Extra cheese holds these tender meatballs together perfectly without any type of flour. A breeze to whip up makes this the perfect weeknight dinner for everyone and leaves you plenty of time to whip up a Keto Cheesecake for dessert! We use all ground beef in these meatballs, but they work well with other types of ground meat as well. Ground turkey and ground pork both are great or a combination of ground pork and beef makes for exceptional meatballs. To make these extra tender, handle them as little as possible. Just like a cake, the more you mix and mess with meatballs, the tougher they become! If you find these hard to form at all because of the lack of breadcrumbs, wet your hands slightly to help keep them from sticking to your hands.
INGREDIENTS
FOR THE MEATBALLS
1 lb. ground beef
1 clove garlic, minced
1/2 c. shredded mozzarella
1/4 c. freshly grated Parmesan, plus more for serving
2 tbsp. freshly chopped parsley
1 large egg, beaten
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper
2 tbsp. extra-virgin olive oil
FOR THE SAUCE
1 medium onion, chopped
2 cloves garlic, minced
1 (28-oz.) can crushed tomatoes
1 tsp. dried oregano
Kosher salt
Freshly ground black pepper
DIRECTIONS
In a large bowl combine beef, garlic, mozzarella, Parmesan, parsley, egg, salt, and pepper. Form into 16 meatballs.
In a large skillet over medium heat, heat oil. Add meatballs and cook, turning occasionally, until golden on all sides, about 10 minutes. Remove from the skillet and place on a paper towel-lined plate.
To the same skillet, add onion and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more. Add tomatoes and oregano and season with salt and pepper.
Add meatballs back to skillet, cover and simmer until sauce has thickened, 15 minutes. Garnish with Parmesan before serving.

We sat in the restaurant and watched what the grill master was doing. When he finished his last order, he started cleaning his workplace. First, he cleaned all the surrounding stainless steel and ceramic surfaces and removed the grease and moisture that had stuck to the walls. Olivia -Ive been sitting at a 30kg loss for about 3 months now and all though losing so much weight has done wonders for my health overall, there’s also some factors that make things hard to progress. I said I would share everything about this journey and this is definitely not the celebratory part.
I have PCOS, and thyroid issues, and now there’s a high chance of endometriosis, though this can take years to diagnose. A lot of the time it feels like things are becoming impossible, and like the harder I try to improve my health, these issues keep holding me back. I’m most certainly not giving up, but I’m trying to work through the obstacles as best I can.
Thankfully I enjoy nourishing my body with healthy plant-based food, and I love my training so regardless of whether I’m making progress on the scales, I love how it feels to treat my body well, and give it the best chance to deal with the other issues going on. I won’t deny that the hormonal issues and the painful cramps etc aren’t discouraging, and I’m trying to validate my experience more and have some self-compassion instead of feeling like I have to keep going hard no matter what!
To anyone else out there who feels like their health issues are holding them back - don’t give up, and don’t compare yourself to the progress of others!
