Brought in to Seabear’s Smokehouse in limited quantities from Yakutat, Alaska. Sautéed with a dollop of infused Chive Oil, S&P, and wild fennel. Doesn't taste the same as previously frozen. Subtle, tender and not watery and ever so fresh.
I choose food photography.
Made sous vide salmon. Figured the raw would be more picturesque than cooked hurried and did a few shots. Made a dill cream sauce to go over it after cooking.
Wild Scottish salmon, poached in Cardonnay and gently mixed with home-made mayonnaise and watercress butter. Served with mesclun salad leaves and a wedge of lemon.
Koftas made with salmon scraps--the parts that are left over after filleting--topped with mango pickle, on a salad of garden greens and raita. This is from Kenai River red salmon my husband dipnetted last weekend. Salmon kofta-style patties are my favorite part of fishing season.

Fresh Coho salmon (5 minutes @ 400 degrees) with steamed asparagus dressed with lemon butter, S & P. Prep time 5 minutes, cook time six minutes, sorry the flash was a little bright.
Ive got to say, if I was a fish going to be caught for someone to eat I would have to wanda off myself than end up on a plate!
I really must say thought that the food at the wedding breakfast was absolutely amazing! Nikki and her staff run an Italian restaurant and have done with her Italian husband for over 15 years. Each course was true authentic Italian and with each mouthful the only difference was we werent in Italy but England. Its the closest food we have tasted since Venice and thats saying something. Truly a melt in the mouth dinner and I really am looking forward to going to the Terrazza restaurant Nikki and her husband own. I dont think right now I would want to try another Italian restaurant as the way the food is cooked and presented as well as served is fit for a King or Queen.
