Each cookie was individually wrapped! That made for very poor pictures, however, so I had to take them out.
These Irish Cookie Bombs are a take on the classic Irish Car Bombs. Two mini Guinness Chocolate cookies sandwich a creamy Bailey’s Irish Cream filling that’s just lightly spiked with whiskey. You get the bitterness of the Guinness and the creamy filling cuts it with just a hint of booze.

8.11.07 - Imagine if you will peaches and cream in cookie form. That is essentially what these melt in your mouth cookies are like. I ate an obscene amount of them before I gave away the rest. The only downside to this lovely cookies is as Martha advises they are quick to go soft so they are best enjoyed straight from the oven. I certainly did my part.

No sugar, no gluten cookies. I know, I know--the gluten wagon! I'm just mostly avoiding wheat products because it's easier to avoid breads, pastries, and other sweets. Oats, PB2, almond flour, pecans, and coconut made them good. Not awesome, just good and less guilt-inducing.
My Raw Oatmeal Raisin Cookies!
Ingredients:
1 cup raw rolled oats
1/2 cup raw walnuts (and some extra if you want to put on top)
10 large medjool dates (pitted ~ more or less depending on how moist they are)
1/2 cup raisins
Directions:
Place whole rolled oats in food processor and blend till it is almost like a powder. I like to still have little pieces of the oats in things so I don’t leave it on for too long. Add the walnuts and the dates. Leave on till it’s the consistency you like. Remove and put in a bowl. Add raisins and mix with your hands. Form into cookies. I put a piece of walnut on each cookie, but you don’t have too. It doesn’t need any sweetener, but if you want them sweeter you can add a little raw agave nectar or sprinkle a little sugar in the raw on top. You can also add cinnamon and or dried cranberries. Oh, and cookie cutters would work nice with these! No sugar, no flour, no baking =) TaaaaDaaaa!!!
