Theobroma cacao is a small evergreen tree in the Malvaceae family. Its seeds—cocoa beans—are used to make chocolate liquor, cocoa solids, cocoa butter and chocolate. Although the tree is native to the tropics of the Americas, the largest producer of cocoa beans in 2022 was Ivory Coast.

Any trip to Yellowstone National Park is a treat. Boiling geysers, picture book landscape, and a menagerie of wildlife offer a wonderful dessert for the eyes and food for the soul. Spotting young spring animals brings excitement to any visitor, myself included! On this date, I found two springer (born on the most recent spring) black bear cubs eager to investigate their world. At the site, one could hear the hum of the camera shutters. We were the “Paparazzi of the day” on the red-carpet of YNP. I felt lucky to be one of the first at the location. After several minutes viewing the cubs, I came away with many photos and heart full memories. Hope you enjoy!
Cinnamon was next to me so Cocoa jumped onto the back of the couch and balanced on my shoulder for a bit. She eventually climbed on me down to my lap then squeezed into the one inch space between my leg & Cinnamon.

Different types of cocoa (from when I was hunting high and low for Dutch-processed cocoa, which my brownie recipe called for). Time to make them again soon... I think I'm addicted to chocolate. :-)

The cacao tree is native to the Amazon rainforest, but you can find them in any tropical region such as South America, in the Pacific Islands such as Hawai’i, and throughout South East Asia.
A cocoa pod (fruit) is about 17 to 20 cm (6.7 to 7.9 in) long and has a rough, leathery rind about 2 to 3 cm (0.79 to 1.18 in) thick filled with sweet, mucilaginous pulp (called baba de cacao in South America) with a lemonade-like taste enclosing 30 to 50 large seeds that are fairly soft and a pale lavender to dark
brownish purple color.
You can eat raw cacao beans straight from the pod.
The white pulp that surrounds the raw cacao beans tastes like a mixture between a sweet melon and a peach.
And the pulp that surrounds raw cacao beans smells like lychees, and has a tropical sweet smell.
The beans themselves taste like a very dark chocolate, that is slightly bitter. But, they still taste quite nice.
They very much taste like cocoa powder which you may have used to make drinking cocoa, but without sugar.
Cacao has been rated the highest antioxidants. Raw cacao is also full of flavanols which increase blood circulation and stimulate brain power.
What a surprise to suddenly find some cocoa fruits on my plant :-)

I have not added an image to the Rush Series in a long time. I was down in Florida last week, and could not resist the opportunity to head out to the coast and the Cocoa Beach Pier.
My son thought it would be okay to take Pearl out with Cocoa without Cinnamon’s old harness if we both supervised them. It didn’t last long. I don’t want to risk losing my Pearl girl.
A few miles south of the well-known pier in Cocoa Beach. It was a heavily clouded that day.
