Making this pie has always been exhausting cause you have to stir it so long. But it is Hadley’s favorite and I was determined to master it, and make him smile. We don’t do real gifts or even cards for Valentine’s. And in my family, showing love frequently revolves around food.
Today, the pie turned out simply wonderfully. Hadley was tempted to just eat straight from the pie pan and as a bonus, I love it too. Win. Win.

INGREDIENTS:
3 eggs
1 3/4 cups milk
1/4 cup butter, melted
1 1/2 teaspoons vanilla
1 cup flaked or shredded coconut
3/4 cup sugar
1/2 cup Bisquick® Gluten Free mix
DIRECTIONS:
1. Heat oven to 350°F. Grease 9-inch glass pie plate with shortening or cooking spray.
2. In large bowl, stir together all ingredients until blended. Pour into pie plate.
3. Bake 45 to 50 minutes or until golden brown and knife inserted in the center comes out clean. Store any remaining pie covered in refrigerator.
it was only in the early 1990's when a returning filipino resident came up with an idea of making pies from coconut and the result was a complete success that it became a staple delicacy from laguna province. anyone visiting laguna during those days would always come home with several boxes of coconut pie, locally called buko pie. nowadays you don't need to go to laguna to get a coconut pie as there will be shops nearby that sell them. there are now also several versions of this once simple dessert.
buko or coconut pie is a philippine delicacy made from the flesh of young coconut mixed with custard ingredients. the mixture is then poured into a pastry pie crust. the pie is baked till golden brown producing this truly delectable dessert. the best coconut pies usually comes from laguna, philippines
INGREDIENTS:
Filling and Crust
1 cup granulated sugar
3/4 cup brown sugar
3 tablespoons quick-cooking tapioca
1 teaspoon ground cinnamon
Dash salt
1/2 cup fresh orange juice
1 box Pillsbury® refrigerated pie crusts, softened as directed on box
2 cups chopped fresh or frozen rhubarb (partially thawed)
3 fresh medium peaches, peeled, chopped or 3 cups frozen (partially thawed) sliced peaches, chopped
Topping
1 cup chopped pecans
3/4 cup coconut
2 tablespoons packed brown sugar
3 tablespoons butter, melted
DIRECTIONS:
1. Heat oven to 375°F. In small bowl, mix sugars, tapioca, cinnamon, salt and orange juice. Make pie crusts as directed on box for Two-Crust Pie using 9-inch glass pie plate. Place rhubarb in crust-lined plate; sprinkle with half of sugar mixture. Top with peaches; sprinkle with remaining sugar mixture. Top with second crust and flute; cut slits in several places. Bake 35 minutes.
2. Meanwhile, in small bowl, mix topping ingredients; sprinkle over top crust. Bake 10 minutes longer or until golden brown. Cool at least 2 hours before serving.
The crust, the meringue, and the filling are all the very best. I love coconut pie and am now guaranteed that I'll get it at Christmas as we get to journey to Arizona to see the grandkids! And our oldest, Kam, will definitely make one for his Papa.
The ingredients to this pie are all blended together in the beginning and by the time it comes out of the oven, it forms a crust, a layer of custard, and the coconut will be on top!
Impossible Pie Recipe:
1/2 Cup Flour
1/2 Cup Sugar
1/4 tsp Salt
4 Tblspns Margarine
4 Eggs
2 Cups Milk
2 Tblspns Vanilla
Blend All of the above ingredients in a blender. Add 1/2 Cup Coconut. Stir in with a spoon. Pour into a greased 10" pie pan. Bake at 350 degrees for 45 minutes.(I like the top a little more brown, so I cook it a little longer :-)

In my experience, 10 inch pie plates are hard to find. Unfortunately a 10 inch pie plate is the only one that will work perfectly.
to provide that special ingredient for a dessert. The meringue and the filling were perfect (according to Hadley) but the crust was a flop. Funnily, I used a bought crust and to my surprise he could tell the difference. Bummer.

I made these because I knew Valerie was coming by today, and she loves coconut as much as I do. (Frank hates coconut.) The filling and topping are lovely, but the crust came out a bit tough, sadly. I'm not sure why.
Another one of those things that tells a bit about people... there's the DVD shelf, the CD shelf, the bookshelf, and the fridge magnets. Only the sides of my fridge are magnetic- so here's the most decorated side.
Slightly more of a, "What's ON Your Fridge", but I thought ya'll might be amused!

We've learned to order dessert first upon sitting down (when we have dessert), as it sells out fast.
Choices ... choices ... strawberry shortcake or coconut pie? ...
No. BOTH would be too much of a good thing, and David would get very upset at the deprivation.

My georgous mixer, getting its first use ever. And I love it. It's like magic. Unnecessary, but fun to watch... like a culinary lava lamp.
This shot doesn't capture the color quite right though... here it looks kinda robin's egg blue... when in fact, it's more like electric/turquoise blue. It matches nothing. It's great.

I'm at the depot with Mitzi for a scrapbooking weekend with her nieces. Mitzi's mom had homemade coconut pie waiting for us. Nice!

i also made homemade chocolate pies today, but only because the husband and little sister have insisted that i made some! sean got smart and said, "well we don't get pie. we only get them one time of year and it's not christmas/thanksgivingtime so we don't get any pie!" and i finally suckered in today, after hearing about it for a week, and made them.. lol
i would've also posted pictures of the chocolate pie buuuuuttt it was already in the fridge and covered in foil yadda yadda.. so you get none thanks to my laziness! ;)
