Some of the coffee beans I brought back from Kenya. These are all from Dormans Coffee roasters and coffeehouse.

This will perhaps be marked as my first day at Ritual, although it's still in an unofficial capacity. I got the message from Owens that the much anticipated package from Square Mile had arrived and that there would be sample shots available in the morning at Ritual as long as I could haul my ass out of bed in the morning.

 

It took some doing, but I made it, just as the first shots were going into the cup. Chris was trying to use the Anfim, but couldn't quite get the shots to behave. We learned later from Baca that the adjustments weren't actually being processed, which would explain why the shots kept getting tighter even though Owens thought he was opening it up. Oops.

 

I don't want to say too much about this espresso because of that. The shots were good, but I don't think anyone would say that the parameters we at all correct for the blend. Plus it's been on the plane and well, that has to change something correct?

 

Perhaps when there is a machine in the basement again and we can forgo this barista ballet routine, then we should do a more thoughtful evaluation. Sweet bags though. Really quality stuff.
