INGREDIENTS:
1 container (8 oz) reduced-fat sour cream
1 container (8 oz) plain fat-free yogurt
1 can (10 3/4 oz) condensed 98%-fat-free cream of chicken soup with 30% less sodium
1 can (4 oz) chopped green chiles, undrained
12 white corn or flour tortillas (6 or 7 inch)
1 cup shredded reduced-fat Cheddar cheese (4 oz)
1 1/2 cups chopped cooked chicken
4 medium green onions, sliced (1/4 cup)
Shredded lettuce, if desired
Chopped tomatoes, if desired
DIRECTIONS:
1. Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. In medium bowl, mix sour cream, yogurt, soup and chiles.
2. Spoon about 3 tablespoons sour cream mixture down center of each tortilla. Reserve 1/4 cup of the cheese; sprinkle tortillas with remaining cheese, chicken and onions. Roll up; place in baking dish. Spoon remaining sour cream mixture over tortillas. Cover with foil.
3. Bake 25 to 30 minutes or until hot and bubbly. Sprinkle with reserved 1/4 cup cheese. Bake uncovered 5 minutes longer or until cheese is melted. Garnish with shredded lettuce and chopped tomatoes.

I am teaching daughter to cook over summer break. She is a big fan of tomaotes and wanted to give this a whirl. We really liked it! An easy and delicious recipe...here it is:
Mix one 14.5 oz. can italian style tomatoes (peeled diced with juice) with 30 crushed saltine crackers. Add a pinch of salt and pepper to taste. We also added extra basil, oregano, red pepper flake, garlic powder, paprika and parsley. Stir in one minced onion, or use onion powder, if you prefer. Let the mixture sit for about 20 minutes...it will be like a paste. Scoop it by the spoonful into hot oil. Press them into a cake shape with the back of a spoon. We found that the smaller the cakes, the easier they are to flip. Fry the patties, flipping only once, until lightly browned on both sides.
Sour cream, mayo, or cheese makes a nice garnish. Plain is quite yummo, too! Some people add a handful of grated parmesan right in the mix. This recipe lends itself to tweaking.
These are simple and quick and make a nice addition to so many other dishes.

1 lb lean (at least 80%) ground beef
1 1/3 cups hot water
1 box Hamburger Helper® Cheddar cheese melt
1 cup Old El Paso® Thick 'n Chunky salsa (any variety)
1 2/3 cups milk
1/4 to 1/2 teaspoon chili powder
2 cans (15 oz each) spicy chili beans in sauce, undrained
3/4 cup shredded Cheddar cheese
1 large tomato, chopped (about 1 cup)
Directions:
1. In 4-quart Dutch oven, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
2. Stir in hot water, sauce mix and uncooked pasta (from Hamburger Helper box), salsa, milk, chili powder and beans. Heat to boiling, stirring frequently.
3. Reduce heat; cover and simmer about 10 minutes, stirring occasionally, until pasta is tender.
4. Remove from heat; stir. Sprinkle each serving with 2 tablespoons cheese and tomato.
