Morning prep time: 5 minutes. Full post with decorative aluminum foil info, lunch details and packing notes is here.

INGREDIENTS:

 

2 tablespoons chili powder

1 1/2 teaspoons dried oregano leaves

1 1/4 teaspoons ground red pepper (cayenne)

1 teaspoon garlic salt

1 teaspoon ground cumin

1 teaspoon pepper

2 packages (1 lb each) chicken wing drummettes

Sour cream, if desired

Paprika, if desired

 

DIRECTIONS:

 

1. In 1-gallon resealable food-storage plastic bag, place all ingredients except chicken, sour cream and paprika. Seal bag; shake to blend seasonings. Add chicken; seal bag and shake until chicken is coated with seasonings. Refrigerate at least 1 hour to marinate but no longer than 24 hours.

 

2. Heat gas or charcoal grill. Place chicken in grill basket (grill "wok"). Place basket on grill over medium heat. Cover grill; cook 20 to 25 minutes, shaking basket to turn chicken after 10 minutes, until juice of chicken is clear when thickest part is cut to bone (180°F).

 

3. Serve chicken with sour cream sprinkled with paprika.

INGREDIENTS:

 

1 container (16 oz) plain yogurt

2 tablespoons curry powder

1 tablespoon paprika

1 teaspoon garlic salt

20 to 24 chicken drummettes (about 2 lb)

1/4 cup shredded peeled cucumber

1 clove garlic, finely chopped

1/2 teaspoon salt

1/2 teaspoon lemon juice

2 tablespoons chopped fresh mint leaves

 

DIRECTIONS:

 

1. Heat gas or charcoal grill. In large bowl, mix 1/2 cup of the yogurt, the curry powder, paprika and garlic salt. Add chicken, stirring to coat all surfaces. Let stand 15 minutes.

 

2. Meanwhile, in small bowl, mix remaining yogurt and remaining ingredients.

 

3. Place chicken on grill. Cover grill; cook over medium heat 8 to 12 minutes, turning once or twice, until juice of chicken is clear when thickest part is cut to bone (180°F). Serve with yogurt dip. Sprinkle dip with additional chopped fresh mint leaves if desired.

Korean style fried chicken

Chicken and avocado with lime zest. I ❤️ lime.

Wanted to potray Korean fried chicken in a 'snacky' manner with beer as how it is eaten a lot. The 'beer' that you see though is actually Shandy. i just wanted to share my story!!!! yay... well i wsa just doodling away on my folder during church.... I WAS LISTENING I SWEAR!!! well anyway story time, that day that paid for our lunch and we could either have a mcdonald happy meal or taco beuno 2 burritos and a taco... well as you can see i picked the happy meal... yummy chicken nuggets, well anyway i got the toy, and i was like... his name is bannana! and my friend was like.... jasmin its a girl! and i was like.. no its not there is nothing indicating that it can;t be a boy and it has to be a girl! well.... later i open up the bag and pull out a dress! and then i was like...ooo... its still a boy...but he is a transvestite? so yeah... and then the little chansey is his ggirlfriend called chocolate kisses and she thinks she is a jiggly-puff....

so in away.... the leadership conference of 2007 means bannana chocolate kisses!! and a doodled over folder.........

Hey this is a new one! It looks like I've been stuck in a routine/rut with the same foods. Tuesdays and Thursdays are Hot lunch days so I usually pack similarly to what's on the school's menu. This day was Kentucky Fried Chicken.

This week at Whole Foods Market - Northern California

Roast Teriyaki Glazed Chicken Drumstick, with Sauteed Blue Lake Green Beans and Caramelized Onions, Whole Grain Garlic Scallion Jasmine Brown - Red - Black Rice.

 

So a day ahead, a 6 hour chicken stock was made with chicken backs, onion, scallion, and ginger, with a touch of coconut sugar. That same stock was used to cook the organic jasmine rice blend and was finished off with a roasted garlic and scallion paste used to blend with the rice.

 

Super fresh snappy organic blue lake green beans from Oaklands Farmers market were quickly blanched and shocked in ice water for al dente, leaving a nice tender vibrant green bean with a touch of a snap upon biting into the bean. SO TASTY! The beans were then finished off in a pan with sauted caramelized onions.

 

The drumstick was quickly brined for an hour, dried off, and roasted at a very high heat - 450F for about 30 minutes. The teriyaki glaze was then coated on the chicken along with a splash of the chicken stock to prevent the burning of the sugars onto the roasting pan. Back in the oven for another 10 minutes, the glaze had reduced and set. The stock now had reduced into a more robust and flavorful glaze and the chicken would be used to mop the bottom of the pan.

 

Total Food Cost

Chicken: $6

Green Beans: $2

Rice: $1

Teriyaki Sauce: $3

Other Produce: $2

 

Feed 5 people a nice homey meal: just about $15.

 

Total Cooking Time 1 hour.

Total Prep time: 30 minutes.

Baked breaded chicken drumsticks.

Ingredients:

Ginger, garlic, chilli, spring onion, chicken wings, coriander, soya sauce, oyster sauce, chestnuts, white pepper, cornstarch, carrot, dried mushroom.

 

Steps:

1. Fry whole garlic, sliced ginger and onion.

2. Add carrot and dried mushroom.

3. Add chicken wings and some water.

4. Add soya sauce and oyster sauce to taste.

5. Add chestnuts.

6. To thicken the sauce, add cornstarch mixed with water.

7. Garnish with chilli, spring onion and coriander.

 

*Note: A little imagination (and/or experience) is required for quantity to be added.
