweet chocolate raspberry flavor.

The pink/yellow ones are Pink Lemonade.

The yellow/brown ones are lemon and dark chocolate.

I also filled some with dulce de leche...can't go wrong with that!

Mini 6'' cake for my parent's wedding anniversary.

with passionfruit milk chocolate ganache. i used valrhona jivara lactée 40% for this. i have too much ravifruit frozen passionfruit puree in the freezer, and they really don't taste very good. too tart, watery with hardly any passionfruit fragrance :( i wonder if all their purees are like that coz i thought of getting the lychee one to make tarte ispahan & emotion ispahan.

What could indulge your picky appetite?

I have to re-try these because they taste incredible, I will try to adjust some issues: I made them too thin, the base of the squares was too delicate that it all broke , and I would avoid to handle the ganache a lot as it gets a little messy!

Ash and I just celebrated our 2nd anniversary yesterday and she made me these amazing cupcakes! Believe me you would be jealous :)

I made her chocolate covered strawberries but they werent nearly as photogenic!

 

Ashley you are too good too me and I know I didnt deserve these past two years! I will never stop loving you and Im going to do my best to make sure you know it :)
