A first "Gulrot kake", or carrot cake, I've ever made...followed a nice Norvegian recipe which in a pure stroke of serendipity I came upon, and here it is! A loveliest soothing result ... guaranteed served with a coffee or liqueur, or even better with your loved one's hug...:)

Well, that's what it was supposed to be...but, of course, I wanted to double it and not use two mugs ..and, not use the microwave either...hahahhah.... silly me.
So, I used a tiny square cake tin I have ..only 4 x 4 inches. Added an egg and baked it instead, thinking it would give it a better texture, like I do with the Chocolate Cake in a Mug (which, by the way, turns out pretty darn amazing) ..
I have no clue why, but the texture on this was similar to microwave cake... kind of dense and rubbery.. weird.
But, I iced it with cream cheese icing anyway...and, we ate it. It was tasty enough with the spices ...but, it couldn't hold a candle to our Nutty Carrot Cake recipe.
It was as much trouble and clean up as a regular size cake... so, next time??? Just bake a regular cake...and, freeze most of it in small portions. Take out a few pieces when we want a little sweetie something and don't feel like cutting into a whole cake.
Ya live and learn....

Week 37 in 52 Weeks for Dogs and today is Tasku's 8th birthday. I made her a yummy carrot cake and she is having trouble resisting temptation while I get a photo.
..with real cream cheese icing...... oh, yeh...........and walnuts and two different types of raisins.....
It's an old recipe .. called Nutty Carrot Cake, which I cut out of a magazine eons ago. Every so often I think I should look for a different one, but why bother when this one is so tasty?? It makes two layers or one big 9 x 13 pan full .. and, we eat it all, piggies that we are.
This year I froze half right off the bat...but, the first half is almost gone already..... hmmm... dilemma........................
Mr. BV makes the best cake and ultra 'smoothest' cream cheese icing.......

It's my husband's birthday today and carrot cake is his favourite! My friend has baked a scratch cake for him for the last few years, and they are delicious! Happy Birthday Glen and thank you Jennifer!

For the Friday Food Fiesta {ORANGE (FLAVOR)} pool. Orange peel flavouring in the cream cheese frosting and orange peel and juice added to the cake batter itself.
The nice thing about having carrot cake as my favourite type of cake is that in our family that allows the birthday person to choose their cake, it's my choice for my birthday cake. Also, because we bake it in a Bundt pan it lasts a few days. :)
This tree and some of the fabulous little eggs were given to me and my children a LONG time ago, from a Canadian couple who were Mom & Dad's good friends! Enjoyed for years!

So every year me and my buddies used to have a race to see who can star trail Snugburys hay sculpture first. It's sort of fizzled out but I'm trying to keep it going. Last years sculpture was a bit of a dissapointment and I didn't even bother to visit, but this year has brought it back with this 38ft tall Peter Rabbit made of hay, the carrot is 10ft tall and the whole thing weighs 8 tonns and took over 1000 hours to build. Very impressive, I knew from the second I saw it it would make an awesome trail.
So last night me, my wife and son went out and got this awesome trail. We had been in the day time for a nice ice cream and to see it in person and weigh up a few angles.
Trailed for about 40 minutes, was going to go for an hour but it was getting a little too cold out in the open.
Make sure to visit Snugburys icecream farm to see the Peter Rabbit in person as the photos don't really do it justice, also they have Carrot Cake ice cream, which they had unfortinetly ran out of by the time we arrived.

Yup, I may have just reached 'peak copper' — 6 copper items in this photo — I simply love the warm rich tones that antique copper gives — complemented by the pinks of the hydrangea flowers.
My husband thought my title "Carrot Cake!" was pretty obvious even without the sign, so I noted that. LOL! The light of the bakery case is warm and yummy, though inside it was refridgerated. I didn't buy carrot cake, though I do like it better than most cake. I bought tira misu and strawberry shortcake, my second and third favorite desserts. They only had my favorite in individual size, and that's not what I wanted, or what I wanted to shoot either. I'm keeping you in suspense until I find the perfect specimen! LOL!! We get a lot of cold callers come into the office. The lady who called earlier was giving out boxes of half a dozen cup cakes. Each cup cake in the box different. How could I refuse the box? It would've been rude not to accept :) This is the carrot cake and very tasty too!
The main Victorian building of the Hotel Del Coronado is closed in 2024 for extensive remodeling. Some of the shops are already remodeled and open.
These desserts in the Café were very enticing but I resisted. Three are self evident - Nutalla Éclair, Red Velvet Cupcake, and Layered Carrot Cake with Cream Cheese. The fourth is Bananas Foster Chocolate Mousse which is described as Chocolate Mousse on a banana sponge base with a foster caramel interior. Sounds scrumptious.
