......Christmas dinner wouldn't be the same without them.
Of course the more wine I drink the tastier these will be.
I will be adding chestnuts and bacon to them.....Jamie Oliver will be so happy with me :))

Pia was a world class chef at one of Vancouver Island's high end restaurants; in the 1980s she gained recognition for her simple, innovative creations, and was considered to be right up there, among Canada's top ten chefs. After getting out of the "high pressure zone" - following the birth of her two children - she developed and oversaw the local high school's culinary arts program and inspired many a young chef, some of whom have gone on to great success. She was a legend. She was also one of my oldest and dearest friends; I knew her for 36 years before cancer finally took her down in 2014, at the age of 62.
I try not to put up too many sad stories on Flickr, because I don't want sympathy anymore than Pia did. But this isn't a sad story, even though it ends with loss, as all our stories must. To live a full and enriching life is all we can ask. It seems that a great many of my closest friends have died young, and I am almost surprised to not be among them - but clearly that ship has sailed, LOL.
I've always loved this photo of her in her kitchen. She lived in a cabin on a creek that empties into the ocean. A dinner invitation to Pia's was a memorable occasion, and she shared more than a few meals with me over the years. She was always down to earth - never ostentatious or pretentious in any way. On her 61st birthday we made pizza for 28 people, and she trusted me to prepare the dough and bake the crusts and make the sauce. She fired up her outdoor cob oven despite the showery weather, and it turned into one of those great, memorable gatherings where... well, you just had to be there.
Pia Carroll, 1952-2014. Everyone loved her. Seriously.

Cause you really can't eat gold now can you?
This is a little different than my usual post of dogs, cats and family. For the past couple of weeks, my team at work has been having a virtual social hour during the time that I usually make dinner. I have received several request for recipes, and I am obliging them with a few. This is the photo I am using for the cover.
I pray that all is well as can be for everyone. Be safe and take care. B
As a food photographer I often create and style the dishes I photograph and quaity sharp knives make the job much easier. This is the collection in our kitchen photographed in morning light. Mexico City is known for the amazing quantity and quality of its street food vendors. These ladies were kept very busy filling orders on the sidewalk outside Mercado de Coyoacán.
I've never thought to peel an avocado before, but as soon as I cut it in half, this one was begging to be flayed. It was SOOOOO easy!
It's been brining since 5 pm yesterday and will now air dry in the spare fridge till around 8 am. Then it's into the smoker for about 4 hrs!
Happy Thanksgiving!
Saw this scene down a side street in Beijing and thought the little chap mimicking his grandpa peeling crustaceans was sweet!

Saturday was another hot day here so when it came time for dinner prep a simple salad in the house was the name of the game.
Everything else found its way to the grill out back.
It was a light meal and I found perfect for the weather.
Hope everyone has had a good day.

A major element in any visit to a fall fair is the collection of food trucks offering a wide range of dishes, some of them improbable in any other context. This truck had a sign describing one of it’s feature offerings, specifically Pulled Pork Poutine. Not only is that a listing of offered delights but it also raises the important role of punctuation. You see, I could not decide whether the offer was for exactly as listed, pulled pork poutine, or if the listing was, instead, for two separate dishes: pulled pork and, by considering an implied comma following pork, pulled pork AND also poutine. I did not sort this out by experimental means but, instead, opted to capture the colours and the gentleman preparing an order. This is a clever advertising item in the form of an empty, but still sealed, tin can from BERNARD FOOD INDUSTRIES, INC., MANUFACTURERS AND DISTRIBUTERS TO THE NATION'S FINE EATING ESTABLISHMENTS.
The label says "BERNARD DEHYDRATED WATER" and gives the following instructions for use: "EMPTY CONTENTS OF CAN INTO ONE GALLON OF WATER. STIR UNTIL DISSOLVED. CHILL AND SERVE." This "product" is even covered by U.S. Patent Office Trademark No. 898826!
