For a 20-25 lb bird, it takes 2.5 to 3 hours. Preheat the oven to 450F
Place the Roasting pan in the middle of the preheated oven and bake for one hour. After an hour, WITHOUT opening the oven door, reduce the heat to 400F. Bake for another hour. After the hour is up, reduce the heat again to 350F. At the end of the third hour, remove the turkey from the oven. Remove and discard the bag, and place the turkey on a board to rest. Cover the turkey carefully with tinfoil, and rest for one half hour before carving.
