Day 11:365
Had a lovely visit with my baby brother here, it’s a gluten free, dairy free, nut free, vegan bakery that’s become extremely popular.
Had a decadent brownie & a cup of lemon meringue herbal tea....sooooo yummy !!
They have a recipe book published if anyone’s interested. It’s called ‘made with love’
.....and my niece works here 😁 so proud of her accomplishments !!
(she gave us the grand tour & we met one of the owners, a mother/daughter team)
So fun :))
here's the link to their delicious site:
here's another link of theirs....recipes included :)))
ODC-Two States (Fixin's to Finish)
Don't do this often, but today decided to have something I used to eat when I lived in New Mexico. All my ingredients are Organic and non-GMO. These are also Gluten Free.
Looks like a cheese cake, tastes like a cheese cake but there is no dairy in it, it's completely faked. The blueberry is real, though.
Cashew-Cappuccino Nanaimo Bars from Vegan Cookie Connoisseur. Definitely the "oh my God" recipe of the lot - I dare any coffee fan to turn their nost up at them! I opted for the choice of using Kahlua *and* instant espresso powder in both the crust and the filling - it's potent!

Got out my mixing bowls and made some dessert. Both Stu and I love Crisps made from scratch and Blueberry is a fave. I just love that beautiful purple colour!!! The kitchen smells incredible! 🍲 Here's the recipe if you want to try it. I used all Vegan Ingredients and Pecans instead of Almonds but you can use what you want: www.spendwithpennies.com/quick-easy-blueberry-crisp/#wprm...
This was the most delicious lunch! A recipe from an Oliver & Bonacini offering that they have at their establishments. No butter, oil, or cream is used in their recipe, but the flavour is all there! Its called "Wild & Tame" because they utilize several different types of wild and "regular" mushrooms in the dish.

Rowan found a new pizza he really loves! Blackbird Foods Pepperoni Pizza! I tried it too and it's delicious! It has vegan cheese and Beyond Plant-Based Pepperoni! We got it from Orii and we're finding it's difficult to keep getting as the pizza sells out really fast whenever they get new stock! Apparently we aren't the only ones enjoying this pizza!
Low carb gluten-, sugar-, and dairy-free chocolate chip cookies, sweetened with healthy natural sweeteners!

Macro-Mondays-Candy
Candy is something I never buy, but for today I did. I like these they are non-GMO, Gluten Free and Dairy Free. A somewhat healthy candy? I can live with that :)
Cranberries, check! Pumpkin Pie, check! A couple days away from it all with my sweet family, check, check!
Bad lighting for photography, check ;)
{This was shot before I baked the pie. I'm just amazed that it even looks like a pie, I'm not on my home turf, so I was a little nervous about how it would turn out}

The intense sweetness of ripe banana and cantaloupe makes a perfectly healthy dessert. The super basic recipe is here.
Tom and I made this last year or so but I made it without the use of a food processor and it literally took me half the day to make the dish and despite how delicious it was, I was hesitant to try it again. Enter new food processor. Wow. WOW. It's so easy (and so fast) with a food processor! This dish is now a staple in our house. It's an adapted version of a recipe by Isa Chandra Moskowitz and Terry Hope Romero. It's GREAT for dinner parties or if you're bringing a dish to share and has a very warm hearty (but light) feeling. Yuuuum. And happy Cinco de Mayo to those that celebrate! We're making homemade tortillas and burritos tonight!
In protest to today's more than 20-degree temperature swing (in the wrong direction), I decided to make homemade mint ice cream. A little brain-freeze to accompany my toe-freeze. HMBT!
